1 cabbage ((shredded))
10 ounces shredded carrots (284g)
1 red bell pepper ((cut thinly))
1 green bell pepper ((cut thinly))
½ cup fresh cilantro ((chopped) 8g)
2 cups mayonnaise (460g)
¼ cup apple cider vinegar (60ml)
2 tablespoons Cajun seasoning
1 tablespoon dijon mustard
salt and pepper to taste

Steps:

  • Shred the cabbage and cut the rest of the vegetable and herbs.
  • Add all of the ingredients to a large bowl and combine well.
  • Cover and refrigerate for at least 30 minutes before serving to let the flavors develop.

CAJUN ROASTED PORK LOIN

This wonderful roast creates an incredible sauce for drizzling over the meat. If you like it spicier add more cayenne.

2 tablespoons butter
½ teaspoon cayenne pepper
1 teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon dried thyme
½ teaspoon ground mustard
2 cloves garlic, minced
1 (4 pound) pork loin roast
salt and pepper to taste
1 tablespoon olive oil
2 carrot, cut into 1/2 inch pieces
1 red bell pepper, cut into 1/2 inch pieces
1 stalk celery, cut into 1/2 inch pieces
1 large onion, cut into 1/2-inch pieces
3 tablespoons all-purpose flour
½ cup chicken broth

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Melt the butter in a small skillet over medium heat. Stir in the cayenne, oregano, pepper, thyme, mustard, and garlic. Cook for 1 minute. Use a paring knife to make several small incisions in the fat side of the meat. Stuff the slits with the spice mix, and rub the remaining mix over the surface of the meat. Sprinkle the roast with salt and pepper.
  • Heat the olive oil in a roasting pan over medium heat. Put the roast in the pan, and surround with the carrots, red pepper, celery, and onion. Lightly salt and pepper the vegetables. Place roasting pan in preheated oven, and cook for 1 hour and 45 minutes. Increase the oven temperature to 425 degrees F, and cook for an additional 15 minutes to brown the meat. Cook until meat is 145 degrees F (63 degrees C). Remove roast from pan, and let stand 10 minutes before slicing.
  • Place the roasting pan, with the pan juices, over medium heat. Whisk the flour into the hot drippings, and cook for 3 minutes. Pour in the chicken stock and cook, whisking occasionally, for 6 minutes. Strain sauce, and serve with the sliced pork roast.

My husband and I just love New Orleans-style foods, so any time I come across a Cajun recipe. I just have to try it. This is one of our favorite ways to prepare pork.

1 boneless pork shoulder butt roast (3 to 3-1/2 pounds)
1/2 cup finely chopped onion
4 teaspoons prepared mustard
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
1 tablespoon steak sauce
3 garlic cloves, minced
1 teaspoon seasoned salt

Steps:

  • Place roast in a shallow baking pan; cut 8-10 small slits in roast. Combine remaining ingredients; press into slits and over top of roast. , Bake, uncovered, at 350° for 45 minutes. Cover and bake 1-3/4 hours longer or until a thermometer reads 160°. Let stand for 10 minutes before slicing.

2 pounds boneless pork loin roast
2 teaspoons olive oil
3 teaspoons paprika
2 tablespoons dried oregano
2 tablespoons dried thyme
1 tablespoon garlic powder
1/2 teaspoon each salt, crushed red pepper flakes, ground cumin and white pepper
1/4 teaspoon ground nutmeg

Steps:

  • Rub pork roast with oil. Combine remaining ingredients and rub over roast. Cover and refrigerate for 1-3 hours., Bake, uncovered at 350° for 40-45 minutes or until a thermometer reads 145°. Transfer to a serving platter. Let stand for 10 minutes before slicing.

1/2 head green cabbage, super finely sliced with a mandoline
1/4 head red cabbage, super finely sliced with a mandoline
1/4 cup chopped fresh parsley
1/4 cup apple cider vinegar, plus more if needed
2 tablespoons stone-ground mustard
2 tablespoons light brown sugar
2 Hungarian wax peppers, seeded and ribs removed, finely julienned
2 Hungarian wax peppers, seeded and ribs removed, finely julienned
1/2 red onion, super finely sliced with a mandoline
Kosher salt and freshly ground black pepper

Steps:

  • Combine the green and red cabbage in a large bowl. Add the parsley, vinegar, mustard, sugar, peppers, onions and some salt and pepper and mix to combine. Let sit for 30 minutes.
  • Drain the excess liquid from the bowl. Transfer the slaw to a piece of cheesecloth and lightly squeeze to remove more liquid. Return the slaw to the bowl and add a little more vinegar if necessary.

3 teaspoons Cajun seasoning

2 teaspoons Worcestershire sauce
2 large tomatoes, chopped

Steps:

  • In a large skillet over medium heat, cook and stir the pork, Cajun seasoning, garlic and Italian seasoning in butter for 8-10 minutes or until meat is no longer pink. Meanwhile, cook noodles according to package directions., Stir broth and Worcestershire sauce into pork mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in tomatoes; cook 1-2 minutes longer or until heated through. Drain noodles. Use a slotted spoon to serve pork mixture over noodles; drizzle with pan juices.

2 tablespoons olive oil
1 teaspoon louisiana hot sauce

1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
1 lemon, juice of
1 teaspoon garlic powder
salt, to taste
ground black pepper, to taste
2 green bell peppers, seeded and thinly sliced
1 medium onion, peeled and shredded
1 large green cabbage head, shredded

Steps:

  • In a mixing bowl, whisk the mayonnaise and mustard until combined. Add olive oil slowly while whisking and whisk until the mixture has returned to the original thickness of the mayo.
  • Add the hot sauce, ketchup, vinegar, worcestershire and lemon juice, whisking completely after each addition.
  • Stir in the garlic powder and salt and pepper.
  • Place bell peppers, onion and cabbage in a large bowl, pour dressing over and toss to thoroughly combine.
  • Refrigerate for at least an hour.
  • Serve cold.

Stir in seasonings and pepper sauce., Cut several slits in roast to within 1/2 in. of bottom. Place in a 5-qt. slow cooker. Spoon onion mixture between slits and over the top of meat. Cover and cook on low for 6-8 hours or until pork is tender., Transfer roast to a serving platter; keep warm. Strain cooking juices and pour into a small saucepan. Combine cornstarch and water until smooth; stir into the pan. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with roast.
