SPRING HILL RANCH'S TAMALE PIE

Spring Hill Ranch's Tamale Pie image

Introduced in the 1940's with the burgeoning popularity of Mexican food, the tamale pie has evolved into a popular comfort food, particularly in the American south. Actually, tamale pie is a far cry from real tamales. Heavily Americanized as it is, though, it still hints at the flavors of the southwest, and this casserole is a...

shortening for the baking dish
2 lb 80/20 ground beef
2 medium new mexico #6 or big jim chiles, roasted, peeled and diced (or 2 4.4-ounce cans of diced green chiles)
1 lb (16 ounces net weight) salsa
1 tsp ground chipotle powder or chile powder
3/4 tsp ground cumin
1/2 tsp dried mexican oregano
2 box (8.5 ounces each) cornbread muffin mix, divided, or whisk together:
2x 2/3 cup all-purpose flour
2x 1/2 cup yellow corn meal
2x 3 tablespoons granulated white sugar
2x 1 tablespoon baking powder
2x 1/4 teaspoon table salt
2x 2 tablespoons vegetable oil
2 large eggs at room temperature, divided
1 c whole milk, divided
8 oz grated mexican blend cheese (or 4 ounces each monterey jack and sharp cheddar)
8 oz frozen corn, thawed
1 can(s) (15 ounces) cooked black beans, rinsed and drained
10 large stuffed green olives, sliced (optional)
Garnish (optional):
sour cream
sliced ripe olives
chopped fresh cilantro

Steps:

  • 1. Adjust an oven rack to the center position and preheat the oven to 350°. Lightly grease a 9"x13" casserole dish.
  • 2. In a large skillet over medium-high heat, cook the ground beef until it starts to brown and release its juices, about 5 minutes. Reduce the heat to medium and stir in the chiles, salsa, chipotle powder, cumin and oregano. Cook, stirring regularly until the seasoned beef is crumbly and no longer pink, about 10 minutes.
  • 3. Mix one package of corn muffin mix in a large bowl with 1 egg and 1/2 cup of milk. Whisk to combine. In a separate large bowl, mix the second package of corn muffin mix with 1 egg, 1/2 cup of milk and half the cheeses.
  • 4. Spread the prepared corn muffin mixture without cheese into the prepared baking dish - it will be a very thin layer. Sprinkle the corn over the muffin mix, followed by the black beans and then the remaining half of the cheeses. Then layer on the beef mixture. If using, spread the sliced green olives over the top of the meat. (In some regions, finding a green olive in your tamale is a sign of good luck.) Spoon the corn muffin mix with cheese on top of the beef and carefully spread it over the top with a fork, leaving about an inch from the edges of the pan. Bake the pie for 40-50 minutes, until golden brown on top.

Categories     Main Course

Time 55m

Number Of Ingredients 16

1 cup cornmeal
1/2 cup all purpose flour
2 teaspoon baking powder
1 teaspoon salt
1 large egg
1/2 cup sour cream
1/2 cup corn ((whole kernel or creamed corn))
1 pound ground beef
1 tablespoon chili powder
1/2 teaspoon salt
3/4 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 cup enchilada sauce
1 cup shredded cheese (monterey jack or medium cheddar)

Steps:

  • Preheat oven to 400 degrees. Grease a baking dish (square dish or round pie pan)
  • Mix together the dry ingredients in a large bowl. These include cornmeal, all purpose flour, baking powder, and salt. Stir these with a fork to combine.
  • Add the egg, sour cream and corn to the dry ingredients and mix.
  • Pour the cornbread mixture into the prepared baking dish.
  • Bake the corn bread for about 15 minutes, it won't be done completely, but it will bake more once we layer everything on.
  • While the cornbread bakes, prepare the ground beef. Cook over medium heat in a skillet, once the meat is cooked through, no longer pink, drain the grease, add the seasonings and stir to combine.
  • Poke the cornbread with a fork all over and drizzle with enchilada sauce.
  • Add the ground beef on top of the cornbread, then top with the shredded cheese.
  • Bake again for another 30 minutes until the top is melted and bubbling. The sauce will be bubbling along the edges of the baking dish. Remove from the oven and allow to cool for a few minutes before serving.

