BASIC HIGH-ALTITUDE BREAD

Very easy bread recipe that I use for sandwich bread, pizza dough, and even naan! I live in Colorado Springs at an altitude of about 5,500 feet. This recipe works really well for me.

Number Of Ingredients 6

1 cup warm water (100 degrees F/40 degrees C)
2 teaspoons active dry yeast
3 cups bread flour
¼ cup coconut oil, melted
1 tablespoon white sugar
1 teaspoon salt

Steps:

  • Combine water and yeast and let sit until foamy, about 10 minutes.
  • Combine flour, coconut oil, sugar, salt, and yeast mixture in a bowl. Knead until silky-smooth, about 15 minutes. Place dough in a large, lightly-oiled bowl and turn to coat. Cover with a towel and let rise in a warm place until doubled in volume, about 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Punch down dough and turn onto a lightly floured surface. Shape into a loaf and place into the prepared pan. Cover with a damp cloth and let rise until doubled in volume, about 30 minutes.
  • Uncover and bake in the preheated oven for 30 minutes for an Italian-style loaf or 45 minutes for a sandwich-style bread.

I used to live near sea level, where I had wonderful success with breadmaker breads. Back then, I'd just estimate the amount of yeast, salt, and sugar, and I'd toss in all sorts of extra ingredients. Once even a bread made with yellow cake mix and some leftover spinach. However, after moving to a mile-high altitude, I had to stop casually adding ingredients. In fact, I couldn't even turn out a decent loaf of white bread. I was about to donate my breadmaker away, when I came across tips for high-altitude baking on the internet. I stayed up late one night reading. Then I started experimenting. My breadmaker is the Welbilt Model #ABM-100. [That's the breadmaker that's shaped like R2D2.] I played around with ingredient amounts until I found a combination that uses regular flour at high-altitude. Now, I've never tried this at OTHER high altitudes ... maybe what works in my altitude/temperature/humidity will fail dismally in another part of the world. And I don't know what would happen if you choose to use bread flour. Here's the basic French bread that works for me. But I haven't dared to add spinach to it.

1/2 tablespoon salt
1/2 tablespoon butter
1 1/2 cups water
3 cups flour

Steps:

  • Add ingredients to breadmaker in order listed.
  • Select French bread setting.
  • Push start.
  • Four hours later, slice and eat.
  • This is best when freshly-sliced; it doesn't seem to keep particularly well. But, if you have teenagers, the question of needing to keep leftovers is irrelevant anyway.

Since we live in Colorado, I am always on the lookout for high-altitude bread recipes. Much easier than worrying about conversions or hoping that a recipe designed for sea-level will turn out! This one turns out great every time! You can also add about 1/2 c of chopped nuts, dried fruit, and/or chocolate chips.

4 tablespoons butter, softened
2 eggs
2 -3 bananas, very ripe
2/3 cup sugar
1 1/3 cups flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon cinnamon (optional)

Steps:

  • Preheat oven to 350°F.
  • Combine butter, eggs, sugar, and mashed bananas in bowl. Bananas should be finely mashed, there can be small (1 cm or less) chunks of banana in the batter.
  • Combine flour, salt, baking soda, baking powder, and cinnamon in another bowl.
  • Mix wet and dry ingredients together until well blended.
  • If you would like to add optional ingredients (chopped nuts, dried fruit, and/or chocolate chips), stir in about 1/2 cup here.
  • Pour dough into 1 greased 9x5 inch loaf pan.
  • Bake at 350F for 50 minutes, or until toothpick inserted in center comes out clean.
  • Let bread cool in pan for 5-10 minutes before removing.
  • Enjoy hot or cold!

These are easy and quick. They only take about one hour after the dough is thawed. Then fill them with your favorite thick soup, chowder, chili, or stew. It will be fun to tear away the bread as you eat your soup and the two go great together. They will be good on a cool night. The time below does not include the thawing of the bread. One hint: To make the handling of the bread easier, make sure the bread has completely thawed but has not started to rise. You may also need to reshape the rounds after a few minutes on the cups by gently pushing the dough down and shaping as needed.

1 loaf frozen bread dough (thawed)
1 tablespoon olive oil or 1 tablespoon vegetable oil
1 teaspoon dried basil leaves
1/2 teaspoon garlic salt

Steps:

  • Thaw the bread, but don't let it start to rise.
  • Lightly grease the outside of six 10-ounce custard cups with shortening (do NOT use cooking spray); place cups upside down on cookie sheet.
  • Divide dough into 6 equal pieces and shape each piece into a ball; pat into rounds.
  • Place rounds over the custard cups and brush dough with oil.
  • Sprinkle with basil and garlic salt.
  • Cover and let rise in warm place for about 20 minutes.
  • Bake in a 350 degree oven for 16-20 minutes or till golden brown.
  • Cool 5 minutes and remove from cups and place on a rack (inside of the bowl may be slightly moist).
  • To serve, place warm or cool bowls in shallow soup or pasta bowls and spoon your soup (or whatever you made) into them.
