"STARBUCKS" OAT FUDGE BARS

I am always tempted to buy these at Starbucks so when a friend brought these to a cookie exchange I was quite excited!

Number Of Ingredients 11

Ingredients

1 cup sugar
1 cup brown sugar
1 cup butter
2 eggs
2 cups flour
1 teaspoon baking soda
3 cups oats
1 cup sweetened condensed milk
2 cups chocolate chips
1/2 cup butter
1 teaspoon vanilla

Steps:

Cream butter, sugar and eggs.
Mix flour, soda and oats and add slowly to creamed mixture.
Spread 3/4 of this into 9x13 pan.
Melt remaining ingredients in a saucepan and pour over dough in pan.
Blob the remaining oat mixture on top.
Bake at 350° for 25 minutes.

1 cup all-purpose flour
2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup packed brown sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
1 large egg
1 cup semisweet chocolate morsel
1 cup white chocolate chips
1/2 cup chopped toffee pieces, such as almond rocca

Steps:

PREHEAT oven to 375°F Grease 9-inch-square baking pan.
COMBINE flour, baking soda and salt in small bowl. Beat sugar, butter and vanilla extract in large mixer bowl until creamy. Beat in egg; gradually beat in flour mixture. Stir in morsels and chopped toffee. Spread into prepared baking pan.
BAKE for 20 to 23 minutes. Remove pan to wire rack. Cool completely in pan on wire rack; refrigerate for 5 to 10 minutes or until chocolate is set. Cut into bars.

My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

Ingredients

1 cup unsalted butter
1 cup light brown sugar
1 egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
8 ounces white chocolate or milk chocolate, chopped into 1-inch squares
3/4 cup walnuts, coarsely chopped
3/4 cup dried cranberries, coarsely chopped

Steps:

Preheat the oven to 350 degrees F.
In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.
