MUJADARA (LENTILS AND RICE WITH CARAMELIZED ONIONS)

Mujadara is a classic Arabic recipe featuring cooked lentils and rice, caramelized onions, herbs and yogurt. It's a delicious vegetarian main dish! This version calls for brown rice instead of white (if you want to use white, see recipe notes). Recipe yields 4 generous servings.

4 medium cloves garlic, smashed and peeled
2 bay leaves
1 tablespoon ground cumin
1 3/4 teaspoons fine sea salt, divided
Freshly ground black pepper
5 cups water
1 cup brown* basmati rice (regular, not quick-cooking), rinsed and drained
1 cup regular brown or green lentils**, picked over for debris, rinsed and drained
1/3 cup extra-virgin olive oil
2 medium-to-large yellow onions, halved and thinly sliced
1/2 cup thinly sliced green onions (from 1 bunch), divided
1/2 cup chopped fresh cilantro or flat-leaf parsley, divided
Plain whole-milk or Greek yogurt, for serving
Spicy sauce, for serving (optional): shatta or zhoug or store-bought chili-garlic sauce or even sriracha

Steps:

  • In a large Dutch oven or soup pot, combine the garlic, bay leaves, cumin, 1 1/2 teaspoons of the salt and about 20 twists of freshly ground black pepper. Add the water and bring the mixture to a boil over medium-high heat.
  • Once boiling, stir in the rice and reduce the heat to medium. Cover and cook, stirring occasionally and adjusting the heat as necessary to maintain a controlled simmer, for 10 minutes.
  • Stir in the lentils and let the mixture return to a simmer. Cover again, reduce the heat to medium-low, and cook until the liquid is absorbed and the rice and lentils are tender, about 20 to 23 minutes.
  • Meanwhile, warm the olive oil in a large (12-inch) skillet over medium-high heat. When it's warm enough that a slice of onion sizzles on contact, add the remaining onions. Stir to combine.
  • Stir only every 3 minutes or so at first, then more often once the onions at the edges of the pan start browning. If the onions are browning before they have softened, dial down the heat to give them more time. Cook until the onions are deeply caramelized and starting to crisp at the edges, about 20 to 30 minutes. In the meantime, line a large plate or cutting board with a couple paper towels.
  • Using a slotted spoon or fish spatula, transfer the onions to the lined plate and spread them evenly across. Sprinkle the remaining 1/4 teaspoon salt over the onions. They'll crisp up as they cool.
  • When the lentils and rice are done cooking, drain off any excess water (if there is any) and return the mixture to the pot, off the heat. Lay a kitchen towel across the top of the pot to absorb steam, then cover the pot and let it rest for 10 minutes.
  • Remove the lid, discard the bay leaves, and smash the garlic cloves against the side of the pan with a fork. Add about 3/4ths of the green onions and cilantro, reserving the rest for garnish. Gently stir and fluff the rice with a fork. Season to taste with additional salt and pepper, if necessary.
  • Transfer the rice and lentil mixture to a large serving platter or bowl. Top with the caramelized onions and the remaining green onions and cilantro. Serve hot, warm or at room temperature, with yogurt and spicy sauce (optional) on the side.

2 tablespoons extra virgin olive oil
1 cup diced onion
2 teaspoons minced garlic
1 teaspoon minced ginger
1 cup uncooked basmati rice
1 cup uncooked red lentils
1½ cup fresh diced tomatoes
1½ teaspoons Garam Masala
2 tablespoons Thai Red Curry Paste
¼ cup diced fresh cilantro leaves, plus more for garnish
½ cup canned coconut milk
3 cups water
½ teaspoon kosher salt
Few grinds freshly cracked black pepper

Steps:

  • In a medium sauce pan with a tight fitting lid, heat oil over medium high heat.
  • Add onion, garlic and ginger and sauté for three minutes.
  • Add dry rice and dry lentils and sauté for two minutes.
  • Reduce heat to medium and add fresh tomato, garam masala and curry paste and stir and cook for one minute.
  • Add cilantro, coconut milk and water and raise heat to high.
  • Bring to a boil, cover and lower heat to low.
  • Cook covered for 20 minutes.
  • Remove from heat and add salt and pepper, stir and let sit covered for five minutes.
  • Serve with additional chopped cilantro.

