CRANBERRY BLISS BARS (STARBUCKS COPYCAT)
You'll find these bars at Starbucks during special holidays. The texture is like a chewy brownie, but the flavors include white chocolate, zesty orange, and cranberry, finished with a cream cheese frosting. NOTES - this recipe uses a 10x15 pan. One of the photos shows you how to make the right cuts to create signature triangle shapes. Nov. 2013 note - the bars bought from Starbucks have gone down-hill this year with icing that is flavorless and no real ginger flavor to the bars. Skip Starbucks and make your own! For Valentine's Day, I used a heart-shaped cookie cutter and tinted the icing pink. They were beautiful!

Steps:
- Preheat the oven to 350 degrees (325 for a glass or dark pan). Prepare a 10x15 by lining it with parchment paper or use a non-stick spray.
- BARS: With an electric mixer, beat together softened butter and sugars 3-5 minutes until light; gently blend in eggs and orange extract (don't overbeat eggs). Add the flour, baking powder, and ginger and beat briefly. Add the cranberries and chips, stirring just until incorporated.
- Spread thick batter in prepared 10x15 pan. Bake 350 for 20-24 minutes until light brown AT EDGES and a skewer tests clean. Don't overbake or your bars will be dry. Let it cool completely. NOTE: If you use a 9x13 pan, the bars will be thicker and will take 26-28 minutes.
- FROSTING: Blend cream cheese and butter until fluffy. Add orange extract and confectioners sugar and beat until frosting is fluffy and spreadable (adding 1 t. milk if needed). Spread evenly over COOLED bars.
- GARNISH: Use a zester to remove rind from an orange; sprinkle zest over frosted bars. Chop 1/3 cup Craisins coarsely; sprinkle over frosted bars.
- DRIZZLE: Mix white chocolate and oil in a glass measuring cup. Microwave 1 minute; stirring every 15 seconds until melted. Use a fork or whisk to drizzle the white chocolate diagonally across the bars.
- Allow one hour for the white chocolate to set before cutting. **To make signature Starbuck triangles, cut into 20 large squares (5 cuts by 4 cuts with the knife). Then cut each square in half diagonally to create triangles.

Steps:
- Preheat oven to 350 degrees F. Line a 15x10 or 13x9 inch jelly roll pan or rimmed cookie sheet with parchment paper. *see notes
- Beat together melted butter and brown sugar over medium speed with an electric mixer. Add in eggs, 1 tsp orange extract, and 1 tsp vanilla extract and beat until mixed well. Add in ground ginger, baking powder, salt, and flour, beating until just blended. Don't overmix.
- Stir in white chocolate chips and Craisins by hand. Spread evenly into the bottom of prepared pan. Bake in preheated oven for 18-22 minutes until set and golden brown at the edges. Don't overbake or bars will be hard. Remove from oven and place pan on a wire rack to cool. Allow bars to cool completely before topping with frosting.
- To make the frosting, beat cream cheese and powdered sugar together with an electric mixer until smooth and creamy. Add 1/2 tsp orange extract and 1/2 tsp vanilla extract and mix well. Top cooled bars with frosting. Sprinkle with chopped Craisins and drizzle white chocolate over the top with a fork. I dip my fork into the chocolate then shake it gently over the top of the bars to create little streaks. You can either slice right away and enjoy, or place the bars in the refrigerator for about an hour (what I like to do) to help them set up before cutting. Cut into triangles and enjoy!

STARBUCKS IMITATION CRANBERRY BLISS BARS
Make your own Starbucks Cranberry Bliss bars at home! This recipe is arguably an improvement over the original, the cake is less dense than at Starbucks, which most people have enjoyed. The difficult ingredient in this recipe is candied ginger - most of us not only don't have it, but probably don't even know what it is. Crystallized Ginger is the same thing, and I found it at HEB with the dried fruit and store brand trail mixes. It was on a rack located in/near the produce section. It was cheap as well, just a dollar or two.

- Preheat oven to 350°F with the rack in the middle. Line a 12x16 inch baking sheet with foil or parchment paper. Set aside.
- Cream together 1¼ cup brown sugar, 1/2 tsp salt & 1½ sticks butter. Add 3 eggs & 1½ tsp vanilla extract, one egg at a time creaming the mixture in between. Add 2 Tbsp grated ginger, 1½ cup flour & ½ tsp baking powder and stir everything together. Add Craisins & white chocolate and fold them in. Using wet hands or wet spatula spread the batter evenly in a 12x16 inch baking pan. Bake for about 20 minutes until the middle is baked through. Do not overbake or the bars will be very dry. Allow cooling.
- Add 4 oz cream cheese, 1½ cups powdered sugar, 4 tsp lemon juice, ¼ tsp orange extract & 1 tsp vanilla extract to a bowl of a mixer. Using a beater or a whip attachment beat/whip everything together until creamy, about 4-5 minutes.
- Spread the frosting over the cooled down crust. Sprinkle the craisins on top. Drizzle melted white chocolate on top. Allow the bars to set until the top of the cream cheese frosting is not sticky to the touch, about 2 hours. This will make it easier to cut the bars

- Preheat oven to 350° F. Grease a 9×11-inch baking pan with cooking spray or butter. Whisk the flour, baking powder, salt, cinnamon, and cloves together in a medium bowl; set aside.
- To make the blondies: Melt the butter and stir in all of the sugar until the butter has completely incorporated; let the mixture cool to room temperature. Pour the mixture into the bowl of a stand mixer fitted with the paddle attachment. Beat in the eggs and vanilla on medium speed until the eggs have incorporated. With the mixer on low, gradually stir in the dry ingredients until no evidence of flour remains. The batter will be very thick. Stir in the cranberries and white chocolate until they are dispersed. Dump the batter to the prepared baking pan and with your hands, flatten it out (without mashing it) into the pan.
- Bake for 18 to 20 minutes until the edges are just barely golden brown (mine took exactly 18 minutes). Let the pan cool on a wire rack until the blondies are completely cool.
- To make the frosting: Beat the cream cheese and powdered sugar together on medium speed in the bowl of a stand mixer fitted with the paddle attachment until combined, about 30 seconds. Quickly mix in the orange zest.

- Preheat the oven to 350 degrees F. Grease and line a 9×13 baking with parchment paper. The cooking spray just helps the parchment stick to the pan.
- Whisk together the brown sugar, melted butter and orange zest until no lumps remain. Whisk in the egg and vanilla until well combined. Note that adding the orange zest at the same time as the sugar helps bring out the orange flavor more.
- Add the wet ingredients to the flour mixture, stirring just until combined. It is fine if there are a few streaks of flour left. It is better to avoid over mixing.

- Preheat oven to 350F. Line an 8-by-8-inch pan with parchment paper. Note: you can use non-stick baking spray instead of parchment paper but the bars will be a little tricky to get out of the dish.
- In a medium microwave-safe bowl, melt the white chocolate for 1 minute, reheating in 10-second intervals, or until it can be stirred smooth. Melting chocolate in the microwave can lead to scorching so melt slowly, and keep an eye on it.
