COCONUT STICKY RICE IN BANANA LEAVES (KHAO DOME)

Coconut Sticky Rice in Banana Leaves (Khao Dome) image

These tasty treats are something like tamales in their construction (not their taste!) and are great for on-the-go snacking or as a dessert. Don't let the prep time scare you... most of it is soaking time. My dad bought these for me as a special treat from our favorite Laotian restaurant when I was younger, and when I ventured out on my own I tried making them myself. I went through several recipes I found online with no success... I couldn't get the rice as glutinous and soft as the ones from the restaurant! Eventually I broke down and asked the owner what the secret was: cook the rice beforehand, and cook it again with the "sauce" to really get the gluten going. I've made this countless times since, and it's perfect!

Categories     Dessert

Time 8h30m

Yield 8-10 khao dome, 8-10 serving(s)

Number Of Ingredients 7

1 cup sticky rice (or glutinous rice)
1 cup water
1 (13 1/2 ounce) can coconut milk
1/2 cup sugar (use vegan sugar if you want)
1 large plantain (should be ripe)
8 -10 large banana leaves
extra water (for soaking the rice)

Steps:

  • Unless you've managed to find rinse-free sticky rice (I never have), you'll need to rinse and soak the rice beforehand. Start with the uncooked rice in a large bowl, and add several cups (no need to measure) of cold water. Shake and stir the rice around with your hands; you'll see the water turn white. Drain the water from the rice, and keep repeating this step until the water stops turning completely white. Finally, add water to the bowl to cover the rice and let it soak for at least 6 hours (overnight is best).
  • If you have a rice cooker, use it to prepare the rice. If not, add the rice and 1 cup of water to a medium pot. Bring the water to a boil, then cover the pot and turn the heat down to medium-low. Let the rice cooked undisturbed for 20 minutes, then check to see if it is done. Cook longer if needed. When the rice is ready, set it aside to cool.
  • In a large pot, combine the coconut milk (make sure to shake the can well before opening) and sugar. Mix over medium-high heat until the sugar is dissolved and the sauce is combined and creamy.
  • Add the cooled rice into the pot with the coconut milk mixture. Stir to combine, and continue to cook over medium-high heat until the mixture is the consistency of thick porridge. Remove from heat. You could serve this mixture by itself or with some mango as a dessert rather than continuing with the recipe -- we eat it this way from time to time.
  • Peel the plantain and slice it into 8-10 rectangular pieces.
  • Rinse the banana leaves and cut them down to around the size of a standard sheet of paper (8.5 in x 11 in).
  • To make the khao dome, lay out a single banana leaf (sideways, or wider than it is tall). Plop a small dollop of the rice mixture in the center, then lay a slice of plantain on it, and add another dollop of rice on top of the plantain. Wet your fingers and use your hands to form the rice and plantain into a rectangle (taller than wide, opposite of the banana leaf). Now fold one side of the leaf over the rice, then fold the other side of the leaf back over the rice. Continue to wrap the leaf around the rice until you run out of leaf. Fold the top of the leaf down and the bottom of the leaf up; now you should have a nice little leaf package. You could tie it closed with some string, but I don't think it's necessary.
  • You'll need a steaming basket for this step. You can easily pick one up at a local asian market for a few dollars; I think it's a great investment! Stack the khao dome in the steam basket and cover. Fit the basket over a large pot with 2-3 inches of water in it, and heat the water to boiling over high heat. Steam the khao dome for 40 minutes and then remove them from the basket to cool.
  • Enjoy! These are great for on-the-go snacking, just peel the banana leaf back and use it to hold the rice.

GRILLED BANANAS WITH COCONUT STICKY RICE

Grilled Bananas with Coconut Sticky Rice image

Categories     Sauce     Rice     Dessert     Side     Roast     Steam     Banana     Coconut     Boil

Yield makes 6 rolls

Number Of Ingredients 9

1 cup long-grain or short-grain sticky rice
3/4 cup water
2 tablespoons coconut milk, canned or freshly made (page 318)
1/4 teaspoon salt
1/2 cup unsweetened finely grated dried coconut
2 teaspoons sugar
6 pieces fresh or thawed, frozen banana leaf, each 9 by 12 inches, trimmed of browned edges, rinsed, and wiped dry
6 small bananas, peeled, or 3 sections from regular bananas, each 3 1/2 inches long, peeled and halved lengthwise
1 1/4 cups Coconut Dessert Sauce (page 313), warm or at room temperature

Steps:

