- Add the onion, garlic, Old Bay Seasoning, and a bay leaf to a large pot. Add 4 cups of water or stock and bring to a boil over high heat.
- Once the water has come to full, roaring boil, remove it from the heat. Carefully add the shrimp and cover the pot with a lid. Set an 8-minute timer and allow the shrimp to steep in the pot. The shrimp is done once it is pink and opaque.
- Pour the contents of the pot over a colander, pick out the shrimp and set aside. Sprinkle the remaining Old Bay Seasoning evenly over the shrimp and serve alongside lemon wedges and cocktail sauce.

SPICY BEER-STEAMED SHRIMP WITH KICKED UP COCKTAIL SAUCE
Steps:
- In the base pot of a steamer, combine the beer, crab boil, and garlic and bring to a simmer. Put the steamer basket in place.
- In a bowl, toss the shrimp with the Essence. Place the shrimp in the steamer basket, close the lid and steam until the shrimp are firm and cooked through, 5 to 6 minutes, stirring the shrimp once to ensure even cooking.
- Remove the basket with the shrimp and let sit until cool enough to handle. Turn out into a large serving bowl or onto a thick layer of newspapers spread on a table. Serve with the cocktail sauce for dipping.
- Combine all ingredients thoroughly and store in an airtight jar or container.

MARYLAND STEAMED SHRIMP
Steamed shrimp are just not the same in Tampa restaurants. The area has plenty of large golf shrimp to offer, only when you order them at a restaurant they're very lacking in flavor (I think their mostly boiled). I wanted to show my boyfriend the way they should be prepared, and by that I mean the "Maryland" way! I found this recipe online and used it as a guide. It makes the most delicious full flavored steamed shrimp. I wanted to post it for others to enjoy in it's exact copy, however, it is a huge amount. I've never made the full ten pounds but you can adjust it down. I usually buy about 2 lbs of large to jumbo shrimp, I never have kosher salt so I just use a dash of regular, 1 / 2 a lemon, one beer, a 1 / 8 cup of the vinegar and lots of old bay. Two tips I have are, you can never have enough old bay and slivers of onions tossed in with the shrimp will add extra flavor. Once I've really perfected my own recipe I'll post it using more reasonable portions.

- In a large pot pour in the beer, vinegar, salt, and lemon (sliced in half) and bring to a rapid boil.
- Place a steamer rack in the bottom of the pot and cover with a layer of shrimp.

- Marinate shrimp in 1 1/2 T olive oil, curry powder, cumin, minced ginger, minced garlic, cayenne, and salt for 1/2 hour.
- Saute shallots in oil, in a heavy skillet over medium heat, stirring frequently, for about 2 minutes.
- Stir in tomato paste, water, and brown sugar. Bring to a simmer.

- Make rémoulade:
- Stir together rémoulade ingredients in a bowl and chill, covered, 1 hour.
- Steam shrimp:
- Toss shrimp with lemon, onion, celery, bay leaves, Old Bay, and salt in a large bowl, then marinate, covered, at room temperature 15 minutes.
- Bring beer and vinegar to a boil in large nonreactive pot. Transfer shrimp with marinade to steamer/colander insert and steam over liquid, covered, 3 minutes.
- Stir shrimp, then continue to steam, stirring again if necessary, until just cooked through, 3 to 5 minutes more.
- Transfer shrimp to a platter and drizzle with about 1/2 cup steaming liquid. Serve with rémoulade.

- Set an expandable steaming basket (use one with legs) in a pot and add water just until it touches the bottom of the basket. Cover the kettle and bring water to a rolling boil. The basic recipe for these quickly broiled shrimp is elastic, easily halved or scaled up. And the spice choices can vary. Here I have opted for ras el hanout, a complex North African blend that delivers modest peppery heat along with pungent elements of cumin, fenugreek and coriander, as well as the warm astringency of allspice and cloves. Harissa, a North African hot sauce, seasons the dip. Serve it as an appetizer or pair it with a grain like rice or farro, or a buttery tumble of fluffy couscous for a more substantial meal.

- Place shrimp in a bowl and add the salt. Mix well and set aside 30 minutes. Meanwhile, stir the yogurt and mix in the harissa and cilantro. Transfer to a serving dish and set aside.
- Heat broiler. Rinse and dry shrimp, place in a bowl and add the ras el hanout. Toss to mix thoroughly. Select a shallow baking dish that will hold the shrimp snugly in a single layer. Brush with a little of the butter. Arrange shrimp in the dish and brush with remaining butter. Broil close to the source of heat until shrimp are lightly browned and cooked through, 6 to 8 minutes. (Alternatively, the shrimp can be placed on soaked wooden skewers, about 3 shrimp per stick, and broiled or grilled over high heat, turning once.) Squeeze the lemon over the shrimp.
- Serve as a cocktail snack directly from the dish with picks to skewer shrimp and harissa dip alongside.
