- In a large skillet, saute the green pepper and onion in oil until tender. Stir in potatoes. Reduce heat; cover and cook over low heat for 10 minutes or until the potatoes are heated through, stirring occasionally. , Add steak, garlic powder, salt and pepper. Sprinkle with cheese. Cover and cook on low 5 minutes longer or until heated through and cheese is melted; keep warm. Prepare eggs as desired. Divide hash among four plates and top with an egg.

POTATO AND VEGETABLE HASH
My mom and I stumbled upon this concoction on the day after Christmas. I had received a french fry cutter ($20 at Bed Bath & Beyond), and we were experimenting with it. Before long, we figured out how to make little cubed potatoes, and then started cubing every veggie we had in the fridge. When we were done, we had a huge plate of cubed food and we felt bad throwing it all out. So we made the obvious decision - fry it all up in butter! It ended up tasting amazing, and I made it again to bring to a New Years Eve dinner party the next week. It received rave reviews!

Steps:
- Chop the potatoes into 1/2 inch cubes.
- Chop the celery, onion, and carrots into 1/4 inch cubes.
- Mince the garlic.
- Melt half a stick of butter in a large frying pan, over medium-high heat.
- Place potatoes, celery, onion, carrots, nutmeg, salt, and pepper into the frying pan.
- Cook vegetables, stirring frequently, for 10 minutes over medium-high heat.
- Add half a stick of butter to the pan, along with the garlic and 1/4 cup of the brown sugar.
- Cook for another 7-8 minutes, stirring frequently.
- Add the remaining half a stick of butter and 1/4 cup brown sugar, and cook for another 5-7 minutes.
- It is done when the sweet potatoes are crispy on the outside, and soft on the inside.

STEAK TIPS IN THE OVEN
Steak tips in the oven with a very flavorful steak tip marinade that is best suited for a hearty winter dish but can be enjoyed anytime. Feel free to experiment with the ingredients because I don't think you can really go wrong.

- Whisk soy sauce, olive oil, balsamic vinegar, mustard, maple syrup, molasses, sesame oil, cinnamon, cloves, salt, and pepper together in a large glass or ceramic bowl. Add steak tips and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 6 to 24 hours.
- Preheat the oven to 425 degrees F (220 degrees C).
- Remove steak tips from the marinade and shake off excess. Discard the remaining marinade. Put steak tips into a baking dish and fill the bottom of the dish with beef broth.
- Bake in the preheated oven until steak tips are beginning to firm and are hot and slightly pink in the center, about 25 minutes, flipping halfway. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

- Mashed potatoes. If you’ve got steaks in your freezer, this is the perfect opportunity to prepare a side serving of mashed potatoes. Mashed potatoes are such an easy dish to make, and they go well with everything from steak to fish and poultry.
- Sautéed vegetables. A healthy side dish is often best served alongside steak, and sautéed vegetables are a good option for this. Choose whatever vegetables you like best, like peas, broccoli, carrots, sweet potato, peppers, and onions.
- Roasted potatoes. Potatoes and steaks go together really well, so it’s no surprise that roast potatoes are a popular side dish for a steak dinner. You can serve them hot or cold, depending on the time of year.
- Creamed Spinach. This is one of my favourite side dishes! I love the rich and smooth taste that it adds to a meal, and I think that a portion of this will work really well with a serving of steak.

- Sweet Potato Fries. I’m a huge fan of sweet potato fries. They’re simple to make, easy on the stomach, and go really well with a steak. Just cut up a whole new potato (or two) into chips, coat them in seasoned flour and bake at 180°C for 25-30 minutes until golden brown and crispy.
- Roasted Zucchini and Squash. Roasting vegetables at the same time is a brilliant way to cook them, because it keeps all the flavours in one place. If you do decide to do this, make sure that you’ve prepared your vegetable beforehand, so that they’re ready to go when you put them in the oven.
- Potato Salad. When it comes to potato salad, I like to serve a big bowl of it alongside my steak! It’s one of those meals that’s guaranteed to be a crowd pleaser.
- Arugula Salad. Arugula is one of my favourite salad vegetables, so I always try to include a little in my salad when I’m preparing a meal. It works really well with steak, and has a fresh, peppery flavour that contrasts really well with the meat.
