"RATHU ISSO CURRY" SRI LANKAN RED PRAWN CURRY



Another Sri Lankan recipe from Chamaine Solomon posted after a request from another member. I have had to miss one ingredient from the list as the site does not recognise it, but 1 strip of daun pandan or rampe leaf needs to be added to the other ingredients in the saucepan.

750 g small raw prawns
1 medium onion, finely chopped
3 garlic cloves, finely chopped
1 teaspoon fresh ginger, finely grated
1 small cinnamon stick
1/4 teaspoon fenugreek seeds
3 -4 curry leaves
1 stalk lemongrass, bruised (or 2 strips of lemon rind)
1/2 teaspoon ground turmeric
1 1/2 teaspoons chili powder
2 teaspoons paprika
1 teaspoon salt
2 cups coconut milk
good squeeze lemon juice

Steps:

  • Wash prawns and remove heads but leave shells on ( in Sri Lanka prawns are cooked with the shell on for better flavour).
  • Put all ingredients, except lemon juice, into a saucepan and bring slowly to simmering point.
  • Simmer uncovered for 20 minutes or until onions are soft.
  • Add lemon juice and stir.
  • Taste and add more salt or lemon if required.

Steps:

  • Fry the chicken just until the outside is golden. Then remove.
  • Fry onion, garlic and giner until softened. Then add curry powder (add chilli powder/cayenne pepper if want spicier curry), paprika, paprika, bay leaves. Mix and cook for a few min until fragrant. Add tomatoes and 1 tsp sugar. Mix to coat. NB you could also add other vegetables here e.g carrot, pepper e.t.c.
  • Add coconut milk, equal amount of water and vinegar. Bring to a boil and put in to a slow cooker on high for 3 hours.
  • If you don't have a slow cooker follow the same steps but add the chicken (potentially cut up in to smaller pieces) with the onions, garlic e.t.c. chicken. Cook for 10 min before adding the coconut milk and then cook for 20 min with the lid on.

1 tablespoon oil
1 small onion, chopped
2 lbs tomatoes, peeled and chopped
1/2 teaspoon chili powder
1/2 teaspoon turmeric
1/4 teaspoon ground ginger
1 tablespoon tamarind paste
3 cups coconut milk
3 garlic cloves, chopped
1 1/2 lbs uncooked prawns, peeled

Steps:

  • Heat the oil in a pan and fry the onion till golden.
  • Add all of the ingredients EXCEPT THE PRAWNS, simmer and cook till reduced by 1/3rd.
  • Add the prwns and cook gently till they are cooked.
