SOUTHERN GREEN BEANS AND POTATOES

Southern Green Beans And Potatoes image

If you're looking for green bean recipes, there's a good chance you'll stumble on a Southern interpretation of this soulful side. Our version uses fresh green beans and potatoes, but we have a fun trick-we peel a thin strip around the middle of each potato before cooking for textural contrast and pretty presentation.

Provided by Carla Hall

Time 37m

Yield Serves 4 (serving size: about 1 cup)

Number Of Ingredients 8

2 teaspoons olive oil
1 medium onion, halved and very thinly sliced
2 garlic cloves, sliced
1/4 teaspoon crushed red pepper
3 cups unsalted chicken stock
3/4 teaspoon kosher salt
1 1/2 pounds small red and gold potatoes,a strip peeled from the center of each
1 pound green beans, trimmed

Steps:

  • Heat oil in a 5-quart saucepan over medium-high. Add onion. Cook, stirring occasionally, until just tender, about 2 minutes. Add garlic and red pepper, and cook, stirring frequently, until onion is tender, about 3 minutes.
  • Add stock, salt, and potatoes. Bring to a boil, then reduce to a steady simmer. Simmer 10 minutes or until the potatoes are just tender enough to be pierced with a fork but still firm.
  • Add green beans, cover, and simmer until very tender, about 6 minutes. Use a slotted spoon to transfer the potatoes and green beans to a serving dish. Bring the liquid to a boil, and cook until reduced to 1 cup, about 6 minutes. Spoon over the vegetables, and gently fold to mix. Serve hot.

Provided by The Southern Lady Cooks

Categories     Main Course     Side Dish

Time 1h30m

Number Of Ingredients 9

2 lbs fresh, frozen or canned green beans ((If fresh, remove ends and break into pieces and wash the beans))
6 or 7 red potatoes (cut in pieces (I have made this using any kind of potatoes))
1 to 2 cups chicken broth or 1 (14.5 ounce can (You don't have to use the chicken broth. I just think it makes them better))
1 ham hock (Can use cooked ham, bacon, pork jowl or salt pork about a half cup, chopped)
2 to 3 cups water
1/2 teaspoon black pepper
1 teaspoon salt
1/2 cup finely diced onion (Optional)
1 teaspoon minced garlic (Optional)

Steps:

  • Combine all ingredients in a large pot, bring to a boil, then turn to medium low and cook about 1 1/2 hours until potatoes are done and water has cooked down. You can also do this in the crockpot and let cook on low 6 to 7 hours or high 4 hours.

BABY POTATOES AND GREEN BEANS (MEATLESS)

Baby Potatoes and Green Beans (Meatless) image

There's no salt pork added. This dish cooks up fast if done in the microwave. Substitute the butter to make it vegan. I love this the next day for lunch. Quartered red potatoes can also be used.

Provided by Kathy228

Categories     Potato

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 5

8 -10 baby red potatoes, cut in half
8 -10 baby white potatoes, cut in half
1 lb fresh green beans, cleaned and cut in two pieces
1/4 cup butter, melted if desired
1 1/2 teaspoons sea salt

Steps:

  • Cook the unpeeled potatoes and green beans separately in salted water 'til slightly fork-tender. I use the microwave. Or you can steam them. The green beans cook faster than the potatoes will.
  • Drain well and let set in the cooking pan with a lid on for about 4 minutes.
  • Pour the potatoes and beans into a large bowl.
  • To the potatoes, add the butter and sea salt and gently toss together.
  • Pile into a serving bowl and serve.
  • OPTION: Sprinkle with grated Parmasan cheese or crispy, crumbled bacon.
