Vegetable oil or cooking spray, for baking sheet
1 cup sugar
1/4 cup water
1 teaspoon coarse salt, divided
2 tablespoons adobo sauce (from one 7-ounce can chipotle chiles in adobo; reserve chiles for another use)
1 cup unsalted roasted pepitas (green pumpkin seeds)
1 cup unsalted roasted peanuts
1/4 teaspoon cayenne pepper (optional)

Steps:

  • Line a rimmed baking sheet with parchment. Lightly brush with oil or coat with cooking spray. Cook sugar, water, and 1/2 teaspoon salt in a heavy medium saucepan over high heat, stirring, until sugar just dissolves. Continue to cook, without stirring, until golden, about 4 minutes. Cook about 1 minute more, swirling the pan, until syrup is light amber. Carefully stir in adobo sauce (hot syrup will spatter), and cook 30 seconds.
  • Remove pan from heat. Add pepitas, peanuts, and cayenne, stirring to coat. Immediately pour onto baking sheet. Sprinkle with remaining salt. Let cool completely, and break into pieces.

4 strips thick sliced bacon, cut into 1/4-inch slivers
2 medium onions, finely chopped (about 2 cups)
1/2 green bell pepper, finely chopped
2 gloves garlic, minced
2 (15-ounce) cans great northern or kidney beans, drained and rinsed in a colander
1/3 cup molasses
1/4 cup barbecue sauce
1/4 cup ketchup
3 tablespoons dark brown sugar, or to taste
1 tablespoon Worcestershire sauce
1 tablespoon prepared mustard
1 tablespoon dry mustard
1 tablespoon cider vinegar
1/4 tablespoon liquid smoke, or to taste
Salt and freshly ground black pepper

Steps:

  • In a heavy pot, cook the bacon over medium heat to render the fat, about 5 minutes. Discard all but 2 tablespoons fat.
  • Add the onion, pepper, and garlic and cook until the vegetables are soft, about 5 minutes. Stir in the beans, molasses, barbecue sauce, ketchup, sugar, Worcestershire sauce, mustards, vinegar, and liquid smoke. Simmer the beans, uncovered, until rich and thickly flavored, 10 to 15 minutes, stirring with a wooden spoon. Alternatively, place the baked beans in a deep baking dish and bake in a 350 degree oven for about 30 minutes. Add salt, pepper, or any other ingredient to taste.

1 pound brussels sprouts, trimmed, halved
1/2 teaspoon kosher salt
1/4 cup dates, pitted, chopped

Steps:

  • Cook bacon in a large skillet over medium heat, stirring occasionally, until partially crisped, 5-7 minutes. Using a slotted spoon, transfer bacon to paper towels, reserving fat in skillet.
  • Add 2 Tbsp. oil to fat and heat over medium. Working in batches and adding more oil if needed, add brussels sprouts in a single layer, cut side down, and sear, without stirring, until well-browned, about 3 minutes. Season with salt, toss to coat, then stir in bacon and dates. Stir in 3/4 cup water, increase heat to medium-high, and cook, mashing dates with the back of a wooden spoon, until dates have dissolved and brussels sprouts are well-glazed, about 2 minutes.

12 lb tomato, peeled- (about 5 quarts)
3 cups onion, finely chopped
4 cloves garlic, chopped
1 ½ cups apple cider vinegar
½ cup bourbon
2 cups dark brown sugar, packed
1 tablespoon garlic powder
1 tablespoon mustard powder
2 tablespoons smoked paprika
1 teaspoon cayenne pepper
2 teaspoons chili flakes,
2 tablespoons salt

Steps:

  • Combine tomatoes, onion, and garlic in a large stock pot and bring to a boil; lower heat and simmer 30 minutes or until vegetables are very soft. Working in batches, puree vegetables until smooth with Harvest Pro food mill or in the bowl of a food processor.
  • Return tomato mixture to the pot and add remaining ingredients, bring to a boil over high heat, stirring frequently. Lower heat and simmer until thickened and darker in color, about 1½-2 hours, stirring occasionally to prevent scorching.
  • Prepare boiling water canner while sauce is cooking. Heat jars in simmering water until ready to use. Do not boil. Wash lids in warm soapy water and set aside with bands.
  • Ladle hot BBQ sauce into a hot jar leaving a ½-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band; adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process jars for 20 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal. They should not flex when center is pressed.
  • Enjoy!

The traditional peanut brittle gets an update by using walnuts that are toasted, plus an addition of smokehouse rub found at Winco® (1745 is the bin number). Instead of using traditional corn syrup, I swapped to Lyle's® golden syrup; I believe it gave a deeper, richer taste. I absolutely recommend using a nonstick saucepan and a silicone spatula, because this mixture is rather sticky

1 cup chopped walnuts
cooking spray
1 cup sugar
½ cup water
½ cup golden syrup (such as Lyle's®)
1 tablespoon butter
1 teaspoon baking soda
1 teaspoon smokehouse rub (such as Winco®)
½ teaspoon walnut extract

Steps:

  • Pour walnuts into a skillet over medium heat. Cook, stirring frequently, until lightly toasted, about 3 minutes. Remove from heat and allow to cool.
  • Line a rimmed half-sheet pan with aluminum foil and spray with nonstick cooking spray.
  • Combine sugar, water, and golden syrup in a nonstick saucepan over medium heat. Do not stir. Clip a candy thermometer to the side of the pan, and wait for the mixture to reach 275 degrees F (135 degrees C), about 5 minutes.
  • Once sugar mixture reaches 275 degrees F (135 degrees C), add toasted walnuts. Stir using a silicone spatula until mixture reaches 300 degrees F (150 degrees C), about 5 minutes more. Stir in butter, baking soda, smokehouse rub, and walnut extract.
  • Remove saucepan from heat and carefully pour mixture onto the prepared baking sheet. Allow to cool before breaking into smaller pieces, about 30 minutes.

Steps:

  • Cook bacon in large nonstick skillet over medium heat until crisp. Drain bacon on paper towels. Chop bacon; reserve. Pour off all but 2 teaspoons drippings from skillet.
  • Heat drippings in same skillet over medium heat. Add onion and sauté until golden, about 5 minutes. Add garlic; stir 1 minute.
