SPAGHETTI SQUASH STIR-FRY

Spaghetti Squash Stir-Fry image

This is a great way to use this healthy squash. Chef's note 9/13: I just changed it up and it worked perfectly. I used the squash as directed and added more carrots (I didn't have bell peppers). I used the broth and soy sauce as well as a heaping tablespoon of spicy black bean sauce. It was so tasty, I put it under a chicken and broccoli stir fry and I didn't need any rice.

Provided by CaliforniaJan

Categories     Vegetable

Time 45m

Yield 8 serving(s)

Number Of Ingredients 11

1 spaghetti squash (about 3 pounds)
2 carrots, julienned
1 cup onion, chopped
2 garlic cloves, minced
2 green bell peppers, seeded and julienned
2 red bell peppers, seeded and julienned
1 cup vegetable broth
2 tablespoons soy sauce
1 teaspoon basil, dried
1/2 teaspoon pepper
1/4 cup parmesan cheese, grated

Steps:

  • Pierce the squash with the tip of a sharp knife in several places; place on a paper plate and microwave on high 20 minutes, until just softened, turning once during cooking. Let stand 5 minutes to cool. Cut the squash in half lengthwise and remove the seeds. Using a fork, scoop out the pulp. Measure out 6 cups of squash (reserving any remaining squash for another use).
  • Spray a large nonstick skillet or wok with nonstick spray; heat. Add the vegetables and cook, stirring as needed, until tender-crisp, 7 - 8 minutes.
  • Stir in the spaghetti squash, broth, soy sauce, basil and black pepper; cook until heated through, about 2 minutes. Serve, sprinkled with cheese.

SPAGHETTI SQUASH STIR FRY RECIPE BY TASTY

Spaghetti Squash Stir Fry Recipe by Tasty image

Here's what you need: spaghetti squash, canola oil, kosher salt, cornstarch, cold water, garlic, fresh ginger, red pepper flakes, soy sauce, honey, sesame oil, rice vinegar, water, canola oil, garlic, boneless, skinless chicken breast, red pepper flakes, kosher salt, red bell peppers, broccoli, water, carrots, snow pea, scallion

Provided by Tikeyah Whittle

Categories     Dinner

Time 1h15m

Yield 4 servings

Number Of Ingredients 24

1 spaghetti squash, halved lengthwise and seeded
2 tablespoons canola oil
½ teaspoon kosher salt, divided
1 tablespoon cornstarch
1 tablespoon cold water
3 cloves garlic
1 fresh ginger, peeled and minced (2 in piece 5 cm)
¼ teaspoon red pepper flakes
⅓ cup soy sauce
1 tablespoon honey, or granulated sugar
1 tablespoon sesame oil
1 tablespoon rice vinegar
¼ cup water
2 tablespoons canola oil, divided
2 cloves garlic, thinly sliced, divided
1 lb boneless, skinless chicken breast, or thighs, cut into 1-inch (2.5 cm) cubes
¼ teaspoon red pepper flakes, divided
½ kosher salt, plus more to taste
2 red bell peppers, seeded and thinly sliced (about 2 cups (200 G))
½ lb broccoli, cut into 1-inch (2.5 G) florets (about 3 cups)
2 tablespoons water
2 carrots, thinly sliced
6 oz snow pea, ends trimmed, halved crosswise (about 1½ cups)
scallion, for garnish, thinly sliced

Steps:

