PAN-SEARED STEAKS WITH WORCESTERSHIRE AND BUTTER SAUCE



Pan-Seared Steaks With Worcestershire And Butter Sauce image

Shallots with melted butter, Dijon mustard, and tangy worcestershire sauce make a luscious topping for a nice, thick steak.

Number Of Ingredients 10

4 beef steaks (8 ounce each), 1 to 1 1/4-inches thick, fat trimmed
salt and black pepper, to taste
2 tablespoons vegetable oil, divided use
2 shallots, minced
1 1/2 cup low-sodium chicken broth
1 tablespoon Worcestershire sauce
1/2 teaspoon Dijon mustard
3 tablespoons cold unsalted butter, cut into 1-tablespoon sized pieces
1 tablespoon minced fresh parsley
salt and black pepper, as needed

Steps:

  • Dry the steaks with paper toweling and season liberally with salt and pepper. Set aside. Heat half of the oil in a large, heavy skillet over medium-high heat. When hot, add the steaks and brown on one side for 4 minutes. Turn the steaks and let cook for 4-6 minutes or until desired doneness. Remove the steaks to a plate and lightly cover with foil. Let the steaks rest for 5 minutes. Add the remaining oil to the skillet. When hot, add the shallots and cook, stirring frequently, until soft, about 2 minutes. Add the broth to the skillet and stir, scraping up any browned bits on the bottom of the pan. Bring to a simmer and let cook for 5 minutes. Add the Worcestershire sauce, mustard, and any juices accumulated from the resting steaks. Stir well. Reduce the heat to low. Add the butter one tablespoon at a time, stirring well after each addition. Remove the pan from the heat. Stir in the parsley. Taste the sauce and adjust the seasoning as needed with salt and pepper. Serve the sauce over the steaks.

3 tablespoons vegetable oil
1 1 1/2-pound flank, sirloin, or skirt steak
Coarse salt and ground pepper
1 medium onion, halved and thinly sliced
1 1/2 tablespoons Worcestershire sauce
1 tablespoon butter
1/4 cup chopped parsley

Steps:

  • In a large skillet over medium-high, heat a tablespoon vegetable oil. Season a steak with saltand pepper, then cook until dark brown andcrusty, 3 to 5 minutes per side for medium-rare(depending on thickness).
  • While the steak rests, wipe the pan clean and heat 2 teaspoons oil over medium-high. Add onion, and cook until tender. Add Worcestershire sauce and tablespoon butter and toss to coat. Thinly slice the steak across the grain and top with chopped parsley.

2 beef steaks (In NewZealand I use either fillet or scotch fillet steaks)
2 garlic cloves (crushed)
60 g butter or 1 -2 tablespoon oil
salt & pepper
1 tablespoon brandy
2 tablespoons Worcestershire sauce

Steps:

  • Heat butter or oil in a non stick pan.
  • Flatten steaks slightly and spread with crushed garlic, salt and pepper on both sides.
  • Place steaks in hot pan and cook quickly to desired taste turning only once.
  • Lift out steaks when ready and keep handy.
  • Quickly add the brandy and worcestershire sauce, mix well and bring to boil.
  • Return steaks to pan and turn in the sauce.
  • Serve at once.

1/4 cup flour

1/2 cup minced onion
2 cups water

Steps:

  • Cover the steak with Worcestershire sauce; let sit for 5 minutes.
  • Mix the flour with salt, pepper, and garlic powder.
  • Heat oil in 12 inch skillet.
  • Remove steaks from Worcestershire sauce; dip in flour mixture.
  • Brown steaks on both sides for 6 minutes.
  • Add onions; cook 2 minutes.
  • Add water; bring to a boil.
  • Reduce heat; cover and simmer for 10 minutes.