4 cups cold water
2 teaspoons whole cumin seeds
3 cardamom pods, lightly crushed, black seeds reserved, pods discarded
1 teaspoon fennel seeds
1 cinnamon stick
12 black peppercorns
2 bay leaves
2 tablespoons unsalted butter, plus 3 tablespoons, cut into slices, optional
1 large red onion, peeled and finely diced
Kosher salt

Steps:

  • To wash or not to wash rice? In the case of basmati, no matter what my preparation is, I always wash it. It cleans out any small particles and it also rids the rice of any starch on the grain. This starch makes the rice gummier when cooked.
  • Preheat the oven to 250 degrees F.
  • In a medium bowl, add the rice and 4 cups of cold water. Soak the rice for 1/2 hour.
  • In a small bowl, add the cumin seeds, cardamom, fennel seeds, cinnamon, black peppercorns, and bay leaves and stir to combine. Turn the mixture out onto a baking sheet and put it in the center of the oven to lightly toast the spices and awaken the flavors, about 2 to 3 minutes. Remove the baking sheet from the oven and allow the spices to cool.
  • Heat a medium saute pan over medium heat and add the butter and the onion. Season with salt and cook until the onions are translucent but not brown, about 3 to 5 minutes. Stir in the spices. Drain the rice but reserve the soaking water. Stir in the rice and cook until you hear the rice crackling, about 2 minutes. Gently stir in the reserved soaking water. Season with a generous portion of salt and bring the liquid to a simmer over medium heat.
  • Cook the rice over medium-low heat, uncovered and undisturbed, for about 8 minutes. Take a fork (so as not to damage the rice) and flake a few grains off to taste for doneness. It may need to be cooked another 2 to 4 minutes. Remove from the heat and allow the rice to "rest" (as you would a roast beef) for 10 minutes before "forking" it gently into a serving bowl. Stir in 3 tablespoons of butter, if desired, and serve.

Steps:

  • Combine the veggies in a heavy frying pan.
  • Cook for about 5 minutes over low heat, stirring constantly, until the green onion wilts Add the lentils, chicken broth, and garlic.
  • Stir.
  • Bring to a boil over medium heat, then lower the heat, cover and simmer for 10 minutes.
  • Stir in the cayenne pepper and parsley.
  • Take care not to overcook, the lentils should have a crunch.

2 tablespoons olive oil
2 thinly sliced onions
Coarse salt and ground pepper
1 1/2 cups brown lentils
1 cup long-grain rice
3 cups reduced-sodium canned vegetable broth

Steps:

  • In a 10-inch skillet, heat olive oil over medium heat. Add onions; reduce heat to medium-low. Cook, stirring occasionally, until onions are golden and caramelized, 35 to 40 minutes. Season with coarse salt and ground pepper.
  • Meanwhile, in a 3-quart saucepan, bring 5 cups water to a boil. Stir in brown lentils; reduce heat to a simmer. Cook until tender, 10 to 12 minutes. Drain; rinse pan.
  • Return lentils to pan; add long-grain rice and vegetable broth. Bring to a boil; reduce to a simmer. Cook until rice is tender and has absorbed liquid, 10 to 12 minutes. Season with salt and pepper. Scatter onions on pilaf.

1 large onion, chopped
1/2-3/4 cup slivered almonds
1 cup basmati rice
1 cup finely chopped carrot
1/2 cup currants (or to taste)
1 1/2 teaspoons finely minced orange rind
1/4 teaspoon cinnamon
black pepper
1/8 teaspoon red pepper flakes (use more for more spicy, or omit the pepper flakes)
1 3/4 cups good quality chicken broth
1/4 cup water
salt (optional)

Steps:

  • In a medium saucepan, melt butter.
  • Saute the onion and almonds over medium heat until onion is soft (not brown) and the almonds are golden.
  • Stir in rice; cook stirring for about 4 minutes to release flavor.
  • Stir in chopped carrot, currants, orange peel, cinnamon, black pepper and red pepper flakes.
  • Carefully stir in chicken broth and water into the rice mixture, stir slightly with a wooden spoon.
  • Bring to a boil, and reduce heat.
  • Cover the saucepan and simmer until all liquid is absorbed, and the rice is tender (about 20 minutes).
  • Season with salt.

• 4 tsp. vegetable oil
• 1/2 bay leaf
• 1/2 cup peeled and diced onion
• 1 tsp. kosher salt
• 3/4 cup basmati rice (rinsed; if using domestic, do not rinse)
• 1/4 tsp. freshly ground black pepper
• 3 c. water
• 1 Tblsp. peeled, minced ginger
• 3/4 tsp. ground cumin
• 3/4 tsp. ground coriander
• 3/4 cup slit red lentils
• 1/2 tsp. dried red pepper flakes
• 1 scallion, white and green parts, trimmed and sliced

Steps:

