Steps:
- Preheat the oven to 400˚F (200˚C).
- Cut the flank steak against the grain into ⅛-inch (3-mm) thick slices.
- In a large skillet over medium heat, heat the olive oil, until shimmering. Add the steak, paprika, garlic powder, ½ teaspoon of pepper, 1 teaspoon of salt, and the Worcestershire sauce.
- Mix to coat the meat with the spices and cook until the meat is cooked through, about 3 minutes. Transfer the meat a bowl, leaving the juices in the pan. Cover and set aside until ready to use.
- Add the butter to the pan with the meat juices. Add the onions and cook until tender and shiny, about 10 minutes. Add the green bell peppers and the remaining ½ teaspoon of pepper and teaspoon of salt, and cook until the onions and peppers are caramelized, about 10 minutes.
- Cut the top off of a red bell pepper. Cut around the seed pod, then pull it out of the pepper. Remove any remaining seeds. Repeat with the rest of the peppers.
- Cut 9 of the provolone slices in half.
- Place the peppers in a 9x13-inch (23x33-cm) baking dish, cut side up. Scoop a bit of steak filling into each pepper, followed by the peppers and onions, then 3 half slices of provolone. Repeat with the rest of the steak, then the rest of the peppers and onions. Place a whole slice of provolone on top of each pepper.
- Bake for 30 minutes, until the skin of the peppers is shriveling, and the cheese is golden.
- Top with parsley.
- Enjoy!

CHEESESTEAK STUFFED PEPPERS RECIPE
Steps:
- Gather ingredients.
- Cut four of the peppers in half lengthwise. Remove the seeds and ribs. Set aside.
- Remove the seeds and ribs from the fifth pepper, and chop it coarsely. Set aside.
- In a large skillet or saute pan, melt the butter with 1 tablespoon of vegetable oil. Add the sliced onions and cook over medium heat, stirring frequently, until browned - about 15 minutes.
- Add the chopped peppers and mushrooms, if using. Continue cooking until mushrooms are golden and the peppers are tender. Remove to a plate, and set aside.
- If necessary, add another tablespoon of oil to the pan, and cook the shaved steak, stirring, until evenly browned.
- Add the onion and pepper mixture back to the pan. Season the mixture with salt and pepper and the Worcestershire sauce.
- Heat the oven to 400 F. Line a 9 x 13 x 2-inch baking pan with foil, or spray with nonstick cooking spray.
- Fill a large saucepan, Dutch oven, or deep saute pan with enough salted water to cover the peppers (don't add them yet). Bring the water to a boil, and then add the pepper halves. Cover and simmer for about 4 minutes, or until just tender but not too soft.
- Carefully drain the peppers and arrange them -- cut side up -- in the prepared baking dish.
- Fill each pepper with the steak and onion mixture. Top each filled bell pepper with a generous amount of shredded cheese.
- Bake for about 10 to 12 minutes or until the cheese is melted and the filling is hot. For a cheesier topping, add more cheese just before the peppers are done baking.

Steps:
- 1. Saute onions and garlic in the olive oil until the onions are translucent. Add the steak and a little salt and pepper and cook until nearly done. When there is a little pink left in the meat, add the mushrooms and cook for about 5 more minutes.
- 2. Meanwhile, remove the tops, ribs, and seeds from the green peppers, and blanch the green peppers in a pot of boiling water for about 5 minutes. Remove with tongs and place upside down on a drying rack with a towel underneath.
- 3. Spray the inside of a 8 X 8 baking pan or a large bread pan with nonstick cooking spray. Place the peppers in the pan (openings facing up). Tear 4 of the pieces of cheese into strip and place inside each pepper. Then fill them with the steak and onion mixture and place another slice of cheese on top.
- 4. Cover the pan with tented aluminum foil and bake at 350F for 30 minutes. Then remove foil and bake about another 10 minutes, until cheese is slightly browned and bubbly. Enjoy!

CHEESESTEAK-STUFFED PEPPERS
This is a hearty, low-carb dish that can stand alone at meal time. It's loaded with protein and veggies, yet it's creamy and satisfying so you won't even miss the carbs! Feel free to substitute thinly sliced chicken breast for a leaner protein option and try other cheeses like smoked gouda or extra-sharp cheddar. -Erica Malerich, Pacific, Missouri
