Shrimp Tartlets image

Fill mini tart shells with a cream cheese mixture, then top with seafood sauce and shrimp for a picture-perfect look and delightful taste. This recipe makes a fantastic appetizer, and several make a fast, light meal. -Gina Hutchison, Smithville, Missouri

Number Of Ingredients 9

1 package (8 ounces) cream cheese, softened
1-1/2 teaspoons Worcestershire sauce
1 to 2 teaspoons grated onion
1 teaspoon garlic salt
1/8 teaspoon lemon juice
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
1/2 cup seafood cocktail sauce
30 peeled and deveined cooked shrimp (31-40 per pound), tails removed
Optional: Minced fresh parsley and lemon wedges

Steps:

  • Beat the first 5 ingredients until blended. Place tart shells on a serving plate. Fill with cream cheese mixture; top with cocktail sauce and shrimp., Refrigerate until serving. If desired, sprinkle with parsley and serve with lemon wedges.

We had 2 sons who got married last year and I prepared all the food for their rehearsal dinners. I made these and they were a huge hit. Of course I had to make several batches as there were 30 people at each dinner.

1 8 oz. of soften cream cheese, regular or light
1 1/2 tsp worcestershire sauce
2 tsp grated onion
1 tsp garlic powder/salt
1/8 tsp lemon juice
2 pkg 1.9 oz each frozen mini phyllo tart shells
1/2 c cocktail sauce
30 deveined, peeled & cooked medium shrimp

Steps:

  • 1. In a small bow, combine the cream cheese, worcestershire sauce, grated onion, garlic power/salt and lemon juice. Blend well.
  • 2. Spoon into the tart shells and top with cocktail sauce and shrimp. Regrigerate until ready to serve.
  • 3. Tipp: You can either use the shrimp plain or steam them in old bay seasoning. I've made them both ways and either way is great. Enjoy.

All-purpose flour, for dusting
2 sheets frozen puff pastry, thawed
1 pint blueberries
2 cups halved strawberries
1/3 cup granulated sugar
1 lemon, juiced
Kosher salt
2 tablespoons heavy cream
1 cup heavy cream
1/4 cup powdered sugar, plus more for serving
1 tablespoon vanilla
1/4 cup fresh mint leaves, for garnish

Steps:

  • For the tarts: Preheat the oven to 425 degrees F. Line 2 sheet pans with parchment paper.
  • On a lightly floured work surface, lay out the puff pastry. Cut the puff pastry sheets in half, making 4 rectangles. Place 2 puff pastry rectangles on each sheet pan. Set aside.
  • Add the blueberries and strawberries to separate bowls. Divide the granulated sugar and lemon juice between the bowls. Season each with a pinch of salt and stir until well combined.
  • Divide the blueberries between 2 of the puff pastry rectangles, leaving a 1/4-inch border on all sides. Do the same with the strawberries and the remaining puff pastry rectangles. Pinch the corners of each rectangle, creating a slight lip. Brush the edges with the cream.
  • Bake in the lower half of the oven until golden and crisp, about 20 minutes.
  • For the whipped cream: While the tarts bake, add the cream, powdered sugar and vanilla to a large bowl. Using a hand mixer or whisk, whip until soft and billowy. Transfer to a serving bowl and chill until ready to serve.
  • Transfer the tarts to a cutting board. Let the tarts cool slightly before slicing approximately 6 times across each tart to create thin slices. Transfer to a serving platter. Scatter the mint leaves over the tart pieces and sprinkle with powdered sugar. Serve alongside the whipped cream.

Thinly sliced buttered bread takes the place of tart shells, although I have only made this recipe using the bread, I imagine that this could be made using small tart shells also maybe just prebake the tart shells slightly prior to filling them --- when purchasing the bread for this purchase the low calorie bread, it is usually the thin sliced and is the perfect thickness for the tarts :)

36 slices white bread (thin sliced)
1/4 cup butter, softened
1/4 cup butter
1/4 cup flour
1 1/2 cups half-and-half cream
1 1/4 cups cheddar cheese, grated
1 (7 ounce) can crabmeat (pick out any shells)
1 1/2 tablespoons green onions, minced
1 1/2 teaspoons lemon rind
1 tablespoon fresh lemon juice
2 tablespoons fresh parsley, finely chopped
1 teaspoon Worcestershire sauce
1 teaspoon prepared yellow mustard
salt (to taste)
1 dash Tabasco sauce

Steps:

  • Set oven to 375 degrees F.
  • To make the bread tart shells; generously butter small muffin tins.
  • Cut a 3-inch round from each slice of bread.
  • Press into muffin tins.
  • Bake for 10 minutes or until golden brown.
  • To make the filling; melt butter in a pan.
  • Stir in flour; whisk until bubbly (about 1-2 minutes).
  • Stir in half and half cream; cook whisking until thickened (about 1 minute).
  • Stir in grated cheese until melted.
  • Add in all remaining ingredients; mix until combined.
  • Fill each bread tartlet with mixture.
  • Bake for about 5 minutes or until bubbly.

  • Spray counter lightly with non-stick cooking spray. Roll each roll into a 5x10-inch rectangle. Using a 5-inch flower shaped cookie cutter, cut two flowers out of each rectangle. Carefully place each flower into a sprayed muffin cup. Press the petals against the sides of the cups.
  • Cover with plastic wrap and let rest 15 minutes. Remove wrap and press the petals again. Poke the bottoms a few times to prevent bubbles from forming. Bake at 375°F 5-7 minutes or until tips are golden brown. Remove flowers from muffin tin and place on cooling rack.
  • When cool, fill each one with 1-2 tablespoons seafood salad and garnish with a small sprig of fresh dill.
