STEAMED VEGETABLES WITH GARLIC BUTTER



Steamed Vegetables with Garlic Butter image

Fresh STEAMED VEGETABLES drizzled in a garlic butter sauce is a deliciously easy side dish perfect for any night of the week! These steamed veggies fit right in on your holiday table too, AND I even make this steamed veggies recipe just for snacking!

1 head broccoli, florets only
1 cup baby carrots
1 cup sugar snap peas
water
4 tablespoons unsalted butter
1 tablespoon freshly minced garlic
salt and black pepper to taste

Steps:

  • Add about 2 inches of water in a saucepan. Set the pan over medium heat to bring it to a simmer.
  • While the water is heating up, Wash the vegetables as needed. Remove stems from the broccoli so you only have the florets. Chop florets so they aren't too large and place the florets into the steamer basket. Add 1 cup of baby carrots and 1 cup of sugar snap peas.
  • Place the steamer basket over the saucepan and cover.
  • Steam the vegetables for about 8 minutes or until done to your liking. When done to your liking, remove the vegetables to a serving bowl and set aside while you make the garlic butter.
  • Pour out the water in the saucepan and place the saucepan over mid-low heat. Melt 4 tablespoons butter and saute 1 tablespoon freshly minced garlic until fragrant. About a minute. Add about a 1/2 teaspoon of salt and a 1/4 teaspoon of pepper and stir to combine. Give it a taste and adjust the seasoning as needed. Drizzle the garlic butter over the vegetables and enjoy!

Steps:

  • Cook the rice.
  • Steam the vegetables.
  • When rice and vegetables are done, layer the vegetables on top of the rice.
  • Sprinkle sunflower seeds and shredded mozzarella on top.
  • Finish with a squeeze of lemon juice.
  • Enjoy!

140g short or medium grain rice

Steps:

  • In a medium saucepan with a tight-fitting lid, cover the rice with cold tap water. Swish the rice around until the water becomes cloudy, then slowly pour it out, using your hand to keep the rice from falling out of the pan. Repeat 2 or 3 more times until the water runs mostly clear, then drain well.
  • Add 175ml water and bring to the boil over a high heat. Once boiling, lower to a simmer and cover for 15-20 mins until the water is absorbed and the rice is soft. Do not lift the lid while the rice cooks. Remove the saucepan from the heat and let it sit, covered and undisturbed, for 10 mins. Uncover the pan and gently fold the rice over itself to fluff it up a few times before serving.

200g brown rice
100g green beans
200g pak choi , chopped into chunky pieces
4 x 100g salmon fillets
4 tbsp kecap manis (sweet soy sauce)
juice 3 limes
2 tbsp sambal oelek (chopped chilli in a jar) or 1 red chilli, deseeded and chopped
1 tbsp rice vinegar
1 tbsp golden caster sugar
4 spring onions , finely chopped
4 tbsp mixed seeds (I used pumpkin, sesame and sunflower)
pickled ginger , chopped (optional)

Steps:

  • In a small bowl, mix together the dressing ingredients, then set aside. Boil the rice in plenty of water and drain when just cooked, about 15 mins.
  • Meanwhile, put the vegetables and fish in a large steamer in two layers. Steam the fish for 5-8 mins and the veg for 4-5 mins until cooked through. Spoon the rice into bowls and top with the steamed fish and veg. Pour some dressing over and top with the spring onions, mixed seeds and pickled ginger, if you like.
