- In a large saucepot, melt the butter and add the oats. Stir for 2 minutes to toast. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.
- Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes. Spoon into a serving bowl and top with remaining buttermilk, brown sugar, and cinnamon.

- Cook oats according to direction on the package
- While oats cook, mix flour, baking soda, cinnamon, ginger and salt in a bowlIn a large bowl, blend the butter and coconut oil.
- Add sugar and whip until smooth. Add vanilla and one egg. Beat thoroughly. Add the second egg. Beat again.Add flour mix to egg mix. Add half at a time to avoid lumps.
- Once the cooked steel-cut oats cool completely, add all mixes together BY HAND. Add dried fruit and any other optional grains
- Spread batter over a parchment paper-lined half sheet pan or a pan sprayed with cooking spray.
- Cook at 350 degrees for approximately 25 to 30 minutes until the top is brown. Allow the oat mixture to cool completely before cutting into squares.
- The finished texture will be soft. You can also serve hot into a bowl with nuts or other toppings.

- The night before: In a 2-quart saucepan, bring 2 1/2 cups water to a boil. Add 2/3 cup steel-cut oats (not quick-cooking). Stir, let cool to room temperature. Cover; refrigerate in pan overnight.
- In the morning: Add 1/8 teaspoon coarse salt to pan; bring to a boil. Reduce heat to low, and simmer until oats are tender but still chewy, 12 to 15 minutes, stirring occasionally. Stir in 1/3 cup milk, and cook until creamy, 2 to 3 minutes. Divide between 2 bowls. Spoon on light-brown sugar and toppings (such as banana chips or sliced apricots), if desired. For a crunchy texture, add toasted nuts.

- Combine water, oats, and salt in a saucepan and bring to a boil. Reduce heat to a low simmer and cook, stirring occasionally, to desired chewiness, 10 to 20 minutes. Drain cooked oats in a colander and place them into a bowl.
- Preheat the oven to 375 degrees F (190 degrees C). Grease an 8-inch pie pan.
- Whisk milk, egg, and maple syrup together in a bowl until frothy. Stir egg mixture into oats. Fold in dried fruit, nuts, canola oil, and cinnamon until batter is combined and pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean and oatmeal has no liquid on top, 20 to 30 minutes. Let cool before cutting into bars.
