I had some turkey kielbasa in the freezer and I wanted to do something a little more creative than open a can of sauerkraut to serve with it.

13 ounces whole wheat spaghetti
28 ounces spaghetti sauce, no sugar added
2 teaspoons olive oil
1 large yellow squash
1 medium onion, chopped
8 ounces mushrooms, raw, sliced
1 large red pepper, sliced
14 ounces turkey kielbasa, sliced

Steps:

  • Put olive oil in skillet and make sure the bottom is coated. Chop onion and saute 2-3 minutes or until translucent. Add squash, pepper and mushrooms. Cook until tender. Add sauce and kielbasa. Cook on medium for 20 minutes. Meanwhile, boil spaghetti in large pot. When spaghetti is done, drain well and add sauce, which will be nice and chunky.

This Turkey Kielbasa Pasta Bake is an easy, lightened-up comfort food that the whole family will love! Turkey kielbasa and penne pasta tossed in a rich, flavorful cream sauce and topped with gooey mozzarella.

¼ cup salted butter
1 small onion
1 teaspoon minced garlic
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
¼ cup all purpose flour
2 cups whole milk ((you can use half and half for a richer flavor))
1 cup low sodium vegetable broth
3 cups dry penne pasta ((high fibre if desired) 275 grams)
2 cups turkey kielbasa ((halved and sliced) 280 grams)
1½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F if baking right away (optional: you can also cover and refrigerate or freeze for another day). Lightly grease a 9x13" baking dish.
  • Melt the butter in a medium skillet over medium-high heat.
  • Add the onion and cook until softened and translucent. Stir in garlic, Italian seasoning, salt, and pepper and cook 1 minute.
  • Stir in the flour until no white streaks remain. Cook for 1 minute.
  • Whisk in the milk and broth, and cook over medium heat until thickened, stirring constantly. This should take between 5-10 minutes.
  • Meanwhile, cook the penne pasta to al dente in a large pot of boiling, salted water (according to package directions). Drain.
  • Combine cooked pasta, thickened sauce, and sliced kielbasa in baking dish and stir well.
  • Top with shredded cheese and bake until bubbly, about 20-25 minutes. You can also place in the refrigerator to cool, then cover and refrigerate up to 4 days or freeze up to 3 months.

1 cup shredded parmesan cheese
1 cup pizza sauce
1 cup sauted Baby Spinach
3 cups cooked penne pasta

Steps:

  • Preheat oven to 350 degrees.
  • Cook kielbasa in frying pan.
  • Combine all ingredients into casserole dish except cheese.
  • Sprinkle cheese on top.
  • Place in oven for 7-10 minutes.
  • Let cool for 5 minutes and serve.

1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
1/2 cup chopped green pepper
1/4 cup chopped onion
1/2 teaspoon minced garlic
2 tablespoons vegetable oil
2 cans (14-1/2 ounces each) stewed tomatoes
1 package (9 ounces) refrigerated angel hair pasta
1/2 cup grated Parmesan cheese
2 tablespoons butter, melted

Steps:

  • In a large skillet, saute the kielbasa, green pepper, onion and garlic in oil until sausage is lightly browned. Stir in tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Meanwhile, cook pasta according to package directions; drain. Stir in Parmesan cheese and butter. Serve with kielbasa mixture.

2 green bell peppers
1 red bell pepper
1 teaspoon garlic powder

Steps:

  • Cook pasta according to package, drain and set aside.
  • Heat a large nonstick skillet over medium heat. Add olive oil.
  • Add sausage and cook for 5 minutes or until browned stirring often.
  • Add bell peppers, onions, and zucchini. Cook until slightly softened.
  • Add Tomatoes and seasonings. Bring to a boil; reduce heat, and simmer 5 minutes.
