This is the steak salad of your dreams! It's loaded with a juicy steak, your favorite veggies, and a creamy balsamic vinaigrette. It makes a delicious healthy lunch or dinner salad!

10 ounce grilling steak (boneless prime rib)
½ teaspoon EACH: salt and pepper
1 teaspoon avocado oil
4 ounces arugula
1 cup cherry tomatoes (cut in half)
½ English cucumber (diced)
½ avocado (sliced)
¼ cup thinly sliced red onions
½ tablespoon EACH: grainy mustard, dijon mustard, and balsamic vinegar
2 tablespoons olive oil
A pinch of salt and pepper

Steps:

  • Take the steak out of your fridge and evenly coat both sides with the salt and pepper. Add all the salad ingredients to a salad bowl.
  • Heat a cast iron or heavy-bottomed pan over high heat. Drizzle the avocado oil over both sides of the steak. When the pan starts to smoke, add the steak and let it cook undisturbed for 2 minutes. Flip the steak over and let it cook for 2-3 minutes more. Transfer the steak to a cutting board and let it rest.
  • While the steak is resting, whisk the salad dressing ingredients in a small bowl. Thin the dressing with up to a tablespoon of water, as needed. Pour the dressing over the salad and toss.
  • Thinly slice the steak across the grain and serve it over the salad.

Reheating a leftover steak will almost inevitably lead to dry, disappointing results. Cold steak, on the other hand, when treated right, can be absolutely delicious. Take this cold steak and cucumber salad, for instance. Inspired by Japanese tataki, it's dressed in a ponzu vinaigrette made with whole grain mustard and olive oil, for a great East-West twist on a classic dish.

1/4 cup (60ml) homemade or store-bought ponzu
1 tablespoon finely minced shallot (about 1/2 ounce; 15g)
1 tablespoon (15ml) whole grain mustard
1/4 cup (60ml) extra-virgin olive oil
Small dab prepared wasabi (optional)
To Serve:
1/2 pound (225g) leftover steak, sliced as thinly as possible with a sharp knife (see note)
1 small Asian cucumber, thinly sliced
2 scallions, thinly sliced

  • For the Dressing: Combine ponzu, shallot, mustard, oil, and wasabi (if using) in a bowl and whisk thoroughly.

½ medium red onion, thinly sliced
10.5 oz cherry tomato, 1 package
3 tablespoons olive oil, divided
kosher salt, to taste
ground black pepper, to taste
2 teaspoons shallot, minced
1 tablespoon dijon mustard
½ teaspoon worcestershire sauce
1 teaspoon honey
2 tablespoons extra virgin olive oil
¼ cup red wine vinegar
1.25 lb boneless new york strip steak, about 1¼ inches (3 cm) thick
1 head red leaf lettuce, washed, dried, and cut into ½-inch (1.25 cm) pieces
½ cup walnuts, toasted, chopped
¼ cup gorgonzola cheese, crumbled

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • Spread the sliced onion on half of the baking sheet and arrange tomatoes on the other half. Drizzle each side with 1 tablespoon olive oil and season with salt and pepper. Toss to coat.
  • Roast in the oven for 10-15 minutes, or until the onion is caramelized and the tomatoes are browned in spots and just beginning to burst. Remove from oven and let cool.
  • In a small bowl, whisk together the shallot, Dijon mustard, Worcestershire sauce, honey, extra-virgin olive oil, red wine vinegar, salt, and pepper. Refrigerate until ready to use.
  • Liberally season the steak all over with salt and pepper.
  • Heat a cast-iron skillet over medium-high heat. Add the remaining tablespoon of olive oil to the hot skillet. When the oil is smoking, add the steak to the pan. Sear for 5 minutes, or until a deep golden brown crust forms. Flip the steak and cook another 5 minutes on the other side. Sear the sides of the steak until golden brown, another 3-4 minutes total.
  • Transfer the pan with the steak to the preheated oven for about 5 minutes, or until an instant-read thermometer inserted into the center of the steak reads 125-130˚F (51-54˚C) for medium-rare. Remove the steak from the oven and let rest for 10 minutes before slicing.
  • Add the lettuce to a large bowl. Add the roasted tomatoes, roasted onion, walnuts, Gorgonzola, and sliced steak. Toss well. Divide the salad between serving bowl and drizzle over the dressing.