  • Rinse the rice, drain in a sieve, and put into a small, heavy saucepan. Add the water, coconut milk, and salt and bring to a near boil over medium-high heat. Give the rice a stir to loosen the grains on the bottom, and then lower the heat to medium. Let cook, stirring occasionally, for 1 to 2 minutes, or until most of the liquid has been absorbed. Decrease the heat to low, cover, and cook for 10 minutes. Remove from the heat and let stand, covered, for 10 minutes to finish cooking.
  • Uncover the rice, fluff it with chopsticks or a fork, and transfer it to a bowl. Add the grated coconut and sugar and mix well. Set aside until cool enough to handle.
  • For each packet, put a banana leaf rectangle, with the smoother side up and a short side closest to you, on a work surface. Tear off a long, narrow strip, about 1/3 inch wide, and set aside to use later to secure the packet. Put 1/3 cup of the rice on the center of the leaf. Moisten your fingers with water to prevent the rice from sticking to them and then press the rice into a 5-inch circle. Vertically center a banana on top of the rice. Pull up the long sides of the leaf so that they meet in the middle, pressing gently on the rice so it covers the top of the banana. To encase the banana fully, use your fingers to push and pinch the rice at the ends. You may find it easier to do this if you hold the packet in one hand. Do your best to cover the banana in rice, although thinly covered spots are okay. Once you are satisfied the banana is covered as well as possible, roll up the banana in the leaf, cigar style, to create a 12-inch-long, open-ended tube. Fold the ends of the leaf under to close the packet(they will partially overlap), and then tie the ends down securely with the reserved leaf strip. Repeat to make 5 more packets.
  • Prepare a medium-hot charcoal fire (you can hold your hand over the rack for only 3 to 4 seconds) or preheat a gas grill to medium-high. Grill the packets, fold side down, for 6 to 8 minutes, or until deeply charred on the underside. Flip each packet over and grill for about 4 minutes longer, or until the second side is lightly charred. Alternatively, position a rack in the upper third of the oven and preheat to 500°F. Arrange the packets on a baking sheet and roast, turning once, for 7 to 8 minutes on each side, or until the packets are gently hissing and the leaves are tinged brown and crispy. (The banana leaf packets may be grilled or roasted about 2 hours in advance and kept at room temperature. Reheat in a 350°F oven for about 10 minutes, or until warm, before serving.)
  • Let the packets cool for 5 to 10 minutes before serving. If the packets are blackened and unsightly, open them and transfer the rice-coated bananas to dessert plates. Otherwise, enjoy the bananas directly from the packets. Drizzle about 3 tablespoons coconut sauce over each banana and eat with a fork or spoon.

THAI GRILLED SWEET STICKY RICE WITH BANANA FILLING

Thai Grilled Sweet Sticky Rice With Banana Filling image

These delicious grilled banana leaf packets conceal Thai sticky rice perfumed with the smokiness of the charred wrapper and a piece of banana at the center.

Provided by Leela Punyaratabandhu

Number Of Ingredients 9

1¾ cups Thai white glutinous rice, rinsed until the water runs clear and soaked for 2 hours
¼ cup coconut cream
1 cup coconut milk
1 cup coconut milk
¼ cup extra-virgin coconut oil
⅓ cup granulated sugar
½ teaspoon salt
1 pound (about 12) banana leaves
6 fully ripe nam wa or Burro bananas (about 2½ ounces each), peeled and halved lengthwise

Steps:

  • Fill the steamer pot with water as full as you can without the bottom of the basket touching the water and set the pot over high heat. Drain the rice, being careful not to break the grains. When the water boils, place the rice in the bamboo basket and rest the basket in the top of the pot. Steam the rice over rapidly boiling water, stopping when it has barely turned glossy and is still dry (it will be cooked again), about 20 minutes. Remove from the heat.
  • While the rice is still hot, combine the coconut cream, coconut milk, coconut oil, sugar, and salt in a 2-quart saucepan and bring to a boil, stirring to dissolve the sugar. Remove the pan from the heat and stir in the hot sticky rice, making sure every grain is separate and coated with the coconut syrup. The mixture will appear soupy at this point, but don't panic. Cover the pan tightly and leave the rice undisturbed at room temperature for 1 hour.
  • Meanwhile, wipe the banana leaves clean with a damp cloth, then cut into 12 pieces, each 12 by 10 inches, with the 10-inch side parallel to the leaf grain. Have ready 24 toothpicks.
  • After an hour, the rice will have absorbed the hot coconut syrup, cooled, and become firmer. At this point, it should be fully cooked but not soft, and tender enough to eat. Use a butter knife to divide it, directly in the saucepan, into quarters. Then divide each quarter into three equal wedges. Lay a piece of banana leaf, dull side up and with a long side facing you, on a work surface. Place a portion of the sticky rice in the center of the leaf. Use your fingers to form the rice into a flat, oblong bed parallel with the grain of the leaf. The bed should be about the length of a banana half and twice its width. Press a banana half firmly into the center of the rice bed. Using your fingers, gently fold the overhangs of the sticky rice over the banana half and manipulate it so it covers the banana entirely. With the banana leaf positioned in such a way that its grain is perpendicular to your body, lift up the left edge of the leaf and fold it along the grain over the filled sticky rice, tucking it in tightly. Continue to roll from left to right, forming a compact packet. Secure each end with a toothpick, positioned as close to the rice as possible. Trim off the overhangs, leaving only about 1 inch on each end. Repeat with the remaining banana leaves, sticky rice, and banana halves.
  • To grill the packets, light natural wood charcoal and allow it to burn until you have low coals under a heavy layer of ash. Grill the packets directly over the coals, flipping them every 5 minutes, until the leaves are thoroughly charred and the packets are heated through. This should take 35 to 45 minutes. Alternatively, place an oven rack in the lowest position in the oven and preheat the broiler (if your broiler is adjustable, set it at low). Arrange the banana packets on a large sheet pan, place the pan on the oven rack, and broil the packets, flipping them every 5 minutes, until the leaves are charred and the packets are heated through, about 40 minutes (fewer, if your broiler automatically sets at high). Leave the packets to cool for about 15 minutes before serving.
  • Leftover packets can be frozen, then thawed overnight in the refrigerator and baked in a preheated 350°F oven until softened and heated through, 30 minutes.

VIETNAMESE RICE CAKES IN BANANA LEAVES

Vietnamese Rice Cakes in Banana Leaves image

Categories     Bean     Pork     Rice     Side     Steam     Lunar New Year     Sugar Conscious     Dairy Free     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 1 cake or 4 servings

Number Of Ingredients 12

1 3/4 cups sticky (glutinous) rice, preferably long-grain
1 drop of green food coloring (optional)
1/4 cup dried split mung beans
1/4 teaspoon salt
2 tablespoons chopped shallots
1 1/2 tablespoons fish sauce
1 teaspoon ground black pepper
5 ounces pork shoulder or butt, cut into 1/4-inch-thick chunks
1 1/2 tablespoons vegetable oil
2 (14" x 16") sheets plastic wrap plus extra
1 (14" x 16") sheet aluminum foil
2 (14" x 14") pieces banana leaf

Steps:

  • 1. Place the sticky rice in a large bowl and cover it with 3 inches of water. Stir in the food coloring, if using, and let the rice soak overnight. (Once soaked, the rice will double to about 4 cups.) In a separate bowl, soak the mung beans for at least 4 hours. Drain both just before using and set aside in separate bowls. Add the salt to the rice and stir to blend.
  • 2. Combine the shallots, fish sauce, black pepper and pork pieces and let marinate for 30 minutes.
  • 3. Heat the oil in a frying pan over moderate heat. Add the pork pieces and all the marinade and stir just until the meat is brown around the edges, about 3 to 4 minutes. Remove the pan from the heat and set aside.
  • 4. Using a steamer basket, steam the mung beans until they are soft, about 10 minutes. Remove from the heat and set aside.
  • 5. To make the packet, neatly lay down the wrappers in this order: 1 sheet of plastic wrap (leave the other for use later), the aluminum foil, 2 sheets banana leaves (one perpendicular to the other). Place one cup of the rice in the center of the banana leaf, spreading it to cover a 5-inch square. Place half of the mung beans on top, then add the pork pieces. Cover with the remaining mung beans and place 1 cup of rice on top. Bring the narrow sides of the wrappers together. Fold the gathered edges over twice, then flatten against the packet. (You now have two open ends.) Fold one end over and hold the packet upright. Add half of the remaining rice, tapping it and pushing it down so the packet will be an even square. Fold the end over and repeat on the other side.
  • 6. Place the packet with the folded sides down in the center of the remaining plastic sheet. Wrap tightly so that water will not seep into the packet during cooking.
  • 7. Tightly tie the packet with two parallel strings in both directions (as in a tic-tac-toe pattern).
  • 8. Fill a large stockpot with water. Add the packet and bring to a boil. Reduce the heat to a simmer. Place a colander or something heavy on top of the packet to keep it submerged in the water. Cook uncovered until done, about 6 hours, adding more water if necessary. Remove from the heat and set aside to cool for 1 hour.
  • 9. To serve, cut the packet (without unwrapping) into 1/2-inch slices. Remove the wrapping and arrange the slices on a serving plate. Serve warm or at room temperature. If wrapped in plastic and refrigerated, the cake will keep for 1 week.
