Here's a fairly simple recipe for something different to do with cubed steak. It involves breading meat with bread crumbs and grated Parmesan cheese, then combining it with your favorite spaghetti sauce. Serve over pasta with additional cheese. A real family pleaser!

1 cup dry bread crumbs
½ cup grated Parmesan cheese
salt and pepper to taste
2 pounds cube steak
¼ cup vegetable oil for frying
1 (32 ounce) jar spaghetti sauce

Steps:

  • In a medium bowl, combine the bread crumbs, Parmesan cheese, salt, and pepper. Dredge the meat in the crumbs.
  • Heat oil in a large skillet over medium-high heat. Place the breaded meat in the oil, and saute for 5 to 10 minutes, or until well browned on both sides.
  • Drain excess oil, and pour in the spaghetti sauce. Reduce heat to low, and simmer for 30 minutes.

2 New York Strip Steaks ((1.5 inches thick))
2 teaspoons Signature Beef Seasoning
3 Tablespoons mayonnaise
¼ cup grated Parmesan cheese
2 cloves garlic (minced)
1 teaspoon dried basil
½ teaspoon fresh ground black pepper

Steps:

  • Turn on the smoker. Preheat your smoker to 225 degrees F.
  • Prep the steaks. Season the New York strip steaks on all sides with Hey Grill Hey Signature Beef Seasoning (or equal parts salt and pepper).
  • Make the Parmesan crust mixture. In a small bowl, combine the mayo, Parmesan, garlic, basil, and black pepper and set aside.
  • Smoke the steaks. Place steaks on smoker, close the lid, and cook until the internal temperature of the steaks are 10 degrees away from your target temperature. (Pull at 115 degrees F for rare, 125 for med rare, 135 for medium, 145 for medium-well, and 150 for well done).
  • Preheat your oven. When your steak is nearly to temperature specified above, set your oven to High Broil. Place a cast iron skillet on the very top rack of your oven to preheat. It needs to preheat for about 8-10 minutes.
  • Add the Parmesan crust. Remove the steaks from the grill and place them on a plate. Top each steak with half of the Parmesan mixture. Carefully place the steaks onto the preheated cast iron skillet and slide them under the broiler.
  • Broil the Parmesan crusted steaks. Broil for about 2-3 minutes, or until the Parmesan crust has melted and the top of the cheese is bubbly and browned. Your steak should be a few degrees under your final desired internal temperature, (125 degrees F for rare, 135 for medium rare, 145 for medium, 155 for medium well, and 160 for well done).
  • Rest and serve. Rest the steaks for 5-10 minutes. The carry over cooking and heat from the skillet should finish the cooking process while the steak rests in the skillet for 5-10 minutes. Remove the steaks from the skillet and serve.

Steps:

  • Blend garlic, 2 teaspoons oil and black pepper in small food processor (or mash on plate with back of fork) to form paste. Pat steaks dry with paper towels. Rub garlic paste over both sides of steaks. Let stand at room temperature 30 minutes or refrigerate up to 8 hours. Prepare barbecue (medium-high heat). Grill steaks to desired doneness, about 9 minutes per side for medium-rare. Transfer steaks to cutting board. Let stand 5 minutes. Cut steaks on slight angle into 1/4-inch-thick slices.

2 well-trimed beef t-bone or porterhouse steaks cut 1 inch
1/4 c grated parmesan cheese
2 Tbsp olive oil, light
2 Tbsp red wine vinegar
1 red bell pepper
1 yellow bell pepper
1 large red onion, cut 1/2 inch slice
SEASONING
1 Tbsp crushed garlic
2 tsp dried basil
1 tsp pepper

Steps:

  • 1. In a small bowl, combine seasoning ingredients: mix well. Remove four teaspoons of the seasoning mix and press into both sides of steak.
  • 2. Add cheese, oil and vinegar to remaining seasoning mixture. Mix well; set aside.
  • 3. Place steak in center of grill - over medium ash-covered coals. Arrange vegetables around steak. Grill steak uncovered 14 to 16 minutes for medium doneness, turning occasionally. Grill peppers 12 to 15 minutes and onion 15 to 20 minutes or until tender, turning once. Brush vegetables with reserved cheese mixture during the last 10 minutes of grilling.
  • 4. Season steaks with salt, as desired. Remove bone and carve steaks crosswise into thick slices. Serve with vegetables.

