BROILED STAR FRUIT IN GINGER
Fresh Star Fruit is one of the things I miss most about living in Guam. Carambola (Star Fruit) looks just like a star when sliced. The skin is a glossy golden yellow when ripe, its matching flesh beautifully translucent and dotted occasionally with a dark seed. When ripe, it is juicy and fragrant. Its flavor, depending on the variety, can range from exotically sweet to refreshingly tart. In general, the broader set the ribs, the sweeter the fruit. This recipe is from a Martha Stewart cookbook. Most of the time listed is cooling time for the ginger broth.

Steps:
- In saucepan, combine water, ginger, cinnamon, cloves and coriander.
- Bring to a boil, reduce heat and simmer for 30 minutes.
- Add honey and stir until dissolved.
- Strain liquid and allow to cool.
- Slice the star fruit into 8 slices.
- Place star fruit on a baking sheet and sprinkle the brown sugar over them.
- Broil until the sugar bubbles and starts to brown.
- Place stars into individual bowls, 4 each.
- Ladle the gingered broth into each and serve.

- Combine orange peel, orange marmalade, oil, thyme, coriander, red pepper and salt in a small bowl and set aside.
- Peel and quarter grapefruit and kiwi.
- Pit and quarter nectarines. Cut star fruit into 1/2 inch thick slices.
- Thread fruits on 4 metal skewers.
- Grill chicken directly over medium heat for 12 to 15 minutes until chicken is no longer pink, turning once.
- During the last 8 minutes of grilling place fruit skewers directly over medium heat. Brush fruit and chicken with the marmalade mixture often. Turn fruit once.
- While the chicken and fruit are grilling prepare some rice for a great side dish. Or to add even more of the islands to your meal you could use couscous as a great side dish choice.

PRESERVED STAR FRUIT (AKA FIVE FINGER OR CARAMBOLA)
This recipe is a time honored tradition in Trinidad and Tobago. Most people there dry it in the sun. I have adjusted to dry in the oven.

Steps:
- Remove either end of the fruit and slice into 1/4 - 1/2 inch pieces.
- Place in a large pot and cover with water and add the sugar and spices.
- Bring to a boil and leave to cool for 3 hours. The fruit will soak up the sugar and spices.
- Preheat oven to 150F.
- Drain any liquid off and keep it for something else.
- Place fruit on baking sheets.
- Place in the oven with the door propped open to allow the steam to escape. Turn every hour or so until the fruit is done.
- Store in an airtight container.
- The cooking time is only an estimate, it will vary with how much you drained off, the humidity etc.
