PORK- SPINACH PASTA TOSS
A light yet filling meal ready in less than 30 minutes. I found this online and tweaked it to fit our diets.

Steps:
- Boil pasta.
- Heat 2 Tbs of vinaigrette, add pork and brown.
- Add broth and remaining vinaigrette.
- Add onions, cook until glossy.
- Add spinach, cover to wilt.
- Add tomatoes, cook until warmed.
- Drain and toss in pasta, add 1/2 cup cheese and mix lightly.
- Plate adding remaining cheese and serve.

Whole wheat pasta, pork, tomatoes, onion and spinach tossed with bottled balsamic dressing. Easy summer meal. Recipe is from Kraft.

Steps:
- COOK spaghetti as directed on package, omitting salt. Meanwhile, heat 2 tablespoons dressing in large skillet on medium-high heat. Add meat; cook 5 to 6 minute or until done, stirring occasionally. Remove from skillet; cover to keep warm.
- ADD remaining dressing, onions and garlic to skillet; cook and stir 2 to 3 minute or until onions are crisp-tender. Add tomatoes; cook 1 minute Add broth and meat; stir. Bring to boil, stirring occasionally.
- DRAIN spaghetti. Add to ingredients in skillet with the spinach and 1/2 cup cheese; mix lightly. Top with remaining cheese.

PARMESAN PORK WITH TOMATO & OLIVE SPAGHETTI

Steps:
- Put the pork in a bowl with 1 tsp oil, 1 tsp sage, 1 garlic clove and lots of black pepper. Mix well, put on a tray and scatter with the cheese.
- Heat the remaining 2 tsp oil in a pan and fry the carrot, celery and remaining garlic and sage for 5 mins, stirring frequently. Add the olives, tomato purée, bouillon and 200ml water, cover and cook for 5-8 mins or until the veg is tender.
- Meanwhile, cook the spaghetti following pack instructions and heat the grill. Grill the pork for 6 mins, then leave to rest. Drain the spaghetti, reserving a little water, and toss into the veg with the tomatoes and parsley. Add the water to loosen, then serve with the pork.

Steps:
- Cook and drain pasta as directed.
- While pasta is cooking, in a large pot, heat olive oil and saute chicken, garlic, salt, garlic powder, basil, and oregano until chicken is cooked.
- Add sun-dried tomatoes and cook for two minutes.
- Remove from heat and toss with pasta.
- Serve with grated Parmesan cheese if desired.