2 pounds boneless sirloin, 2" thick
Salt and pepper
3/4 pound new potatoes, cooked and quartered
12 oz. hearts of palm, sliced 1" thick
1 small red onion, peeled and sliced
1 small red bell pepper, sliced in slivers
1 small green pepper, sliced in slivers
4 tbls. chopped fresh chives
3 tbls. chopped fresh parsley
Romaine lettuce leaves
Snow peas, sliced
Mushrooms and cherry tomatoes as garnish
Mustard Vinaigrette Dressing
1 egg, beaten
1/3 cup olive oil
2 tsp. Dijon mustard
1-1/2 tsp. lemon juice
3 tbls. Tarragon vinegar
1 tsp. Worcestershire sauce
1 tsp. salt
Fresh pepper
Preheat the broiler. Season steak with salt and pepper and broil to desired doneness. Cool and slice thinly into bite-size pieces.
Combine with salad ingredients except Romaine lettuce and garnishes. Toss gently.
Combine dressing ingredients in a container with a tightly fitting lid and shake well to blend, or, in a food processor.
Pour dressing over salad and refrigerate for 3-4 hours. Serve over lettuce with snow peas, mushrooms and tomatoes.

⅓ cup olive oil
3 tablespoons red wine vinegar

1 clove garlic, minced

8 cups romaine lettuce - rinsed, dried, and torn into bite-size pieces

Steps:

  • Preheat grill for high heat.
  • Lightly oil grate. Place steak on grill and cook for 3 to 5 minutes per side or until desired doneness is reached. Remove from heat and let sit until cool enough to handle. Slice steak into bite size pieces.
  • In a small bowl, whisk together the olive oil, vinegar, lemon juice, garlic, salt, pepper and Worcestershire sauce. Mix in the cheese. Cover and place dressing in refrigerator.
  • Onto chilled plates arrange the lettuce, tomato, pepper, onion and olives. Top with steak and drizzle with dressing. Serve with crusty grilled French bread. Enjoy!

This is a really easy quick dish. A creamy spicy dressing, warm steak and I like a peppery base such as Arugula or Watercress. I am fond of both so I try to pick which looks best when I am at the store. Using peppery greens really works best for this and paired with the barley, it balances out all the flavors. Serve this with some fresh tomato slices, and a hearty slice of beer bread and you have a great dinner.

1 lb skirt steak
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon olive oil
1 tablespoon olive oil, to saute
4 teaspoons Dijon mustard
2 tablespoons cider vinegar
8 tablespoons heavy cream
1 1/4 inches of fresh grated horseradish (yes, fresh grated is a must for this dish, jar horseradish will work but doesn't have the same flavo)
3 tablespoons fresh oregano
salt
pepper
6 cups arugula (Watercress is another option which works well)
2 cups pearl barley, cooked (I use the quick cooking or instant which only takes a few minutes, also cook in beef stock to carry )
2 large shallots, thin sliced
1 tablespoon olive oil
salt
pepper

Steps:

