Steps:
- For the Loaf.
- 1.Preheat Oven to 350.
- 2.Grease & Flour a Loaf Pan.
- 3.Cream Butter and Sugar together.
- 4.In a separate bowl mix eggs and vanilla well, add lemon juice and zest.
- 5.Add egg mix into the butter mix, beat slowly.
- 6.Add remaining Ingredients and mix well.
- 7.Bake for 40 Mins,.
- For the Glaze.
- 1.Mix all ingredients in a bowl until well combined and spread over warm loaf.
GLAZED LEMON POUND CAKE LOAF
Steps:
- Preheat oven to 325 F. (not convection bake). Spray an 8x4-inch loaf pan with baking spray and line with a piece of parchment paper that covers the bottom and long sides, with an inch or so extending past the top of the pan (these will be the "handles" to lift the loaf out of the pan).
- In a large bowl with an electric mixer or in the bowl of a stand mixer fitted with a paddle attachment, cream the butter with the sugar at medium speed (about "4 or 5" on a KitchenAid mixer) until light coloured and fluffy. (Don't skimp on this process. It should cream about 3 minutes). Add the eggs one at a time and beat in well after each addition, scraping down the sides of the bowl, as needed. Beat in the lemon zest, lemon juice and vanilla.
- In a separate bowl, whisk together well the flour, salt, baking soda and baking powder. With mixer on low, add the flour mixture to the butter mixture alternately with the sour cream, starting with 1/3 of the flour, 1/2 of the sour cream, 1/3 of the flour, last of the sour cream, then finally the last of the flour.
- Scrape into prepared 8x4-inch loaf pan and level batter. Bake in preheated oven for 55-60 minutes, or until a tester inserted in the centre comes out clean.
- Allow to cool in the pan for 15 minutes, then run a knife along the short ends and use the parchment paper edges to lift and remove from pan. Allow to cool on a cooling rack.
- While loaf is still a little warm, prepare the glaze by stirring together all the glaze ingredients in a small bowl, adding enough lemon juice to make a pourable glaze. Place a baking tray under the cooling rack to catch any drips and spoon glaze slowly over top of loaf, allowing it to drip down the sides a bit. Cool completely, then slice and enjoy.

- Cream the butter with the sugar.
- Add the egg and lemon peel and beat well.
- Combine the flour, baking powder and salt.
- Add the flour mixture to the creamed mixture alternately with milk, beating well after each addition.
- Spoon the batter into a well greased 9 X 5-inch loaf pan.
- Bake at 350°F about 55 minutes or until a fork or toothpick inserted comes out clean.
- Shortly before removing the bread from the oven, make the glaze: combine the powdered sugar and lemon juice and stir until the sugar dissolves.
- Pour the glaze over the bread while it's still in the pan and hot.
- Let stand 20 min before turning out on a rack, then let cool before slicing.

- Preheat the oven to 350°F for metal, or 325F for glass or stoneware.
- Butter a 6-cup loaf pan (8 1/2 x 4 1/2 x 2 1/2-inch) and line it with parchment or wax paper.
- In a medium bowl, combine the flour, baking powder and salt.
- In a mixer cream the butter, sugar, and lemon zest.
- With the mixer running at low speed, add the eggs one at a time; add the vanilla.
- Working in alternating batches, and mixing after each addition, add the dry ingredients and lemon juice to the butter mixture. Mix until just smooth.
- Pour into the prepared pan and bake until raised in the center and a tester inserted into the center comes out dry and almost clean (a few crumbs are OK), about 50 to 60 minutes ~ Depending on your oven, and the kind of pan you use, please check the cake at 45 minutes to be sure!.
- When the cake is done, let cool in the pan 15 minutes (it will still be warm). Run a knife around the sides of the pan.
- Set a wire rack on a sheet pan with sides (to catch the glaze) and turn the cake out onto the rack. Peel off the wax paper.
- Lemon Glaze:.
- Combine zest, lemon juice, salt, and sugar in a microwave safe bowl ~ microwave for 1 minute; remove and stir until sugar is completely dissolved.
- Using a pastry brush, spread Lemon Glaze all over the top and sides of the cake.
- Repeat until the entire glaze is used up, including any glaze that has dripped through onto the sheet pan.
- Let cool at room temperature or, wrapped in plastic wrap, in the refrigerator.
- Serve at room temperature, in thin slices.