  • Preheat the oven to 400°F (200°C).
  • Place the squash halves, cut-side up, on a baking sheet. Coat the exposed flesh with the canola oil, then sprinkle with ¼ teaspoon salt. Flip over so the cut side is down, then bake for 40-50 minutes, until the squash is just barely tender when pierced with a fork. Remove from the oven and let cool slightly.
  • Line a baking sheet with 2 clean kitchen towels.
  • Use a fork to scrape out the "spaghetti" strands from the squash onto the prepared baking sheet and season with the remaining ¼ teaspoon salt, tossing to distribute. Let cool for 30 minutes. The spaghetti squash can be made ahead and stored in the refrigerator in an airtight container for up to 2 days. If using from the cold, remove the squash from the refrigerator 30 minutes before cooking.
  • While the squash is cooling, make the sauce: In a medium bowl, whisk together the cornstarch and cold water until smooth. Grate the garlic on a microplane directly into the bowl. Add the ginger, red pepper flakes, soy sauce, honey, sesame oil, and rice vinegar and stir to incorporate. Whisk in the water until smooth.
  • Make the stir fry: Heat 1 tablespoon canola oil in a 12-inch skillet or wok over medium-high heat. Add 1 clove of garlic and stir for about 30 seconds, until fragrant. Add the chicken, ⅛ teaspoon red pepper flakes, and ½ teaspoon salt and stir to coat. Cook the chicken for 6-8 minutes, letting it brown without stirring, until no pink remains and the chicken is cooked through. Transfer the chicken to a plate or bowl.
  • Reduce the heat to medium. Without wiping out the pan, add the remaining tablespoon canola oil, remaining garlic clove, and remaining ⅛ teaspoon red pepper flakes and cook for 30 seconds, until fragrant. Add the bell peppers and broccoli, stir to coat, then deglaze the pan with the water, scraping up all the browned bits stuck to the bottom of the pan. Cook, stirring occasionally, until the broccoli is starting to soften, 8-10 minutes.
  • Add the carrots and cook for another 2 minutes, then add the snow peas and season with a pinch of salt. Cook for another 2-3 minutes, until all of the vegetables are tender. Transfer the vegetables to the plate with the chicken.
  • Roll up the spaghetti squash in the kitchen towels and wring to squeeze as much water as possible.
  • Add 2 tablespoons of sauce to the pan and let come to a simmer, then add the spaghetti squash and stir constantly until heated through, 1-2 minutes. Divide the squash among serving bowls.
  • Pour the remaining sauce into the pan and let simmer for about 1 minute, until thickened. Return the chicken and vegetables to the pan and toss to coat evenly in the sauce and heat everything through, 2-3 minutes. Divide among the bowls atop the squash. Garnish each bowl with thinly sliced scallions. Serve immediately.
  • Enjoy!

SAUSAGE, SQUASH, ONION STIR FRY

Sausage, Squash, Onion Stir Fry image

This is one of my "dumpster" recipes. I call it that because we just "dumped" in things we found in the fridge! One of those end of the week "this is all we have" meals! I call it a "stir fry" because we made it in the wok but we cooked the squash down. You could serve over rice for a real Asian feel if you wanted.

Provided by RubyImage

Categories     One Dish Meal

Time 25m

Yield 4 serving(s)

Number Of Ingredients 7

1 lb smoked link sausage (kielbasa, turkey sausage, etc)
2 yellow squash
1 zucchini
1 medium onion
1 tablespoon margarine
1 teaspoon salt (to taste)
1 teaspoon pepper (to taste)

Steps:

  • Slice sausage into 1/4" "rounds" (like disks).
  • Slice squash width wise (like discs).
  • Cut Onion into rings.
  • Microwave onions and squash covered for 3 minutes (or until preferred doneness - this is just to save cook time in the skillet).
  • Brown sausage in margarine (we like it browned til crispy/crusty on the outside).
  • Add squash and onions.
  • Mix well (we like the squash and onions to be caramelized).
  • Add salt and pepper to taste (the sausage is already salty so salt may not even be needed!).
  • Serve piping hot! Variation: Serve over fried rice!

Meet the Cook: The first summer that my husband and I were retired, we had an abundance of squash. We also enjoy travel - with three children and eight grandchildren scattered, it's a good thing! -Erlene Cornelius, Spring City, Tennessee

SPAGHETTI SQUASH STIR-FRY

Spaghetti Squash Stir-Fry image

An easy, colorful stir-fry with spaghetti squash noodles, flavorful tofu, and tons of fresh veggies! Just 10 ingredients required for this plant-based main or side!

Provided by Minimalist Baker

Categories     Entree     Side

Time 1h

Number Of Ingredients 19

1 (14-ounce) block extra firm tofu
1 Tbsp toasted sesame oil ((or sub avocado oil))
1 Tbsp coconut aminos ((or tamari))
3 cups cooked spaghetti squash* ((~1 small (2 lb) or 1/2 large (5 lb)))
1 Tbsp toasted sesame oil ((or sub avocado oil))
3 cups sliced shiitake mushrooms ((~8 ounces))
1 medium red bell pepper, diced
2 large cloves garlic, minced
1 Tbsp freshly minced ginger
4 stalks green onions, thinly sliced ((optional))
2 Tbsp peanut butter ((or other nut/seed butter))
2-3 Tbsp coconut aminos ((or half as much tamari))
1 Tbsp maple syrup
1 Tbsp lime juice
1-2 tsp chili garlic sauce ((optional // or sub red pepper flakes to taste))
Lime wedges
Thinly sliced green onion
Freshly chopped cilantro
Chopped peanuts

Steps:

