SKILLET CROOKNECK SQUASH AND ONIONS
We. Love. Squash. Simple, with only 3 other ingredients, besides salt and pepper, this recipe sets off the delicious, slightly sweet flavor of crookneck or summer squash. Mom used to stew squash, but this vegetable releases a lot of water when it cooks, so I don't add any water. The long, slow cooking helps to release the natural sugars in the onion and the squash. You can add additional herbs or seasonings, if you like, or cook it for less time to make it firmer, but this is how we do it. Just squash.

Steps:
- Melt ghee in a large nonstick skillet over medium heat. Add onion and cook, stirring occasionally, until onion is soft and fragrant, about 2 minutes. Add squash, season with salt and pepper, and cook, stirring frequently, for 5 more minutes.
- Adjust seasoning with salt and pepper and serve warm, garnished with fresh parsley.

SQUASH, YELLOW CROOKED NECK OLD SOUTHERN STYLE
WARNING! WARNING! This recipe is NOT fat or sugar free! Definitely NOT for diabetics, dieters, or the faint hearted! This is an old Southern style way of cooking squash. My family LOVES this. I only make it once or maybe twice a year when fresh yellow crook neck is available. So it is a real treat for them. I like to serve this...

Steps:
- 1. Wash and cut ends off of squash
- 2. Slice squash into slightly less than pencil width sized rounds
- 3. Add to boiling water and salt to taste Drain when fork tender (15-20 minutes)
- 4. While squash is cooking, slice/dice bacon. I usually stack about 4 of the slices of bacon and cut it down the center lengthwise, then slice the strips into pencil width pieces. (I use the best and leanest bacon I can find and I use 2 to 3 strips per pound of squash.)
- 5. Add cut bacon to large frying pan and cook until crispy on med-low heat turning frequently. Do NOT drain off fat.
- 6. When both bacon and squash are cooked, add drained squash to undrained bacon and stir to mix.
- 7. Add sugar and margarine and let cook down for another 15 to 20 minutes.
- 8. Serve hot.
- 9. NOTE: If making a smaller or larger amount of squash, just use about 1/4 cup of sugar and 1/4 stick of margarine and 2-3 slices of bacon per pound of squash.
SOUTHERN YELLOW SQUASH WITH ONIONS
This recipe is based upon my MIL's (she never measures anything). It is my family's favorite way to eat squash and I always make a double batch of it.

Steps:
- Fry bacon until crisp, remove from skillet.
- Add chopped onion, cook until translucent.
- Add sliced squash fry stirring frequently until squash is tender.
- Season with salt and pepper.
- Crush bacon and add back to pan.
- Either yellow zucchini or crookneck squash work well in this dish.

- Preheat oven to 350°F. Melt 3 tablespoons of the butter in a large skillet over medium-high. Add squash, onion, and 1 teaspoon of the salt; cook, stirring often, until center of squash is just tender and liquid has evaporated, about 10 minutes. Transfer mixture to a colander set over a bowl. Drain 5 minutes; discard any liquid.
- Stir together eggs, sour cream, Cheddar and Swiss cheeses, mayonnaise, thyme, pepper, and remaining 1 teaspoon salt in a large bowl. Gently fold in squash mixture. Spoon into a lightly greased 11- x 7-inch (2-quart) baking dish.
- Microwave remaining 3 tablespoons butter in a medium-size microwavable bowl on HIGH until melted, about 25 seconds. Toss together crackers, Parmesan cheese, and melted butter until combined; sprinkle over casserole. Bake in preheated oven until golden brown, about 20 minutes.

- 1. Choose young paler yellow squash that has dropped the bloom. Older, darker yellow squash will be tougher & more seedier.
- 2. Slice yellow squash, with skin on, about 3/16" thick.
- 3. Mix the egg & milk & then drop in the sliced squash.
- 4. With flour in another bowl or using your batter pro, dredge in flour, making sure you pat it on to make it adhere to squash good.If using batter pro, no need to pat it on.
- 5. Squash is now ready to fry.
- 6. Heat about 2" canola oil in cast iron skillet or dutch oven.
- 7. Drop squash, one at a time into hot oil, turning only once when the first side is browned.
- 8. Let the second half brown & get crispy.
- 9. Remove from skillet & place on paper towels to drain. As soon as you take it out, while still hot, salt & pepper it. Cover with another paper towel while you finish the rest of it.
- 10. Goes good with anything.
- 11. Another way we do this is to bread it as mentioned & then lay it in layers in a pan like fried potatoes & let it crust on bottom before you start turning it over in the pan. It kind of steams it too. It's like cooking fried potatoes.
CROOKNECK SQUASH CASSEROLE
This is the yummiest squash casserole I have ever run across. I don't only make it in the fall, I get a yearning for it all year long. It truly deserves the description "squash fantastic!"

- Preheat the oven to 350 degrees F (175 degrees C). Slice squash.
- Add 1 teaspoon salt to a pot of water and bring to a simmer. Add squash slices and simmer, uncovered, for 15 minutes. Drain.
- Put squash in a bowl and add 4 tablespoons butter. Gently blend in sour cream, Cheddar cheese, Parmesan cheese, green onions, sugar, and remaining 1 teaspoon salt. Transfer to a round casserole dish. Top with bread crumbs and dot with remaining 3 tablespoons butter.
- Cook in the preheated oven until hot and bubbly, about 30 minutes.
