Try these tossed in slaw, stirred into soup, or fried with roasted veg to make fritters.

Yield Makes about 2 1/2 cups

1 cup red lentils

Steps:

  • Rinse lentils in cold water; drain. Repeat 2 more times; transfer to a 1-qt. glass jar and add cold water to cover. Secure a layer of cheesecloth or a paper towel over top with a rubber band. Let sit 12 hours.
  • Drain lentils, re-cover, and let sit at room temperature, rinsing and draining 1 or 2 times daily, until sprouted, 1-2 days.
  • Lentils can be made 5 days ahead. Cover and chill.

Addictive and extremely healthy! Sometimes you can find sprouted lentils or bean medley in the higher-end markets, but you can sprout your own! TO SPROUT LENTILS: Measure about 6 to 8 tablespoons and soak them in plenty of water to cover overnight. The next morning, drain and rinse, and put them into a wide mouth jar covered with cheesecloth and secured with a rubber band. Lay the jar on its side and cover with a towel. Set aside on the kitchen counter to sprout for the day, rinsing them once or twice and draining them thoroughly. If the weather is cold, they may take a little longer to sprout. Rinse them and leave them until the next morning when you'll notice each lentil has sprouted a little tail. They will now be ready to enjoy. Time estimate does not include sprouting time. 1 1/2 cups sprouted lentils
1/2 cup seeded and chopped cucumber
1/2 cup diced seeded tomatoes
1/3 cup thinly sliced green onion
2 tablespoons chopped cilantro
1 tablespoon olive oil
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1 1/2 teaspoons dried oregano
1/2 teaspoon garlic powder
1 1/2 teaspoons curry powder
1/2 teaspoon dry mustard
1/2 cup small quartered red radish (optional)
salt and pepper

Steps:

  • Carefully rinse the sprouted lentils in a colander.
  • Add the chopped vegetables to the bowl and lightly toss them with the sprouted lentils.
  • In a small bowl, whisk together the remaining ingredients.
  • Drizzle the dressing over the vegetable mixture and toss gently again.
  • Allow the flavors to blend for 20 to 30 minutes before serving.

  • All you need to start sprouting lentils are the lentils themselves, a 32 oz. mason jar and a sprouting lid or cheesecloth. You want to make sure the lentils have enough room to expand in the jar, so if you want to double the recipe, use 2 jars instead of adding more lentils to the same jar.
  • Start by adding 1/2 cup of lentils to the mason jar and rinse them with water, removing any stones. You can rinse them by putting in water then putting the sprouting lid on the jar and draining the water out through the lid.
  • After rinsing the lentils, cover them completely with water and be sure that there is 1-2 inches of water over the lentils. Let the lentils soak in the water for about 8 hours. You can leave them overnight if you'd like.
  • Once the lentils have soaked for about 8 hours, drain the water from the jar. Place the jar at an angle upside down so that the sprouting lid is at the bottom. You can place the jar against the wall over a bowl to catch any excess water or you can use a specially made sprouting stand.
