GRILLED CHEESE WITH CARAMELIZED ONIONS

2 tablespoons canola oil
5 tablespoons unsalted butter, softened
2 large onions, sliced
2 teaspoons sherry vinegar
1 teaspoon sugar
12 slices rustic Italian bread (each about 1/2-inch thick)
8 ounces Gruyere, thinly sliced

Steps:

  • Heat the canola oil and 1 tablespoon butter in a large saute pan over medium heat. When the butter is melted, add the onions and cook, stirring occasionally, until dark brown and caramelized, about 25 minutes. Add the vinegar, sugar and 2 tablespoons water, scrapping up any dark bits that have accumulated on the bottom of the pan. Continue to cook until all the liquid has evaporated. Transfer the onions to a bowl and reserve.
  • Butter 1 side of each bread slice. Lay 6 slices butter-side down on a work surface. Top each with 2 slices of Gruyere, a dollop of the onions and 2 more slices of Gruyere. Top with another slice of bread, butter-side up.
  • Heat a cast-iron griddle over medium heat. Add the sandwiches and cook until the cheese begins to melt and the bread is golden brown, 2 to 4 minutes. Flip and continue to cook until golden brown and the cheese is melted through, 2 to 4 minutes. Cut in half and serve immediately.

1 large onion, cut lengthwise in half, then sliced crosswise
1 Tbsp. A.1. Original Sauce
6 KRAFT Big Slice Sharp Cheddar Cheese Slices, cut in half
12 slices Italian bread (1 inch thick)

Steps:

  • Heat oil in large skillet on medium-high heat. Add onions; cook and stir 5 min. or until golden brown. Cover; simmer on low heat 10 min., stirring occasionally Remove from heat. Stir in A.1.
  • Place 1 cheese slice on each of 6 bread slices; cover with onions, then remaining cheese and bread slices. Spray outsides of sandwiches with cooking spray.
  • Cook in covered nonstick skillet on medium heat 3 min. on each side or until cheese is melted and sandwiches are golden brown on both sides.

2 slices bread, your choice
mayonnaise
1/2 cup finely chopped spring onion
2 slices provolone cheese
3 slices cheddar cheese
1 teaspoon chopped fresh cilantro

Steps:

  • Spread a thin layer of mayonnaise on each piece of bread. Be sure to spread all the way to the edges.
  • On each piece of bread add 1 slice provolone and 1 slice cheddar cheese. You can use other cheeses but provolone or mozzarella has a juicy texture when it melts.
  • Sprinkle your finely chopped Spring Onion and Cilantro on each piece of bread over the cheese.
  • Toast lightly in your toaster oven until the cheese begins to melt.
  • Remove both pieces of bread from your toaster oven. Add 1 slice of cheddar cheese on top of either slice, then place the other piece of bread, onion side down, on top of the first piece.
  • Toast for a few more minutes until the cheese is melted. Slice your sandwich diagonally, and serve with a pickle and a handful of your favorite chips.

1 small onion, halved and thinly sliced

1/2 cup mayonnaise
2 cups cheddar cheese, shredded
2 cups mozzarella cheese, shredded

12 slices Texas toast thick bread

Steps:

  • Blend all ingredients except bread and butter in a medium bowl.

  • Peel and slice the onions into large slices. In a large skillet over medium heat, melt 1 tablespoon of butter with the canola oil. Add the onion slices, sprinkle with the salt, and reduce the heat to low and cover with a lid. Add the thyme sprigs. Stir every 15 minutes or so, raising the heat if the onions seem to be taking a long time, but watch to be sure they don't burn.Add the wine or water and the bouillon soup base, mixing into the onions, cooking to become even more jammy as they cook. Remove from heat when cooked down.
  • Spread ½ tablespoon of butter on one side of the silces of bred, then stack buttered sides together. Layer the slices of bread with the cheese, then the caramelized onions, and more cheese. Top with another slice of bread, buttered side up. Repeat with the additional slices of bread.
  • Place bread buttered side down in a fry pan over medium heat. Cover with a lid and let cook for 3-4 minutes or until golden.
  • Reduce the heat to medium-low and flip sandwich to the other side and cook for 2-3 minutes or until bread is toasty golden and cheese has melted. The second side will cook faster than the first so watch carefully.