  • Steak -- Just rub the steak with the olive oil on both sides and then season well with the salt, pepper and oregano. Place in a large baggie and let it marinade anywhere from a couple of hours or all day if you have the time. The longer -- the better.
  • Remove the steak from the refrigerator and let it come to room temperature for 20-30 minutes before grilling. Now you can grill this inside on a grill pan or outside which is what I prefer. It can even be done in a cast iron or other saute pan if that is all you have.
  • Dressing -- As the steak comes to room temp, make the dressing. In a small bowl mix all the ingredients and refrigerate.
  • Barley -- Simply prepare according to package directions. Set to the side and let it cool.
  • Grilling -- However you decide to cook your steak, grill or cook until medium rare (which is what I like) but cook it to your liking. Let the steak rest 5-10 minutes before slicing. Slice 4-5 pieces per person. As you prepare the steak, get your salad ready.
  • Salad -- In a large bowl add the arugula, cooled barley (it doesn't have to be cold, just room temp or even slightly warm is fine) and shallots. Right before you plate the salad, toss lightly with the olive oil, salt and pepper.
  • Plating -- Put a nice serving of the lightly dressed salad with barley and shallots on each plate topped with the steak slices and then dress with the horseradish mustard vinaigrette. ENJOY!

I put this together for dinner tonight, and it was so good! It was very hearty and filling, with bread and cheese as an accompaniment. Amounts are just estimated guidelines. Use a good quality Dijon mustard, ideally a strong, but not too vinegary, mustard. Prep time is an estimated time for all the chopping etc listed in the ingredients. You can prepare the vegetables, steak, and vinaigrette in advance and refrigerate until ready to use--I'd say use the same day, though, or there will be some loss in quality.

1 lb sirloin steak
2 -4 tablespoons olive oil

1/2 large shallot, minced finely

Steps:

  • Brush steak with olive oil and season to taste with salt and pepper. Grill over medium-high heat to a little rarer than desired doneness (around 10-15 minutes for rare). Set steak aside.
  • In a pint size mason jar (or other non-reactive container with a tight lid), combine shallots and red wine vinegar. Let sit for 5-10 minutes, then add chives, salt & pepper to taste, and mustard. Pour in olive oil, close lid, and shake vigorously until emulsified. Taste and correct as needed.
  • Cut steak into bite-size pieces.
  • To assemble salad, place 2-3 cups of salad greens on each of 4 large plates. Place cucumber, bell pepper, artichoke hearts, and red onion rings on top. Divide steak among salads. Top with chopped tomato. If using potatoes, place around edge of salad. Drizzle vinaigrette over salad. If desired, top with blue cheese crumbles.

  • Pat steak dry with paper towels and place on a clean plate. Season very generously all over with salt and pepper. (Think four-fingered pinches of salt—rich proteins like steak need a lot more salt than you might think.) Let it sit at room temperature while you prep your other salad components, at least an hour if possible. (Don't worry: It's safe, and a room-temperature steak will cook more evenly than it will straight out of the fridge.)
  • Salad dressing time! Peel and finely chop 1 shallot and transfer to a medium bowl. Add 1 Tbsp. mustard and 1 Tbsp. vinegar and whisk to combine. Here comes the fun part: Whisking constantly, slowly stream in 5 Tbsp. olive oil until dressing is thick and emulsified. The word "slowly" is key here—if you add the oil all at once, you won't get the creamy, nicely-incorporated vinaigrette you're after. Whisk in 1 Tbsp. water to thin the dressing out a bit. Season with salt to taste, and add another splash of vinegar if you like—it should taste good and punchy.
  • Prep your other salad ingredients. Slice 1 pint cherry tomatoes in half and transfer to a medium bowl. Slice 2 cucumbers into thin coins and transfer to bowl with tomatoes. Separate lettuce leaves and arrange on a large platter. Cover the lettuce with damp paper towels and chill in the fridge until you’re ready to assemble.
  • Heat a dry cast-iron skillet over medium-high. Pat steak dry again (the salt will have drawn out some moisture). Seriously: You want the meat to be as dry as possible, which is key to getting the handsome, crusty sear you're after. Rub steak with remaining 1 Tbsp. oil. When we're searing things like steak or chops, we like to oil the surface of the meat rather than the surface of the pan—this allows us to use less oil, and also cuts down on (the inevitable) smoke that comes with this kind of cooking. Speaking of which, this is a good time to turn on the vent above your stove, open a window, and/or get ready to (temporarily!!) deactivate your smoke detector .
