Yield Makes 6 first-course servings

Number Of Ingredients 9

2 cups 1- to 1 1/2-inch-diameter red-skinned potatoes, halved
2 cups cauliflower florets
2 cups very small brussels sprouts
2 apples, cored, cut into wedges
1 pound Irish cheddar cheese, grated
2 1/2 tablespoons all purpose flour
3/4 cup (or more) Irish stout (such as Guinness)
6 tablespoons frozen apple juice concentrate, thawed
1 tablespoon Dijon mustard

Steps:

  • Steam all vegetables until tender, about 15 minutes. Arrange vegetables and apples around edge of large platter.
  • Meanwhile, toss cheese with flour in large bowl. Bring 3/4 cup stout, juice concentrate, and mustard to simmer in large saucepan over medium heat. Gradually add cheese mixture, stirring constantly, until cheese is melted and smooth, thinning with more stout, if desired. Season to taste with salt and pepper. Transfer fondue to bowl. Place in center of platter with vegetables.

You will love this smooth, flavorful dish. Serve with bread, veggies, and meats of all kinds. We like green peppers, grape tomatoes, carrots, mushrooms, cucumbers, celery, ham, and salami for dipping.

  • Shamrocked Shooter. Are you ready to get "shamrocked"? This easy green mix is a fantastic shot for St. Patrick's Day, and it's utterly delicious. Imagine a light, fruity flavor against a creamy background with, of course, a little bit of Irish whiskey tossed into the mix.
  • The Irish Encounter. The Irish encounter brings rum and Irish cream together to create a fun frozen cocktail. It's like a piña colada, only different. The drink prefers banana over pineapple and a shot of Baileys gives it a creamier twist (and that promised "encounter").
  • Irish Slammer. The Irish slammer (formerly called the Irish car bomb) is a popular bar shot and incredibly easy to make. The combination of full-flavored and lightly bitter, malty beer and a creamy shot is a favorite of some.
  • Irish Eyes Cocktail. Creamy, minty-fresh, and green enough to make you invisible to leprechauns, the Irish eyes cocktail is an excellent tipple for St. Patrick's Day celebrations.
  • Original Irish Coffee. Beyond a pint of Guinness stout, there may be no boozy beverage so associated with Ireland as the Irish coffee cocktail. The classic combination of smooth Irish whisky with strong, hot black coffee that is sweetened and topped with rich cream is an absolute delight.
  • Fadge (Irish Potato Bread) Fadge is the name given to potato bread and is used mainly, but not exclusively, in Northern Ireland and in parts of Northern England.
  • Irish Soda Bread. Grace your holiday table with a lovely loaf of traditional Irish soda bread (and don't spare the butter). This no-yeast bread is easy enough for newbie bakers to try.
  • Traditional Irish Wheaten Bread (Brown Soda Bread) In Northern Ireland, brown soda bread is made with whole wheat flour and known as wheaten bread; in the Ireland, soda bread tends to be made with all-purpose flour.
  • Irish Nachos. What can't the Irish do with the humble potato? For those looking for something different, our fun and unique Irish nachos bring a taste of the Irish pub to the popular nacho platter snack.
  • Easy Boiled Cabbage. Cabbage is a versatile vegetable that can be cooked as a side dish or as part of the main dish. This basic boiled cabbage recipe calls for just four ingredients—cabbage, butter, salt, and pepper—and it cooks in about 20 minutes.
