Steps:
- Put water in the bottom of a steamer. Put the crabs on a plate and spread the wine, sliced ginger, and 1/4 cup soy sauce over them. Place in the steamer and cover; cook until the crabs are hot and cooked through, about 10 minutes. Meanwhile, combine the remaining ingredients to make a dipping sauce. Serve hot with the dipping sauce.
STEAMED CRABS WITH SOY DIPPING SAUCE
This is one of those odd dishes that are easier to cook than to eat. Blue crabs take a lot of work; but they're so delicious they're worth the effort. If you live on the West Coast, you'll probably use Dungeness crab, which will be easier.

Steps:
- Bring a large pot of water to a boil and add salt. Boil the crabs for about a minute (you may have to do this in batches), then rinse them in cold water. Combine the wine, scallions, and ginger slices in a large bowl and add the crabs. For the dipping sauce, combine the minced ginger with the soy sauce, vinegar, sesame oil, and sugar and stir to blend. Let sit for about 30 minutes.
- Put about an inch of water in a steamer, wok, or roasting pan. Place the crabs on a plate and put the plate in the steamer or on a rack in a wok or other pan. Cover and bring to a boil, then steam for 5 to 10 minutes, until hot. Garnish the crabs if you like and serve with the dipping sauce.
STEAMED SEAFOOD BUNS WITH SOY DIPPING SAUCE

- In a food processor, pulse seafood until mixture is well chopped, but not pureed. Transfer to a bowl. Separate dough into individual sections. Flatten each roll. Place 1 tablespoon of the mixture in center of the dough. Gather edges and press to seal. Place buns in a steamer and let cook for 8 to 10 minutes until the dough has puffed up and is cooked through.
- To make the dipping sauce, combine the soy sauce and vinegar. Serve with the steamed buns.
STEAMED BLUE CRABS WITH BLACK GINGER DIPPING SAUCE
Steps:
- Bring 1 1/2 inches water to a boil in pot. Add cilantro stems, then carefully add half of crabs using tongs and return to a boil. Cook, covered with lid, 8 minutes (for 1/4-pound crabs) to 10 minutes (for 1/3-pound crabs) from time they enter water. (Break shell of 1 claw to check for doneness; crabmeat should be opaque.) Transfer crabs with long-handled tongs to a large platter, reserving cooking liquid in pot, and keep warm, loosely covered with foil. Cook remaining crabs in same manner.
- While crabs cook, stir together ginger (to taste), soy sauce, sugar, water, vinegar, and salt in a small bowl until sugar and salt are dissolved.
- If necessary, dip crabs in cooking liquid to remove any external residue, then transfer to another large platter. Serve crabs hot, with dipping sauce.

CRAB LEGS WITH GARLIC BUTTER SAUCE
I ended up getting some snow crab legs on sale at the market. I wanted something a little different from plain steamed, boiled, or grilled crab legs, so I ended up throwing a few things together to make this awesome crab leg dish. Enjoy! This would be great with shrimp as well.

- Take the crabs from the bag you brought them home in and lay them on a tray. Place the tray in the freezer and leave them for 10 minutes - this puts the crabs to sleep. (Don't leave them in the freezer for longer than 10 minutes, or they will be frozen.) Kill the crabs by pushing the sharp, slender blade of a boning knife, or a sharp skewer, through the face into the brain. Scrub the crabs with a clean kitchen brush under running water, then put them back-side down in the sink. Lift the “apron” at the base of the bottom shell (it’s long and slender on males, wide and bell-shaped on females) and pull it off. Turn the crab over. Holding down the claws with your left hand (if you’re right-handed), grasp the side of the top shell with your right hand and pull it up and away from the body to expose the insides. Set the top shells aside, placing them upside-down so the liquid and soft parts stay inside. From the body, remove the feathery gills, the intestines (they’re white and squiggly) and
- Lay the body pieces in one layer on a large heat-proof platter, and the back shells on another platter. Pour some water into the base of a tiered steamer, or in a wok with a low rack with feet, and place the steamer or wok over a high flame. When the water boils, place the dish of crabs in the steamer or wok, cover with the lid and cook over a high flame for 10-12 minutes (you may need to steam them in batches). Larger crabs should be steamed for 15 to 20 minutes (or longer, depending on the size).
- While the crabs are steaming, make the dipping sauce. Finely mince the garlic and put it in a small pan with the cooking oil. Set the pan over a low-medium flame and cook until the garlic is pale-medium golden; do not let the garlic get too dark, or it will taste bitter. Divide the soy sauce between four to six individual dipping bowls and pour the oil into each dish, making sure to distribute the garlic evenly. Serve the steamed crabs with the dipping sauce.