Yield Makes 8 servings

Number Of Ingredients 31

For chili
4 tablespoons vegetable oil
2 lb boneless beef chuck or rump, cut into 1/2-inch cubes
1 large onion, chopped
2 large fresh jalapeño chiles, seeded if desired and finely chopped
4 garlic cloves, finely chopped
2 teaspoons unsweetened cocoa powder
1 teaspoon salt
3 tablespoons chili powder
1 teaspoon ground cumin
1/4 teaspoon ground allspice
1/4 teaspoon cayenne
1 (28-oz) can crushed tomatoes in purée
1 (10-oz) box frozen corn
1 1/2 cups water
1 (15- to 16-oz) can pinto or black beans, rinsed and drained
1 cup chopped pimiento-stuffed green olives
1/3 cup chopped fresh cilantro
For topping
1 cup all-purpose flour
1 cup yellow cornmeal (not coarse)
3 oz coarsely grated sharp Cheddar (3/4 cup)
1 1/2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 cup finely chopped fresh cilantro
1 medium fresh jalapeño chile, seeded and finely chopped
3/4 cup milk
3 tablespoons unsalted butter, melted and cooled
1 large egg, lightly beaten

Steps:

  • Make chili:

  • Add remaining tablespoon oil to pot and sauté onion and jalapeños over moderately high heat, stirring, until onion is softened, about 4 minutes. Reduce heat to moderate, then add garlic, cocoa powder, salt, and spices and cook, stirring, 1 minute. Return beef to pot with any juices that have accumulated in bowl and stir in tomatoes, corn, and water. Simmer chili, uncovered, stirring occasionally, until meat is very tender, 1 1/4 to 1 1/2 hours.
  • Remove from heat and stir in beans, olives, cilantro, and salt to taste. Transfer chili to a shallow 3-quart baking dish.
  • Make topping:
  • Preheat oven to 400°F.
  • Whisk together flour, cornmeal, cheese, sugar, baking powder, salt, cumin, cilantro, and jalapeño in a large bowl.
  • Whisk together milk, butter, and egg in a small bowl, then stir into flour mixture until just combined.
  • Drop batter by large spoonfuls (about 8) over chili, spacing them evenly, and bake in middle of oven 10 minutes. Reduce temperature to 350°F and bake pie until topping is cooked through, about 30 minutes more.

TASTY TAMALE PIE - CASSEROLE

Tasty Tamale Pie - Casserole image

This recipe is from our grammar school cookbook. Thank you Kathy G! My DH made this and I was truly impressed. This can be made as mild or as spicy as you like. Choose your salsa, cheese & amount of jalapeno according to your taste. Olives are optional. I also like to make the salsa smoother in the food processor to make it more kid friendly (no pieces!). I have used both condensed and regular whole milk with success, also combined bottled and fresh salsa.

TAMALE PIE

Tamale Pie image

Make the filling for this classic Southwestern casserole by cooking pork with roasted poblanos and pungent spices like chili powder, cinnamon and cloves. Top with an easy cornbread crust that gets baked to perfection.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h35m

Yield 8 servings

Number Of Ingredients 25

3 poblano peppers
3 tablespoons vegetable oil
1 1/2 pounds ground pork
1 pound fresh Mexican chorizo, casings removed
Kosher salt
1 white onion, diced
3 cloves garlic, finely chopped
1 tablespoon chili powder
1 1/2 to 2 teaspoons chipotle chile powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 15-ounce cans diced tomatoes
2 cups frozen corn kernels
1 teaspoon Worcestershire sauce
3/4 cup chopped fresh cilantro
1 1/4 cups yellow cornmeal
3/4 cup all-purpose flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
Kosher salt
6 tablespoons unsalted butter, melted
1 cup buttermilk
2 large eggs, lightly beaten
1 1/2 cups grated sharp cheddar cheese (about 6 ounces)

Steps:

  • Make the filling: Roast the poblanos directly over the flame of a gas burner or under the broiler, turning with tongs, until charred all over, about 10 minutes. Transfer to a bowl, cover with a plate and set aside until cool enough to handle, about 10 minutes. Scrape off the charred skin with a paring knife, then chop, discarding the stems and seeds; set aside.
  • Heat 2 tablespoons vegetable oil in a large pot over medium-high heat. Add the ground pork, chorizo and 3/4 teaspoon kosher salt and cook, stirring and breaking up the meat with a wooden spoon, until browned, about 8 minutes; transfer to a bowl.
  • Heat the remaining 1 tablespoon vegetable oil in the pot over medium-high heat. Add the onion, garlic and 1/2 teaspoon kosher salt and cook, stirring occasionally, until softened, about 5 minutes. Add the chili powder, chipotle powder, cinnamon and cloves and cook, stirring, until the spices are toasted, 1 minute. Return the meat to the pot and add the tomatoes, corn, Worcestershire sauce and the roasted poblanos. Bring to a boil, then reduce the heat to medium low and simmer 10 minutes; season with kosher salt and stir in the cilantro. Pour the mixture into a 3-quart baking dish.
  • Preheat the oven to 375 degrees F. Make the topping: Whisk the cornmeal, flour, sugar, baking powder, baking soda and 1/2 teaspoon kosher salt in a bowl. Whisk the melted butter, buttermilk and eggs in another bowl. Stir the dry ingredients into the wet ingredients until incorporated; stir in the cheese.
  • Dollop the cornbread mixture over the filling and smooth into an even layer with the back of a spoon. Bake until the filling is bubbling and the topping is golden brown, about 30 minutes. Let stand 10 minutes before serving.
