SRIRACHA MAYONNAISE
I've recently discovered srircha hot chili sauce. It's the red sauce with the green twisty cap and rooster on the lable in the Asian aisle of your grocer. Probably the sauce that you've noticed for years and years and always thought naaaaawwww. Well let me tell you, I, too, never thought to buy it until ZWT #6 Asian Tag and it's not too late for you, either. It's got a sweet heat that can easily become your secret weapon. Steps:
- In a bowl, whisk together mayonnaise, mustard, and sriracha.
- Store in an air-tight container for up to a month.
- Use as a condiment on burgers, hot dogs, fries, sandwiches, dipping sauce, chips, chicken, fish (fried or baked), etc. Easily doubles.

SUNNY'S HONEY-SRIRACHA DIPPING SAUCE
Steps:
- In a sauce pot on medium heat, add the sriracha, ketchup, orange juice, brown sugar, honey, a little pinch of salt and plenty of grinds of black pepper. Once it bubbles, reduce the heat to low and allow the sauce to simmer until thickened, about 15 minutes.
- Serve hot right away or at room temperature, or refrigerate and serve cold. Great for wings, veggies, fries or other dippables.
GARLIC SRIRACHA MAYONAISE
I love making my own mayonnaise. I made my first following Alton Brown's recipes from his show. The videos are posted on foodtv and are well worth watching if you are new to making your own mayonnaise. This is my latest variation. This is easy enough to do that I generally make my own whenever I know I'm going to want mayo for a few things. I only use store bought mayonnaise because it lasts forever in the fridge. Once you make your own mayonnaise, you won't want anything else.

Steps:
- In a small work bowl of a food processor, place the egg yolk, garlic, salt, mustard, lemon juice and vinegar, pulse until the garlic is very finely minced and all ingredients are well incorporated. frequently scrape down the sides of the bowl to keep everything together.
- Run the food processor while drizzling the oil in to the bowl, very slowly at first. Stop frequently to scrape. if you put too much oil in at once, the emulsion can break. if it does, mix (scraping down frequently) until it forms an emulsion again..
- When you get to a thick texture, add the sriracha and combine well.

- all raw egg warnings apply.
- I try to make sure it's used up within 2 or three days. Generally, my kids will find things to do with any homemade mayonnaise and make sure that it's gone even faster.
- I've made several variations on this. Leave out the garlic and hot sauce and it's a standard mayo recipe.
- The sriracha texture lends itself to being mixed in at the end. If you use something vinegar based, like Tabasco, add it with the vinegar.
- I like the additional layer of flavor from using a good olive oil in this, plus there are health benefits, but you could easily use something like safflower or canola.

- Preheat oven to 450°F (230°C).
- In a bowl, whisk together the dry biscuit ingredients.
- Cut in the butter and shortening until mixture is crumbly.
- Mix in buttermilk and knead until it forms a dough.
- Cut dough into 5 cylinders, 4 inches (10 cm) in diameter. Place on a baking sheet lined with parchment paper.
- Bake 15-20 minutes, until golden brown.

A quick, easy and surprisingly tasty recipe using standard ingredients found in most cupboards. Adjust as you like; this is a very forgiving recipe.

- Preheat oven to 450 degrees F (230 degrees C).
- Whisk Sriracha sauce, honey, butter, garlic powder, onion powder, Italian seasoning, salt, and black pepper together in a small bowl.
- Place chicken in a baking dish. Pour Sriracha mixture over the chicken and turn to coat chicken completely.