  • TOFU (optional): Preheat the oven to 400 degrees F (204 C) and line a baking sheet with parchment paper. Drain liquid from the tofu and wrap the block of tofu in a clean dish towel to dry it out a bit. Then cut into 1/2-inch cubes and place on the parchment-lined baking sheet. Add toasted sesame oil and coconut aminos and toss to coat. Spread into an even layer and bake for 25-30 minutes, flipping halfway through, or until golden brown with crispy edges. Set aside.
  • SPAGHETTI SQUASH: If you don't already have leftover cooked spaghetti squash, prepare at this time in either the Instant Pot or oven. The Instant Pot is our preferred method when short on time and the oven is preferred for superior flavor. Shred with a fork and set aside.
  • SAUCE: Prepare sauce by adding all ingredients (peanut butter, coconut aminos or tamari, maple syrup, lime juice, and chili garlic sauce (optional)) to a small mixing bowl and whisking to combine. Taste and adjust flavor as needed, adding more chili garlic sauce for heat, lime juice for acidity, maple syrup for sweetness, peanut butter to thicken, or coconut aminos for saltiness and depth of flavor. Set aside.
  • STIR-FRY: Heat a large skillet over medium-high heat. Once hot, add sesame oil, mushrooms, and bell pepper. Cook, stirring occasionally, for 4-6 minutes or until tender. Reduce heat to medium if browning too quickly. Add garlic, ginger, and green onion (optional) and cook for 1 minute or until fragrant. Add tofu, 3 cups cooked spaghetti squash (adjust amount if altering number of servings), and sauce, and stir to coat evenly with sauce. Cook for 2 minutes or until warmed.
  • GARNISH: Optionally, garnish with lime wedges, sliced green onion, cilantro, and chopped peanuts. Add sriracha or chili garlic sauce for a little more heat.
  • Best when fresh. Leftovers will keep covered in the refrigerator for up to 2-3 days. Reheat in the microwave or in a skillet over medium heat until warmed. Not freezer friendly.

Categories     main-dish

Time 30m

Number Of Ingredients 13

4 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh thyme
Kosher salt and freshly ground black pepper
Pinch of red pepper flakes
1 pound chicken or turkey breast, cut into 1-inch pieces
1 small onion, cut into 3/4-inch dice (about 1 cup)
1 red bell pepper, seeded and cut into 3/4-inch dice (about 1 cup)
2 cloves garlic, minced
2 small summer squash, seeds removed and cut into a 3/4-inch dice (about 1 1/2 cups)
8 to 10 small cherry tomatoes, mixed colors
1/3 cup loosely packed fresh basil leaves
Rice, for serving

Steps:

  • Combine 2 tablespoons olive oil, lemon juice, thyme, 1/4 teaspoon salt, pepper, and red pepper in a large bowl. Add the chicken or turkey and toss. Marinate 15 minutes.
  • Drain the meat and pat very dry. Heat a wok or large skillet over high heat. Add the remaining 2 tablespoons oil to the pan. Add the chicken and stir-fry until opaque and firm, about 4 minutes. Use a slotted spoon to transfer to a large bowl. Add the onion and pepper to the pan and stir-fry, until softened, 1 to 2 minutes. Add to the chicken. Add the squash to the pan, and stir-fry until tender-crisp, about 2 minutes. Add to the chicken. Add the tomatoes and garlic to the pan and stir-fry until glazed and slightly charred, about 2 minutes longer. Return the chicken and vegetables to the pan. Season with salt and pepper. Heat until warmed through, about 2 minutes. Add the basil and toss to combine. Serve with rice.

  • Spiralize the butternut squash using the smaller noodle setting on the spiralizer. You can use the large noodle setting, but will need to adjust the cooking time of the noodles as they will take longer to cook.
  • Heat a large saute pan over medium heat with the 2 tablespoons of olive oil. Add in the shrimp and cook until they are just cooked through and turn pink, about a couple minutes on each side. Season the shrimp lightly with salt and pepper and remove from the pan for later use.
  • Add the butternut squash noodles to the pan and saute them for 5-8 minutes, or until they just start to cook through. Add in the snap peas and red bell peppers and saute for several minutes more, or until the peppers start to become softer.
  • In a small bowl, whisk together the hoisin, soy sauce, garlic, sesame seeds, red pepper flakes and honey until combined. Pour the sauce over the butternut squash noodles and veggies in the saute pan and toss to coat. Add the shrimp back into the pan and toss again to combine. Cover the stir fry with a lid to steam the noodles for a few minutes. Remove the lid and serve the stir fry when the butternut squash noodles have reached desired texture. If you prefer them to be less crunchy and more soft, reduce the heat to medium-low and continue the saute process until they reach a firmness you desire.
