Steps:
- In a large resealable plastic bag, combine the first seven ingredients; add beef.
- Seal bag and turn to coat; refrigerate for at least 3 hours or overnight.
- Drain and discard the marinade.
- Grill steak, covered, over indirect medium heat for 1-1/2 to 2 hours, turning once, or until meat reaches desired doneness.

- Preheat oven on broiler setting. Make foil 'snake' out of aluminum foil to use to keep oven door slightly ajar so that broiler won't turn off if it gets too hot. Brush steak with oil and salt and pepper, to taste. Place a piece of foil on the bottom rack as a drip pan. Place another rack in the position above this and put the steak directly on this rack. Cook steak in this position for 5 minutes. Flip steak and cook for another 5 minutes. Move rack with steak to top position in oven, moving rack with foil and drippings just underneath, and cook for 3 minutes. Flip 1 last time and cook for another 3 minutes. Transfer steak to wire rack and rest for 3 to 5 minutes. The above times are for medium doneness. Adjust cooking times up or down as desired.
GRILLED BEEF SIRLOIN TIP ROAST
My husband made this for lunch today. He grilled it over charcoal and the meat ended up being very moist and tender. Great flavor and easy to make! Preparation ime equals marinating.

Steps:
- Combine oil, garlic, teriyaki marinade and liquid smoke in sealable plastic bag; mix well.
- Add the roast.
- Squeeze air from bag, allowing marinade to cover the roast; seal.
- Marinate in refrigerator for 6-8 hours, turning occasionally; drain.
- Place roast on grill rack over medium-hot coals.
- Grill with lid down for 45 minutes.
- Turn the roast over and grill for another 30 minutes or until done to taste.
- Cut into 1/2 to 3/4 inch slices.
- Serve immediately.

- In a small bowl, mix together the pepper, garlic, salt, horseradish, and olive oil. Place the steaks on a shallow dish and rub the mixture all over the meat. Marinate at room temperature for 1 to 2 hours or, better still, covered in the refrigerator for up to 2 days. Turn the meat from time to time to coat both sides evenly.
- Remove the steaks from the refrigerator an hour before cooking. When your are ready to grill, preheat barbecue grill.
- Heat broiler; broil steak approximately 3 to 4 minutes per side or until done to your preference using a meat thermometer (see below).
- Rare - 120°F
- Medium Rare - 125°F
- Medium - 130°F.
- When the steaks are done to your liking, remove from oven, let sit 15 minutes before serving (meat temperature will rise 5 to 10 degrees after it is removed from the oven). Slice steak across grain into 1/4-inch slices. Place on a platter or individual dinner plates.

- In small bowl, combine the flour, ketchup, Worcestershire sauce, brown sugar, vinegar, 1 t salt and mustard until smooth; set aside.
- Sprinkle pepper and remaining salt over roast.
- Grill roast over medium heat for 5-10 minutes or until browned on all sides.
- Transfer to a heavy-duty 13-inch by 9-inch baking disposable foil pan.

- Purchase the right sirloin steak. The sirloin is from the rear part of the beef, specifically the hip. Look for steaks that are marbled, where the white stripes of fat are interspersed evenly throughout the meat.
- Know that the type of grill you use impacts the flavor of your steak. Many people swear that a grilled steak, with a little salt and pepper, is one of nature's finest meals.
- Pre-heat your grill to medium-high. If you are using charcoal and/or wood this might take 30-40 minutes, until the briquets are covered in gray ash, but propane grills only take a few minutes to get hot.
- Rub the steak with salt and pepper while the grill heats. Most steaks are best with only a little bit of seasoning. Rub 1/2 tablespoon of both salt and crushed black pepper on both sides of the steak and let it sit at room temperature for 15-20 minutes while the grill heats.
- Place your steak over direct heat on the grill. You want to sear the outside with nice, caramelized crust for the best texture and flavor. Slap the steak over the flame and then leave it alone, closing the top of the grill as it cooks.
- Cook each side of the steak over direct heat for 4-7 minutes, depending on desired doneness. They should be dark brown when you flip them over. If they are black, the grill was too hot.
- Remove the steak from direct heat and let it cook indirectly if you want a well-done steak. Move the steak to another side of the grill, one without direct flame, and let it keep cooking until the inside is done to your liking.
- Use the "hand test" to check for doneness.If you don't have a meat thermometer you can use your hands to check for doneness. Press on the center of the steak with one finger.
- Let the steak stand for 10 minutes at room temperature before eating. Tent a piece of aluminum foil over the steak let it rest before eating. This traps the flavors in the meat and leads to a better tasting steak.