For Salad:
5 oz (about 6 cups) baby arugula
2 tbsp plus more for serving olive oil
to taste salt and pepper
½ cup (1 oz), shaved parmesan cheese
For Steak:
for the grill Vegetable Oil
2 (1½ inch thick), (about 1¾ lbs) sirloin steaks
2 cut into wedges, for serving lemons
for serving olive oil

Steps:

  • In a bowl, toss the arugula with 2 tablespoons of olive oil. Sprinkle generously with salt and pepper and toss again. Mix in the Parmesan Cheese. Divide among four plates.
  • For charcoal grills, fill a grill chimney with charcoal and light it. When the coals are hot (they should be covered with a layer of fine gray ash) empty the coals into the grill and push them to one side of the grill to make higher heat and lower heat cooking zones. Set the grate in place and cover the grill. Preheat the grate for 5 minutes.
  • For gas grills, heat one burner to high and one to low. Fold a small piece of paper towel to make a 2-inch square, and pour a few tablespoons of oil into a shallow bowl. With tongs, dip the square into the oil, and brush the grates.
  • Brush the steaks with olive oil and sprinkle them on both sides with salt and pepper. Place them on the hot side of the grill and cook for 3 to 4 minutes until browned and slightly charred on one side.
  • Turn the steaks over and continue to grill 3 minutes longer, or until well browned. If the steaks aren't quite cooked to desired doneness at this point, move them to the cooler side of the grill to finish cooking. Cook to an internal temperature of 135 degrees F for medium-rare, 140 degrees F for medium, or 150 degrees F for well done.
  • Transfer the steaks to a cutting board or platter, tent loosely with foil and let rest 5 minutes before slicing.
  • Slice the steaks and divide the slices between the plates, placing them on top of the arugula. Drizzle with olive oil and squeeze lemon juice over the top. Sprinkle with more salt and pepper, if desired.

1 (2 3/4 lb) porterhouse steaks, 2-3/4 to 3 inch thick
1/4 cup olive oil
7 large garlic cloves, minced
1 tablespoon fresh thyme, chopped
1 tablespoon salt
2 teaspoons ground black pepper
1 teaspoon fresh rosemary, chopped
3 tablespoons butter, room temperature
2 teaspoons grated parmesan cheese
1 teaspoon paprika
1/2 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground black pepper
1/4 teaspoon hot pepper sauce

Steps:

  • Mix all Paprika-Parmesan Butter ingredients in small bowl until blended.(Can be made 2 days ahead.) Use at room temperature.
  • Place steak in glass baking dish.
  • Whisk oil and next 5 ingredients in small bowl to blend. Pour half of marinade over steak. Turn steak over; pour remaining marinade over steak. Cover and chill at least 2 hours and up to 1 day, turning occasionally.
  • Prepare grill, (medium heat).
  • Remove steak from marinade; shake off excess.
  • Place steak on grill; cover grill.
  • Grill steak to desired doneness,(until instant-read thermometer inserted into center of steak registers 115 F to 120 F for rare,about 15 minutes per side,or 125 F to 130 F for medium-rare, about 18 minutes per side),occasionally moving steak to cooler part of rack if cooking too quickly.
  • Transfer steak to platter; cover to keep warm. Let stand 5 minutes.
  • Using sharp knife, cut meat away from bone. Cut each meat section into 1/3-inch-thick slices.
  • Spread Paprika-Parmesan Butter over top of slices and serve.
