Steps:

  • Cook pasta according to package directions; drain. Return to pan. Stir in RAGÚ® Chunky Tomato, Garlic and Onion Sauce and meatballs. Transfer to 3-quart rectangular baking dish. Bake, covered, in a 350 degrees F oven for 30 minutes.
  • Meanwhile, in a small bowl combine mozzarella cheese and Parmesan cheese. Uncover pasta mixture and top with cheese mixture and bake, uncovered, for 10-15 minutes more.

My SO is trying to cut down on carbs and I'm not,so I wanted to come up with a recipe that both of us would enjoy.If desired, you can brown the meatballs for a better flavor.The time for browning the meatballs isn't included in the cooking time. The "ZAAR" database doesn't have the carb count for the meatballs, and the vegetable blend, so my SO and I figured the amount of carbs for 6 servings would be 13 grams for each serving. So if you decide to try this, I hope you enjoy.Submitted to "ZAAR" on June 2,2008.

1 (16 ounce) bag california-blend frozen vegetables, thawed (broccoli,cauliflower,and carrots )

1 1/2 teaspoons garlic powder
3/4-1 teaspoon crushed red pepper flakes

  • Preheat oven to 350 degrees.

  • In a large bowl,combine all ingredients mixing well.

Steps:

  • Cook pasta according to package directions; drain. Return to pan. Stir in pasta sauce, meatballs, and tomato sauce. Transfer to an ungreased 13x9x2-inch glass baking dish or 3-quart rectangular casserole. Bake, covered, in a 350 degrees F oven for 30 minutes.
  • Meanwhile, in a small bowl combine ricotta cheese and Parmesan cheese. Uncover pasta mixture and spoon ricotta mixture in mounds over pasta mixture. 1 lb ground beef
1 lb hot italian sausage
4 cloves garlic, minced
½ cup fresh parsley, chopped
½ cup parmesan cheese
1 teaspoon salt
½ teaspoon pepper
1 cup italian bread crumbs
2 eggs
1 cup milk
24 oz marinara sauce
2 cups mozzarella cheese

Steps:

  • In a large mixing bowl, combine ground beef, Italian sausage, garlic, parsley, parmesan cheese, salt, pepper, bread crumbs, eggs, and milk. Mix until everything is fully infused together.
  • Roll into 4-5 ounce (113-142 g) meatballs. For even amounts, use a medium-sized ice cream scooper.
  • Preheat oven to 425°F (220°C).
  • Over medium heat, add 1 tablespoon of olive oil to a pan, and brown the meatballs on both sides for about 2-3 minutes or until you create a nice crispy sear. Cook about half way through. They will finish cooking in the oven.
  • In a casserole dish, spread a few tablespoons of marinara sauce to the bottom of the pan to help prevent sticking. Then place meatballs in the casserole dish and add the remaining jar of marinara sauce. Top with 2 cups of shredded mozzarella cheese.
  • Cover in foil and bake at 425°F (220°C) for 25 minutes or until the cheese is fully melted and the meatballs are fully cooked.
  • Serve and garnish with parsley.

  • Preheat oven to 350 degrees Fahrenheit.
  • Line a 9″ x 13″ deep dish bakeware pan with 12 ounces of marinara.

2 cups medium shells (uncooked)
1 1/2 - 2 lbs small cooked meatballs (see NOTES)
1 cup process cheese (like Velveeta cubed)
1/2 sleeve buttery crackers (crushed (like Ritz))
1 tbsp butter (melted)
1/4 cup flour
2 tbsp butter
2 cups rich beef stock (see NOTES)
1 can (10.75 oz cream of mushroom soup (I use reduced sodium))

Steps:

  • Preheat oven to 350 degrees F. Spray a 1 1/2-2 quart baking dish or casserole.
  • Cook shells per package instructions.
  • To make sauce: In a medium saucepan, melt the 2 tbs butter over medium heat. Stir in the flour making sure there are no lumps. Cook over medium heat until the flour/butter mixture bubbles.
  • Gradually add the beef stock, stirring constantly so mixture remains smooth. Cook, stirring frequently over medium heat until mixture begins to thicken and bubble. Add the cubed process cheese and cook over low heat until cheese is melted; about 4-5 minutes.
  • Place the mushroom soup in a large bowl. Gradually stir in the cheese sauce until well blended and smooth.
  • Fold in the cooked shells and meatballs. Turn into prepared baking dish.
  • Mix the 1 tbs melted butter with the crushed cracker crumbs; toss to coat. Sprinkle over top of casserole.
  • Bake for 35-30 minutes or until heated through and crumbs are golden brown.

Steps:

  • Prepare mashed potatoes and meatballs: Prepare mashed potatoes as specified in my recipe here. Prepare Italian meatballs including sauce as specified in my recipe here.
  • Prep oven: Preheat the oven to 350°F.
  • Prepare casserole dish: Spray a 9x13-inch casserole dish with a bit of cooking spray (I used my Le Creuset Braiser, link under equipment).

2 cups marinara sauce
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 400˚F.
  • In a large mixing bowl combine bread cubes and milk; let stand 5 minutes, or until the bread has absorbed all the milk.
  • Using two forks, shred the bread into tiny pieces and add grated onions, egg, garlic, beef, pork, Italian seasoning, salt, and pepper; mix it all together until thoroughly incorporated.
  • Chill mixture for 15 minutes so it's easier to roll the meatballs.
  • Form the mixture into 18 to 24 meatballs, they should be about the size of a ping pong ball.
