From The Ultimate Rice Cooker Cookbook. The authors call for a 6 cup rice cooker, I've had no problems with my 3 cup model. Serve this as a main dish for 4, or a side dish for 6.

2 cups medium grain white rice
cooking spray
1 cup Chinese sausage, thinly sliced on the diagonal
1/2 cup green onion, thinly sliced
2 3/4 cups water
1/4 cup cilantro leaf, for garnish
2 tablespoons black sesame seeds, for garnish

Steps:

  • Rinse the rice well in a fine strainer.
  • Coat the rice bowl with cooking spray.
  • Add the drained rice, sausage, and onions to the rice bowl.
  • Add the water, stir just to combine.
  • Cook on the regular white rice cycle.
  • When the machine switches to keep warm, let it steam for 15 minutes.
  • Fluff the rice with a plastic rice paddle, or wooden spoon.
  • Place in a serving dish, and garnish with the cilantro and the sesame seeds.

Three ingredients, and your rice cooker does the work. This is a good lunch or a even a light dinner. This is about as simple as a recipe gets. This is a low cost and basic meal here in Thailand, and is is very good.

dry rice, amount is up to you
water as needed
2-4 chinese sausage links

Steps:

  • 1. Rinse the rice and add to your rice cooker. Add water per your favored way, either measuring compared to the amount of rice, or using the 1 knuckle above your fingertip of water above the rice. My wife used a Jasmine rice rice that has diced dried vegetables in it for this.
  • 2. Rinse off the Chinese sausage links and place in the water on top of the rice. This will flavor the rice slightly and cook the sausages perfectly. Switch the ricer cooker to Cook.
  • 3. When the rice cooker switches to Warm, the rice will be cooked and the sausage perfectly steamed.
  • 4. Scoop some rice onto a place, and cut the sausages about 1/4 inch thick and place on the side of the rice. As easy as that.

This is home-style Chinese cooking that is easy and tasty. Get the Chinese sausage (Larp Chong) from a Chinese grocery store. The sausage gives the flavor to the chicken therefore it's a must in this recipe.

2 lbs chicken breasts or 2 lbs chicken tenders
2 teaspoons soy sauce
1 teaspoon sugar
1 teaspoon salt
1 tablespoon cornstarch
1 teaspoon sherry wine
1/2 teaspoon ginger juice, fresh squeezed
4 dried mushrooms, soaked
4 Chinese sausage, thinly sliced (Larp Chong)

Steps:

  • Chop chicken into 1 1/2 to 2 inch pieces.
  • In a large bowl, mix chicken with soy sauce, sugar, salt, cornstarch, sherry wine, and ginger juice.
  • Remove stems from mushrooms that have been soaked and softened. Slice into long pieces.
  • Stir mushrooms and larp chong into chicken.
  • Put mixture into a 9 inch glass pie plate.
  • Steam over boiling water for 25 minutes or cover with plastic wrap and microwave on high power for 13 - 16 minutes.
  • Serve with steamed white rice.

  • Let's wash the raw rice grains fist. Fill a pot with the rice and cold water to cover. Use your hands to swish the rice grains, loosening any extra starch and dirt. Rice (like beans) is a raw ingredient and it is important to wash and rinse! Washing also rids the rice of extra starch, which will give us light, fluffy, airy rice - not heavy, sticky and starchy. Tip the pot and carefully pour out the water. Repeat two more times. Drain as much water as possible from the pot.
  • In a small saucepan, add in the oil, garlic and shallot. Turn heat to low and let the garlic and shallot cook slowly until they begin to brown but not burn. Use a slotted spoon and remove the shallots and garlic and discard, leaving the flavored oil. Add remaining ingredients and simmer until thickened, about 2 minutes.