  • In a 1 1/2 qrt. saucepan, heat 2 tsp. oil over medium heat. Add the onion and cook for 3 minutes, stirring, until translucent. Stir in the rice, bay leaf, 1/2 tsp. salt, and 1/8 tsp. pepper. Add 1 1/2 c. water and bring to a boil. Lower the heat and simmer, covered, for 15 minutes. Remove from the heat and set aside to rest, covered, for 5 minutes. In a separate 1 1/2 qrt. saucepan, heat the remaining oil over medium heat. Stir in the ginger, cumin, coriander, and red pepper flakes and cook 1 minute. Add the red lentils and stir to coat evenly with the spices. Add the reaming 1 1/2 c. water, season with the remaining salt and pepper, and bring to a boil. Lower the heat and simmer, covered, for 15 minutes. In a large, warm serving bowl, combine the cooked rice and lentils, mixing thoroughly, and serve topped wit the sliced scallion. Note: If you can fine them, split red lentils imported from Indian are preferable to their domestic counterparts for this recipe. They're slightly smaller and firm, and will do a better job of retaining their shape and color after you've cooked them.

1 medium onion, chopped
1/4 cup vegetable oil, divided
1 1/2 inches cinnamon sticks
6 cardamom pods
1 bay leaf
1/2 teaspoon coriander seed
1/2 teaspoon cumin seed
2 dried red chilies
3 whole cloves
3/4 cup basmati rice
1/2 teaspoon ground turmeric
kosher salt
2/3 cup lentils
1/2 lb potato, cut into 1/2 inch cubes (boiling kind, like Yukon gold or Red Bliss)
3 medium carrots, grated
fresh ground black pepper

Steps:

  • Heat 2 tablespoons vegetable oil in a saucepan over medium heat. Add the cinnamon stick, cardamom pods, bay leaf, coriander seeds, cumin seeds, chiles, and cloves and then cook for about a minute while stirring, until the spices become fragrant. Take the spices out of the pot and reserve. Turn the heat down to med-low and add the onion to the pan. Cook for approximately 10 minutes, stirring once and a while, and then take the pot off the heat and set aside.
  • Rinse the rice in a colander. Once the rice is rinsed and drained, add it to the onion in the saucepan and put in the reserved spices and add the turmeric and cook over med-heat, stirring, for about 1 minute.
  • Add in 1 1/2 C water and 1/2 t salt to the mixture and bring it all to a boil over high heat. Cover the pan with a paper towel and then the lid. Let this simmer this way, over low heat, for approx.20 minutes, or until all the liquid has been soaked up. Take the pan off of the heat and set aside, leaving it covered, for approximately 15 minutes.
  • Meanwhile, combine the lentils, 2 C water and 1/2 t salt in a different saucepan and bring it to a boil over high heat. Then put a lif on it and simmer, over low heat. for approximately 25 minutes (until the lentils get tender).
  • Now, heat the remaining 2 T vegetable oil, over medium heat, in a large nonstick skillet. Add in the potatoes and cook for approx 10 or 12 minutes, until the potatoes get a bit browned (stirring occasionally). Take the heat down to low and cook for about 5 minutes more. Then you can add the carrots to the potatoes and cook for 3 more minutes, or just until both are tender.
  • Next, you can fluff the rice with a fork and take out the bay leaf, cardamom pods, cinnamon sticks, cloves and chiles. Then drain your lentils and stir them into the rice along with the potato mixture. Add salt and pepper to taste and enjoy.

1 tablespoon vegetable oil
¼ cup finely diced onion
1 bay leaf
1 cup uncooked basmati rice
salt to taste
1 tablespoon unsalted butter

Steps:

  • Heat chicken stock in a saucepan until boiling; keep hot until ready to use.
  • Heat vegetable oil in a 2 quart saucepan over medium-high heat. Cook and stir onion and bay leaf in the hot oil until onion is tender, about 5 minutes.
  • Stir basmati rice into onion mixture until rice is coated with oil.
  • Pour hot chicken stock into the rice mixture. Season with salt; stir.
  • Bring rice mixture to a boil; cover and reduce heat to medium-low. Continue simmering until rice is tender and liquid is absorbed, about 20 minutes.

500g basmati rice
100g butter
1large onion , finely chopped
1large sprig fresh thyme
2 bay leaves
2 cinnamon sticks
8 cardamom pods , split open
3 cloves
4-6 thinly pared strips lemon zest
1l boiling chicken stock or water

Steps:

  • Preheat the oven to fan 160C/conventional 180C/gas 4. You will need a medium casserole with a lid. Rinse the rice well in a large bowl of water, then drain.
  • Melt two-thirds of the butter in the casserole and sauté the onion for about 5 minutes. Add the rice, stir well, then add the herbs, whole spices and lemon zest and cook for a minute. Now pour in the boiling stock or water and mix into the rice, along with 1½ tsp sea salt and ground black pepper to taste.
  • Cover and bake for 25 minutes. Leave to stand for 5 minutes, then remove the lid and fork through the remaining butter until the rice is fluffy and separated.
