Steps:
- Heat the oven to 350 degrees F. Lightly grease a 13x9x2-inch baking dish. Stir the chicken, soup, sour cream, tomatoes and green chiles, beans and seasoning mix in a large bowl.
- Layer half the chicken mixture, 3 cups tortilla chips and half the cheese in the baking dish. Layer with the remaining chicken mixture and tortilla chips. Cover the baking dish.
- Bake for 30 minutes. Uncover the baking dish. Sprinkle with the remaining cheese.
- Bake, uncovered, for 10 minutes or until hot and bubbling and the cheese is melted. Sprinkle with the chopped tomato, green onion and cilantro before serving, if desired.

CHICKEN NOODLE CASSEROLE
This casserole based on a favorite soup will satisfy any comfort food craving. Partially cooking the egg noodles allows them to soak up the flavorful sauce without becoming too soft.

- Preheat the oven to 375 degrees F. Butter a 3-quart casserole dish.
- Bring a large pot of generously salted water to a boil. Add the egg noodles and cook until al dente, about 4 minutes. Strain.
- Meanwhile, heat 2 tablespoons of the butter in a large Dutch oven or pot over medium-high heat. Add the mushrooms and cook, stirring occasionally, until browned all over, about 3 minutes. Season with 1/2 teaspoon salt and a few grinds of pepper. Transfer to a small bowl and set aside.
- Lower the heat to medium and melt the remaining 4 tablespoons butter in the Dutch oven. Whisk in the flour to form a loose paste. Stir in the onions, carrots, celery and thyme and season with 1/2 teaspoon salt and a few grinds of pepper. Cook for 5 minutes to soften, then add the wine. Whisk for 30 seconds, then add the chicken broth and heavy cream. Bring to a boil, reduce heat and simmer for 10 minutes. Remove the thyme sprigs; fold in the noodles, mushrooms, chicken and parsley and season with salt and pepper. Transfer to the buttered casserole dish and top with the Gouda.
- Bake until bubbly and brown on top, 40 to 45 minutes.
NANNY'S CHICKEN CASSEROLE
This is my Grandmother's recipe for chicken casserole. It is by far the best comfort food in the world. I usually double the recipe to allow for plenty of leftovers. FYI this recipe can get rather salty so I use the reduced sodium StoveTop when I can find it, if it's not available I use reduce sodium soups. Some in our family like to pair this with cranberry sauce.

Steps:
- Boil chicken in seasoned water until tender and no longer pink in center.
- Allow chicken to cool and then pull into small pieces or use a fork to shred.
- Line bottom of 9 x 13 baking dish with chicken.
- Chop onion and sautee.
- Dissolve bouillon cube in broth (I use Swanson's broth by preference).
- Beat eggs.
- Mix stuffing, soups, onion, eggs, and broth.
- Pour mixture over chicken.
- Bake at 350 for 45 minutes or until set in middle and brown on top. Cooking time will usually depend on your oven.

- In a skillet over medium-high heat, add the olive oil and heat until hot. Add the chicken in batches and cook, browning, a couple minutes per side; remove the chicken to a plate using a slotted spoon. Add the garlic and onions to the skillet and cook briefly. - Cook meat, onions, garlic and taco seasoning mix in large skillet sprayed with cooking spray on medium heat 10 min. or until meat is done, stirring frequently. Remove from heat.

- Heat oil in skillet. Add chopped onion and salt. Saute until softened. Add garlic, chili powder, and bell pepper. Mix together and saute another 5 minutes. Add chicken, green chilies, and spinach. Stir together, cover, and simmer 5-10 minutes, until chicken is cooked through and all ingredients are mixed well.
- Heat oven to 350F and spray a two-quart casserole dish with cooking spray. Pour 1/2 cup salsa in the bottom of the dish. Put a layer of tortilla chips on the salsa, then layer half the chicken mixture and half the cheese. Repeat the layers, but do not add the top layer of cheese at this point.

- Mix taco seasoning and tomato sauce.
- Add shredded chicken and coat it well with tomato mixture.
- Place cooked rice in the bottom of a 13 X 9 X 2 or disposable baking pan.
- Top with chicken mixture.
- (You may want to flash freeze at this point before going on to the next step) Top with 1-2 cans of refried beans so you have a nice even coating.
- Freeze in the disposable pan or pop out and put in freezer bag.
- Place casserole back in the 9 X 13 X 2 pan.
- After thawing top with grated cheese.
- Bake uncovered for 30 to 45 minutes at 350F or until hot all the way through and the cheese is nice and bubbly.

- Preheat oven to 350 degrees F. Coat an unheated large nonstick skillet with cooking spray. Preheat skillet over medium-high heat. In a medium bowl toss together chicken, garlic, and chili powder. Add to hot skillet. Cook for 4 to 6 minutes or until chicken is no longer pink, stirring frequently. Remove chicken from skillet; set aside.
