ST. PATRICK'S DAY SHAMROCK PIE

St. Patrick's Day Shamrock Pie image

I will warn you, if you dare put this in your mouth, you won't be able to stop! That won't be to great for your health, but I think most of you can indulge in a simple guilty pleasure such as this one. With the recipe comes a story... Once upon a time a fairy and a troll had a child they later named Leonardo, he was short and loved rainbow, gold, and green. He wants this pie! Serve with whipped cream and ice cream. Sprinkles don't hurt either!

Number Of Ingredients 9

1 ¼ cups graham cracker crumbs
5 tablespoons unsalted butter, melted
2 tablespoons white sugar
1 (14 ounce) can sweetened condensed milk
4 large egg yolks
½ cup key lime juice
2 tablespoons key lime zest
1 tablespoon honey
2 drops green food coloring, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Set a rack in the middle of the oven.
  • Stir graham cracker crumbs, butter, and sugar together in a bowl until combined. Press the magical creation into the bottom and sides of a 9-inch pie plate.
  • Bake in the preheated oven until set, about 10 minutes. Let crust cool on a wire rack; leave oven on.
  • Whisk condensed milk and egg yolks together in a bowl until well combined. Add key lime juice and zest; mix well. Whisk in honey to combine. Add food coloring gradually, whisking until filling is green enough for you. Pour filling over the crust.
  • Bake until nearly set, 16 to 18 minutes. Let cool completely on the wire rack so pie can set fully, at least 30 minutes. Cover and refrigerate, 8 hours to overnight.

ST PATRICK'S PIE

St Patrick's Pie image

This is the pie we will be having on St patrick's day for dinner served with cabbage and lot's of gravy. However you can make it any time you like. You can put other things in it I sometimes put the cabbage on the top of the mix and just serve that with gravy. Also if you make your own pastry you can add some herbs, sage is a nice beefy one to add, the seasoning in this recipe is down to choice you may like to add more if you like things a bit more peppery. Note that cooking time does not incluede the boiling of the potatoes.

Categories     < 60 Mins

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 14

pastry dough
220 g plain flour
1/2 teaspoon salt
50 g lard or 50 g solid vegetable fat
50 g butter
approximately 4 tablespoons ice water
1 egg for egg wash
300 g potatoes, any kind will do
340 g corned beef
1 brown onion, roughly chopped
1/4 teaspoon white pepper
1/4 teaspoon salt
1/4 teaspoon sage
1 tablespoon Worcestershire sauce

Steps:

  • Peel potatoes and cut into cubes about 2 inches, and boil till fork tender but not mushy, drain and allow to dry off a bit you don't want them to wet, and set aside.
  • Make pastry and put in the fridge for 20-30 minutes to rest.
  • Heat the oven to 350f or 170c.
  • Roll out pastry leaving enough aside for the lid between two sheets of greasproof paper and line a 8 inch pie dish with the pastry.
  • In a bowl mix the cooled potato, diced cornbeef, onion and the seasonings together, turn over rather than stir to mix.
  • put mix in the pie dish and roll out your lid as before wet the edge of the pie and crimp the edges together.
  • whisk up the egg and gently brush over the top of your pie and cut two slits in the lid about 1/2 inch each, Ilike to grind a wee bit of sea salt on top.
  • bake in the oven for about 20 -30 minutes or untill done.
  • serve with steamed cabbage and good gravy and enjoy.

ST. PATRICK'S DAY IRISH POTATO PIE

St. Patrick's Day Irish Potato Pie image

This recipe [sans the garlic and parsley] is from Elswet's grandmother's recipes and is quite old, as she got it from her grandmother. This is really good most anytime, but it's especially good when it's cold outside. This goes great with a potato/cheddar soup, for lunch, or with a green salad and jello with pear halves for dinner. This type of food is typically a bit bland. So we spice it up the tiniest bit to suit our more eclectic palates.

Provided by Pagan

  • Begin With a Full Irish Breakfast. St. Patrick's Day can be—and usually is—a long day filled with celebrations. So, will start with a good, hearty breakfast to prepare you for the event or at least until lunchtime.
  • Move on To the Main Courses. St. Patrick's is the day for traditional Irish foods packed with hale and hearty fare to fill stomachs and keep energy levels up.
  • Serve Some Side Dishes and Snacks. All those fabulous main courses need a side dish or two, and Ireland has some fantastic ones featuring the country's main crop: potatoes.
  • Cap off the Meal With Cakes and Puddings. If there is any room left, then make some as to miss out on the delicious array of Irish, sweet treats on St Patrick's Day would be a shame.
  • Don't Forget the Drinks. There can be no mention of Ireland, or Irish food and drink, without a "pint of the Black Stuff" and Irish beer making an appearance.

17 ST. PATRICK'S DAY RECIPES BETTER THAN A POT OF GOLD ...

  • Traditional Corned Beef. It doesn't get more Irish than corned beef. Though a fun fact about this dish, it is actually a slab of pickled brisket, but I think we can all agree, corned beef sounds a bit more appetizing.
  • Easy Baked Cabbage. Too often, people remember the soggy, flavorless cabbage casseroles of their youth without realizing the great potential that this vegetable has.
  • Copycat Shamrock Shake. Every year when McDonald's announces the return of the Shamrock Shake, fans from across the nation flock to their nearest drive-thru.
  • Short Ribs Braised in Guinness. Simply drinking your Guinness on St. Patrick's Day isn't enough. With this recipe, you get to eat it too. Beer and beef have always gone hand-in-hand, but the braising method here really brings out the best of both flavors.
  • Hearty Baked Potato Soup. A cold March night calls for a big pot of soup. And after a day of celebrating on St. Patrick's Day, there is nothing better to come home to than hearty baked potato soup.
  • Grandma's Irish Soda Bread. That baked potato soup would be nothing without a big hunk of freshly made bread to sop it up with. There is no better bread for St. Patrick's Day than Irish soda bread.
  • Golden Mango Smoothie Bowl. What fun is St. Patrick's Day without a hunt for a pot of gold? In this case, bring the gold right to your breakfast table with this healthy, golden mango smoothie bowl.
  • Lamb Chops and Cauliflower Mash. Lamb and potatoes are a dinner staple in Ireland throughout the year. The hearty combination of meat and starch is often seen as the perfect ending to a long day working outside.
  • The Perfect Irish Whiskey Coffee. Can you think of a better way to kick-off St. Patrick's Day than with a classic Irish cocktail? Irish whiskey (we recommend Tullamore D.E.W.)
  • Shepherd's Pie With Sweet Potato Topping. Shepherd's pie is the original Irish casserole. With a combination of meat, veggies, and a potato topping, it is easy to see why this classic recipe has endured the test of time and geography.
