SLOW COOKER SQUIRREL AND VEGGIES
This slow-cooked squirrel is a no brainer for a first-time cooker of squirrel. My husband and 2 sons were very impressed as if I had been making this dish my entire life. The meat will fall off the bone.

- Place the onion, carrots, potatoes, bell pepper, garlic, chicken bouillon, salt, and pepper in a slow cooker. Lay the squirrel meat on top of the vegetable mixture. Pour enough water over the mixture to cover completely. Cover and cook on HIGH 6 hours. Stir the flour into the mixture and cook another 2 hours.

Steps:
- Combine the onion, celery, garlic, broth, pepper and squirrel in a large pot and bring to a boil; simmer until meat is very tender and easily removed from bones. Debone the meat and set aside; researve 1 cup cooking liquid.
- Fit the bottom crust into a pie pan.
- Combine the meat, vegetables reserved broth and cornstarch in a large bowl and mix well; spoon the mixture into the pie shell. Top with the second crust, press the edges to seal and cut vents in the top for steam to escape. Bake at 350 degrees until crust is browned, about 1 hour.

LLOYD'S SQUIRREL OR CHICKEN POT PIE
DH started from fluffernutter's Recipe #137552 #137552 (which came from the South Carolina Outdoor Press Association), but made so many changes that I am posting DH's version. I'm not a fan of pot pie, nor squirrel, so I told him he had to take total responsibility for any squirrel dish he fancied. To my surprise, his creation was delicious and had no strange taste at all; the meat tasted similar to dark meat chicken. He had 4 squirrels, which yielded a little over 1 pound of meat. He ended up with 2 pot pies because he wanted a lot of potato, and used full 15 ounce cans of lima beans and green peas. Our pot pies were packed with vegetables with squirrel accents. I appreciated that no cream soups nor heavy cream were used.

- 1. In large pot, cook squirrels by boiling in water to cover until tender. Remove from cooking broth, reserving broth; when squirrels are cool enough to handle, pull meat from bones.
- 2. In mixing bowl, combine flour, egg, milk, salt and pepper. Work into a small ball. On lightly floured board, roll dough out 1/8 inch thick, cut into 3 inch squares.
- 3. Heat reserved broth to boiling. Drop dough, squirrel meat, potatoes, and onion into boiling broth, adding in layers until everything is in pot. Cover pot and cook for 20 to 30 minutes, or until potatoes are tender and dough is cooked.

- Mix the flours, baking powder and salt in a large bowl. In a small pot, heat the milk until it's steaming, then turn off the heat. Stir in the fat until it's mostly melted in; a few bits that aren't melted are fine.
- Heat the bacon fat in a large pan over medium-high heat and add the cabbage and onions. Saute until softened, about 6 to 8 minutes. Salt this as it cooks. Add the squirrel meat, apple, walnuts and Cavender's seasoning (or black pepper), stir well and cook for a few minutes.
- If you have a tortilla press, get it out and cut a heavy plastic bag apart to make two plastic sheets that you'll use to keep the dough off the metal of the press. If you don't have a press, lay out a work space and flour it well.

- In a large Dutch oven or heavy-bottomed pot, heat oil over medium-high heat until almost smoking. Working in batches, brown the meat on all sides until lightly browned and allow it to drain on a paper towel. Add more oil to the pan as you need it for optimal browning.
- Add the onions, celery, and carrots and cook for about 5 minutes or until they are translucent and soft. Add the garlic and cook about 2 minutes more. Return the meat to the pan, then add the broth, Guinness, tomatoes, herbs, salt and pepper and allow to reach a boil. Scrape the bottom of the Dutch oven to loosen the brown bits and reduce the heat to simmer, leaving the mixture uncovered for an hour or until it has thickened.
- Pour mixture into a 9-inch pie dish and allow to cool completely. Brush the outer edges of the pie dish with melted butter and gently place the pie shell over the mixture, pinching the edges to seal. Brush the egg and water mixture over the pie crust to enhance browning. Transfer the pie into the oven for about 30–40 minutes or until the crust is baked through and browned. Serve immediately with rice and a salad.