- Sift together flour, baking powder and salt, set aside.

- Preheat oven to 350 F.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, combine eggs, yogurt, and sugar, and beat with a hand mixer until smooth. Add in oil, lemon extract, lemon zest, and lemon juice and continue to beat until smooth.
- Gradually add in the dry ingredients and beat until just combined (about 30-60 seconds). Do not overmix.
- Pour the batter into a greased loaf pan, and bake for 50 mins. Check that it is done with a toothpick.
- Place pan on a wire rack and allow the loaf to cool in the pan for an hour. Then, remove loaf from the pan and allow it to cool on a wire rack for another 1-2 hours, until completely cooled.
- In a small bowl, add the icing sugar. Slowly add in the lemon juice and continually stir until smooth and desired consistency is achieved. The icing should be thick but can still be poured. If the icing is too runny, add more sugar. If it is too thick, add some more lemon juice.
- Evenly drizzle glaze over the lemon loaf and allow it to set and dry before slicing the loaf.

- Preheat the oven to 350 degrees F.
- Line a 9x5 in loaf pan with parchment paper for easy removal. Or you could spray the pan with nonstick spray. (Or line with foil; be sure to grease.)
- In a medium bowl, whisk together the dry ingredients: 1 and 3/4 cup flour, 1 cup sugar, 1 and 1/2 teaspoons baking powder, and 1/2 teaspoon salt.
- Use a microplane grater to zest 2 large lemons into the dry ingredients. You want at least 2 tablespoons. Whisk it all together and set aside.
- In a small bowl, microwave 1/4 cup butter until melted. Set aside to cool a bit.
- In another large bowl* or stand mixer, add the wet ingredients: beat 2 large eggs until combined and smooth. Add 1/4 cup oil, 1 cup sour cream, and 1/3 cup lemon juice.
- Add in the melted butter. Stir it all together.
- Add the dry ingredients (and then wipe out the dry bowl and put it back in your cupboard.) Stir until combined. Make sure that everything is incorporated, but do not over beat. A few lumps are ok. See photos above to see the batter.
- Pour the batter into the prepared pan and smooth out the top.
- Bake at 350 for about 45-52 minutes. Every oven is different, so start checking early. The bread is done when there are brown spots on top and a toothpick, when inserted in the center, comes out with no wet batter on it.
- Let the pan cool on a wire rack for 20 minutes before lifting the bread from the pan. Let the bread continue cooling on the wire rack while you make the glaze.
- To make the glaze, add 2 cups of powdered sugar to a medium bowl. If it looks rather clumpy, sift it through a strainer so that you don't have lumps in your glaze.
- Add 3 tablespoons lemon juice to the bowl and use a whisk to combine. Add more lemon juice if necessary to get a glaze consistency that easily drips off of a spoon.
- Glaze the bread in increments. Add about 1/3 of the glaze to the cooled bread and spread to the edges, letting it drip down the sides. Allow the glaze to set for 10-20 minutes until it has formed a crust. (Stick it in the fridge or freezer to speed this up.)
- Add another 1/3 of the glaze and let set as before.
- Add the rest of the glaze and let set completely. You don't have to add the glaze in stages like this, but it's the best way to get a really thick glaze on top of the bread.
- Slice the bread and serve!
- Store the bread covered on the counter for 2-3 days. After that, store in the fridge.
- This bread can be frozen and served later! Let thaw on the counter in the container that you froze it in (sealed).

- Grease and line a 11cm x 23cm pan.
- Sift together flour and baking poowder.

This is a delicious, moist lemon loaf made with yogurt and glazed with lemon syrup. It's quick and easy to make and my whole family loves it.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan with butter and dust with some flour.
- Combine flour, baking powder, and salt in a bowl; set aside.
- Combine yogurt, sugar, oil, lemon zest, and vanilla extract in a large bowl. Beat well with an electric mixer for 3 to 5 minutes. Add eggs one at a time, beating well after each addition.
- Sift the flour mixture on top of the batter and fold in with a spatula. Pour batter into the prepared loaf pan.
