½ cup shortening
1 cup white sugar
1 cup solid-pack pumpkin (such as Libby's®)
2 eggs, beaten
2 cups sifted all-purpose flour
4 teaspoons baking powder
2 ½ teaspoons ground cinnamon
1 teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
1 cup raisins
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 2 cookie sheets.
  • Beat shortening with an electric mixer until creamy; add sugar gradually. Beat until light and fluffy. Add pumpkin and eggs; mix well.
  • Sift flour, baking powder, cinnamon, salt, nutmeg, and ginger together. Stir into the pumpkin mixture until blended. Add raisins and walnuts.
  • Drop teaspoonfuls of cookie dough onto the prepared cookie sheets.
  • Bake in the preheated oven until edges are firm and starting to brown, about 15 minutes.

2/3 cup packed brown sugar
1/3 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup canned pumpkin

1/2 teaspoon salt
1/4 teaspoon baking powder
1 cup chopped walnuts
FROSTING:
1/4 cup butter, softened
4 ounces cream cheese, softened
2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Add pumpkin; mix well. Combine the flour, cinnamon, baking soda, salt and baking powder; gradually add to creamed mixture and mix well. Stir in walnuts., Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 8-10 minutes or until edges are lightly browned. Remove to wire racks to cool completely., In a small bowl, beat the frosting ingredients until light and fluffy. Frost cookies. Store in an airtight container in the refrigerator.

½ cup packed brown sugar
½ cup white sugar
1 cup pumpkin puree
1 egg
1 teaspoon vanilla extract

1 teaspoon baking soda
1 teaspoon baking powder

½ teaspoon salt
1 cup chopped walnuts
3 tablespoons butter
½ cup packed brown sugar
¼ cup milk
2 cups confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together shortening, 1/2 cup brown sugar, and white sugar. Mix in pumpkin, egg, and vanilla. Sift together flour, baking soda, baking powder, cinnamon, and salt; mix into the creamed mixture. Stir in walnuts. Drop dough by heaping spoonfuls onto the prepared baking sheets.
  • Bake for 10 to 12 minutes in the preheated oven. Cool on wire racks.
  • In a small saucepan over medium heat, combine the 3 tablespoons butter and 1/2 cup brown sugar. Bring to a boil; cook and stir for 1 minute, or until slightly thickened. Cool slightly, then stir in the milk, and beat until smooth. Gradually stir in 2 cups confectioners' sugar until frosting has reached desired consistency. Spread on cooled cookies.

2 c brown sugar
1 can(s) pumpkin, canned (15 oz.)
4 c gluten free flour
2 tsp baking soda
2 tsp baking powder
2 tsp nutmeg
1/8 tsp sea salt
1 c chopped walnuts
3/4 c vanilla or white chocolate chips
CARAMEL FROSTING:
1/2 c butter, cubed
1 1/2 c packed brown sugar
1/4 c soymilk
1 tsp maple extract
1/2 tsp vanilla extract
2 1/2 c confectioners' sugar

Steps:

  • 1. In large bowl, cream Crisco and brown sugar until light and fluffy.Beat in Pumpkin. Combine the flour, baking soda, powder and spices. Gradually add pumpkin mixture and mix well. Stir in walnuts and chocolate chips.
  • 2. Drop by rounded teaspoonfuls 2" apart onto ungreased baking sheets.

This is my adopted recipe.I have made these now and if you like pumpkin and walnuts you will like these. The original recipe didn't have any nuts in the ingredient list so I tried 1 cup and that seemed to be fine. No milk was listed so I used about 1 tablespoon in the icing. She/He also had 84 as the amount, I only got 58 cookies. Even DH, the picky one, enjoyed them.

1/2 cup butter or 1/2 cup margarine, softened
1 1/2 cups brown sugar, firmly
2 eggs
1 cup pumpkin
1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
1 cup walnuts, chopped
1/4 cup butter or 1/4 cup margarine, softened
2 1/4 cups powdered sugar, sifted
3/4 teaspoon maple extract
1 tablespoon milk

Steps:

  • Cream butter; gradually add brown sugar, beating well at medium speed of an electric mixer.
  • Add eggs, one at a time, beating after each addition.
  • Stir in pumpkin and vanilla.
  • Combine flour, baking powder, salt, and pumpkin pie spice.
  • Gradually add to creamed mixture, mixing well.
  • Stir in walnuts.
  • Chill for at least 1 hour or until ready to bake.
  • Drop dough by teaspoonfuls 2 inches apart onto greased cookie sheets. I used a 1 1/2 inch cookie scoop and got 58 cookies.
  • Bake at 375F for 11-12 minutes.
  • Cool on wire racks.
  • Frost with Maple Frosting.
  • (Maple Frosting).
  • Cream butter; gradually add 1 cup powdered sugar, beating well at medium speed of an electric mixer.
  • Add remaining sugar alternately with milk, beating until smooth enough to spread.You may need to add a bit more milk.
  • Add maple extract, and beat well.

1/3 cup butter (do not use margarine or spread; it will burn)

Steps:

  • Heat oven to 375°F. In large bowl, beat granulated sugar, brown sugar, 3/4 cup butter and 1 teaspoon vanilla with electric mixer on medium speed, scraping bowl occasionally, until well blended. Beat in pumpkin and eggs until well mixed. On low speed, beat in flour, baking soda, cinnamon and salt.
  • On ungreased cookie sheets, drop dough by heaping tablespoonfuls.
  • Bake 10 to 12 minutes or until almost no indentation remains when touched in center. Immediately remove from cookie sheets to cooling rack. Cool completely, about 45 minutes.
  • In medium bowl, place powdered sugar, 1 teaspoon vanilla and 3 tablespoons milk. In 1-quart saucepan, heat 1/3 cup butter over medium heat, stirring constantly, just until light brown.
  • Pour browned butter over powdered sugar mixture. Beat on low speed about 1 minute or until smooth. Gradually add just enough of the remaining 1 tablespoon milk to make frosting creamy and spreadable. Generously frost cooled cookies.
