THE BEST BAKED BEANS

The Best Baked Beans image

If you think baked beans only come from a can, you're in for a treat. Bacon, molasses and bourbon add depth and flavor to our classic recipe that's perfectly spiced with paprika, mustard and Worcestershire. A bit of brown sugar adds just the right amount of sweetness and to keep things easy, the beans require no soaking! They get tender and delicious right in the oven.

Provided by Food Network Kitchen

Time 5h

Yield 8 servings

Number Of Ingredients 12

8 ounces thick-cut bacon, cut into 1/2-inch strips
1 large yellow onion, diced
3 cloves garlic, minced
1 teaspoon paprika
One 8-ounce can tomato sauce
1/3 cup molasses
1/4 cup bourbon
2 tablespoons packed light brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons prepared yellow mustard
Kosher salt and freshly ground black pepper
1 pound dried navy beans, picked through

Steps:

  • Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
  • Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
  • Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.

PERFECTLY BAKED BEANS

Time 2h30m

Yield 18 servings

Number Of Ingredients 13

4 slices regular bacon, diced
1 medium onion, cut into small dice
1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 tablespoons ketchup
1 tablespoon yellow mustard
2 chipotle peppers, minced
6 slices thin bacon

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

OLD FASHIONED BAKED BEANS

Old Fashioned Baked Beans image

Deliciously thick, sweet, smoky and savory, these from-scratch Old Fashioned Baked Beans are sure to be a hit at your next BBQ, picnic, potluck or family dinner!

Provided by Kimberly Killebrew

Categories     Side Dish

Time 12h15m

Number Of Ingredients 14

1 pound dried navy beans
8 ounces thick cut bacon (, diced)
1 medium yellow onion (, finely chopped)
2 cloves garlic (, minced)
1/2 cup plain tomato sauce or ketchup
1/4 cup molasses
1/2 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon prepared yellow mustard
2 teaspoons Worcestershire sauce
1 teaspoon smoked paprika
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
  • In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
  • Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
  • SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

No Name Creek Baked Beans

Steps:

  • Often times recipes are born of necessity or thrown together out of what ever the cook can find left in the grub box. So was born this recipe in a camp on "No Name Creek" the fall of 1991. Right now you're thinking this "No Name Creek" doesn't exist and I'm just tryin' to protect a honey hole for elk hunting. Wrong! Look real close at a map of Chamberlain Basin in Central Idaho, and you'll find the real "No Name Creek" about a thirty minute horseback ride from Chamberlain Airstrip.I'd been assigned a two week hitch in Chamberlain as part of an emphasized enforcement effort in the back country. I, along with several others, rode and flew into Chamberlain to relieve guys who'd been in since before the back country elk hunt opened. Don Wright drew the duty of camp cook for the first crew and I drew KP for the second group. Our tours over-lapped a day so Don and I combined our talents for dinner. To this day neither of us remembers the main course that night. Since my grub order wouldn't arrive till the next day, we made do with what Don had on hand.Looking in the grub box it appeared our choices for a vegetable included kidney beans, black eyed peas, black beans, navy beans, pinto beans, or pork and beans. With not enough of any one kind to go around we had no choice but to throw them all together. Looking at the ingredient list, you'll see that lacking a real kitchen sink to throw in, we just cleaned out the grub box. Since then, I've served this recipe to several hundred people, but I don't think it ever tasted quite as good as that first night. I chalk it up to ambiance. Folks talk about how the proper ambiance will make a good meal great. Only pilgrims wouldn't classify the smell of wood smoke and dinner music provided by horse bells as ambiance! Anyway...these beans will provide their own ambiance.A Back Country Guide to Outdoor Cooking Spiced with Tall Tales - Vegetables in Camp

THE 10 BEST AND WORST CANNED BAKED BEANS — EAT THIS NOT THAT

From eatthis.com
  • Bush's Best Original Baked Beans. The clear winner. As one editor wrote, "These are classic for a reason! I love the pork bits and the sweet sauce. " Nearly every editor who participated described this can of beans as classic.
  • Bush's Best Vegetarian Baked Beans. A perfect balance between sweet and savory with a nice thick sauce. Is it any surprise that one of Bush's Best baked beans takes second place?
  • Amy's Organic Vegetarian Beans. This can of beans had a strong tomato taste, but it wasn't unpleasant like the can of Heinz baked beans. A majority preferred this can of beans over some of the others because it wasn't nearly as saucy.
  • 365 Everyday Value Organic Baked Beans. The beans were soft, and the flavor wasn't overly sweet. 365 Everyday Value Organic Baked Beans was one of our favorites, likely because they weren't too sweet or too savory—they were just right in the middle.
  • Campbell's Pork & Beans. Our taste-testers enjoyed the thick texture of these beans. Others said these beans had a smoky, salty taste with a pronounced pork flavor.
  • Trader Joe's Baked Beans. The majority of us agreed that this can of beans was a bit too sweet, but the texture was spot-on. Another editor and I both ranked this can of beans high on our list of favorites.
  • B&M Original Baked Beans. The texture of these beans was nearly identical to that of the vegetarian variety. However, the taste was slightly different. One of the editors commented that she tasted a hint of pork.
  • B&M Vegetarian Baked Beans. While the texture of the beans was similar to what we would expect from a can of baked beans, the flavor of the aftertaste is what made all of our stomachs churn.
  • Heinz Original Baked Beans. The best way to describe this can is navy beans floating in an abyss of Heinz ketchup. I personally was not a fan of this can of beans at all.
  • Eden Organic Baked Beans—Sweet Sorghum. Imagine going to an Ethiopian restaurant and delving into a plate of soft (almost mushy) savory legumes and vegetables sitting atop a bed of spongy injera bread.
