BLUEBERRY LEMON STEEL CUT OATS

1 cup steel cut oats
1 tablespoon butter
3 cups hot water
1 cup 1% milk
1 teaspoon pure vanilla extract
small pinch of salt
1 tablespoon lemon juice
1/2 teaspoon lemon zest
1 - 1 1/2 cups frozen blueberries
pure maple syrup

Steps:

  • In a medium sauce pan melt 1 tablespoon of butter then add oats and toast until golden and fragrant.
  • Add 3 cups hot water into the oats. Hot water can come from the tap, you don't need to heat it up on the stove. Bring to a boil then turn to a low simmer for 25 minutes.
  • Add in milk, vanilla extract, salt, and blueberries. Stir then add in the lemon juice and zest. Let it simmer for another 15 - 20 minutes or until the oats become a porridge consistency. Remove from heat and let sit for 3-5 minutes.
  • Serve hot drizzled with 2 teaspoons of maple syrup per serving.

½ c milk of choice
2 tsp chia seeds
¼ c blueberries
1 tsp lemon zest
1/2 tsp vanilla
1-2 tsp maple syrup or sweetener of choice
Dash of sea salt
2 T shredded coconut (optional)

Steps:

  • Combine all ingredients into a jar or container that can be sealed.
  • Stir well to combine.
  • Chill overnight or at least for 4 hours.
  • Enjoy warm or fresh from the fridge in the morning!

1 cup steel-cut oats
½ cup milk
½ cup cashews
¼ cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
2 tablespoons flaked coconut
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 pinch white sugar, or to taste

Steps:

  • Bring water and salt to a boil in a saucepan. Stir oats into boiling water.
  • Cook oats until thick and soft, 20 to 30 minutes.
  • Stir milk, cashews, cranberries, coconut, vanilla extract, and cinnamon into cooked oats; continue cooking 10 minutes more, stirring frequently.
  • Sprinkle sugar over the oats to serve.
