PAIGE'S ONE CUP COOKIES
An amazingly delicious white cookie with a soft blanket of sweet coconut. This is a favourite of my whole family since I was a little girl. I brought this recipe into my grade for teacher for a class recipe book and her and all the students tried it and loved it.

Steps:
- mix sugars, margarine, oil, vanilla and egg well.
- add flour and other dry ingredients and mix.
- add rice krispies, oatmeal, and coconut.
- mix well.
- roll in balls and press with for (make sure fork is dipped in either butter or flour before each press.).
- bake 350 degrees for 10-12 minutes.
ONE CUP OF EVERYTHING COOKIES
I make these cookies quite often and they are a big hit with my teenage daughter and her friends. If you don't like one of the ingredients you can omit and just add more of the ones you like.

Steps:
- 1. Preheat oven to 350 degrees F.
- 2. Cream together margarine and sugars. Add eggs one at a time.
- 3. Combine flour and baking soda together and add to creamed mixture.
- 4. Add the remaining ingredients.
- 5. Drop by rounded teaspoonfuls (i use a small ice cream scoop) onto an ungreased cookie sheet. Bake 10-12 minutes. Cool for 5 minutes then transfer to a wire rack to cool completely.
PAIGE'S SOUR CREAM CUT OUT COOKIES
This is my friend Paige's recipe. She would bring them decorated in whatever holiday theme (she was big on decorating them in pastels). There were rarely any left. These are very soft and cake-like cookie and the Recipe #43332 is a must. IMO

Steps:
- Cream together sugar and butter.
- Add the eggs one at a time and mix well.
- Then add sour cream and vanilla and mix well.
- Sift the dry ingredients together and add to wet ingredients a little at a time.
- Chill in refrigerator till firm or even overnight.
- Preheat oven to 400°.
- Roll the dough 1/4-1/2-inch thickness and cut out into desired shape.
- Bake for 5-7 minutes or until lightly pale golden--not brown.
- Allow to cool completely on wire rack before frosting.

- Mix the flour, cocoa and salt in a bowl.
- Beat the butter and sugar until fluffy.
- Beat in the egg yolk, milk and vanilla.
- Mix in the flour mixture.
- Cover and refrigerate for an hour.
- Whisk the egg whites until frothy.
- Form the dough into 1 inch balls.
- Dip the balls in the egg white and then in the pecans.
- Place the balls on a parchment lined baking sheet with the pecans face up.
- Indent the center of the balls with a teaspoon.

ONE COOKIE
Simple recipe for when you just want a cookie or two, (and don't want a whole batch waiting to get eaten!) It is easily adaptable to most any flavor; and also great to eat as dough (no eggs). I leave out the baking soda and salt because I don't care if my cookie rises, as long as it tastes good.

- Preheat toaster oven to 350.
- In a small bowl stir together butter, sugar, vanilla, and 1 tbsp of water with a fork till blended.
- Stir in flour (and salt and baking soda if desired.) You may need to stir in a little more water to get the correct consitency.
- Stir in additonal flavor: chocolate chips, oatmeal and cinnamon, peanut butter (reduce water,) maple flavor and white chocolate chips- the possibilities are endless!
- Drop onto a small pan and bake in your toaster for 10-15 minutes (you have to watch it carefully) till golden around the edges. If you want it chewy, eat it warm, if you want it crunchy, wait till it cools.
