SOY-GLAZED SALMON WITH CUCUMBER-AVOCADO SALAD

- Preheat the oven to 400 degrees F. Mix the honey, 2 teaspoons soy sauce and the cornstarch in a small microwave-safe bowl. Microwave until just simmering, 30 to 40 seconds.
- Rub the fish fillets all over with 1/2 teaspoon sesame oil and season lightly with salt. Place the fish in a baking dish and bake 5 minutes. Remove from the oven and brush with the honey-soy sauce mixture. Return the fish to the oven and continue baking until just cooked through, 7 to 9 more minutes.
- Meanwhile, whisk the rice vinegar, mayonnaise and the remaining 1/2 teaspoon each soy sauce and sesame oil in a large bowl. Add the cucumber, scallions and 1/4 teaspoon salt and toss. Gently fold in the avocado. Serve the salmon with the salad and pickled ginger.

HONEY SOY GLAZED SALMON RECIPE BY TASTY
Two words: honey salmon! Sure, it takes a tiny bit of prep work, but once you marinate your salmon, you won't be able to go back. A simple mix of honey, soy sauce, garlic, and ginger coats and flavors your fish for 30 minutes before you throw it on the pan until the outside is perfectly crispy. Once that's done, you heat up and reduce some extra marinade to make a thick, to-die-for glaze to pour over your filet. Serve with your favorite veggies or rice and enjoy!

- Place salmon in a sealable bag or medium bowl.
- In a small bowl or measuring cup, mix marinade ingredients.
- Pour half of the marinade on the salmon. Save the other half for later.
- Let the salmon marinate in the refrigerator for at least 30 minutes.
- In a medium pan, heat oil. Add salmon to the pan, but discard the used marinade. Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.
- Remove salmon from pan. Pour in remaining marinade and reduce.
- Serve the salmon with sauce and a side of veggies. We used broccoli.

- Preheat your oven's broiler, and grease a broiling pan.
- In a saucepan over medium heat, mix together the apricot nectar, dried apricots, honey, soy sauce, ginger, garlic, cinnamon and cayenne. Bring to a boil, then reduce heat to medium-low, and simmer for about 20 minutes, or until reduced by about half. Stir occasionally to prevent burning. Remove 1/4 cup of the glaze for basting, and set the remaining aside.
- Place the salmon filet on the greased broiling pan, and brush with glaze. Broil 3 inches from the heat for 8 to 12 minutes, or until salmon flakes easily with a fork. Gently turn over once during cooking, and baste frequently during the last 4 minutes. Serve with remaining glaze.

- Preheat oven to 400 degrees. with a rack in the center. Make the glaze: In a small bowl, stir brown sugar, olive oil, soy sauce, lemon juice, and white wine until the sugar has dissolved.
- Cut salmon fillet into 4 equal-size pieces; arrange, skin side down, in a single layer in a baking dish. Pour glaze over the fish, and turn to coat evenly.
- Bake until fish is opaque but still bright pink inside, basting every few minutes with glaze from baking dish, 15 to 20 minutes. Serve with lemon wedges.

- Mix orange juice, honey, soy sauce, lemon juice, and ginger together in a small bowl.
- Place salmon in a shallow dish. Pour all but 3 tablespoons of the orange juice mixture on top. Reserve remaining mixture in the bowl. Let salmon marinate at room temperature for 30 minutes.
- Preheat oven to 450 degrees F (230 degrees C).
- Transfer salmon to a baking dish lined with aluminum foil; pat dry with paper towels. Discard marinade. Spoon 1 tablespoon of reserved orange juice mixture over salmon; season with salt and pepper. Drizzle olive oil on top.
- Bake in the preheated oven until heated through, about 6 minutes. Spoon remaining 2 tablespoons orange juice mixture over salmon. Continue baking until flesh flakes easily with a fork, 6 to 9 minutes more. Serve with lemon wedges.

- Combine the marinade ingredients.
- Pour over the salmon and put in the fridge for at least two hours and as long as overnight.
- Make the hot and sour dressing by putting the vinegar, chilli and sugar in a small saucepan.
- Heat gently without boiling until the sugar has dissolved.
- Remove from the heat, leave to cool and then add the sunflower oil.
- While the dressing is cooling, fry the cashew nuts in a heavy frying pan until lightly browned, then add the sea salt and mustard seeds and fry for a minute or until the seeds start to pop.
- Set aside.
- In a hot pan, add the oil and let it heat up.
- Fry the salmon steaks for four minutes on each side, starting with the skin side down.
- The flesh should be moist but cooked and the top of the salmon should be a lovely brown.
- Combine all the salad ingredients and the dressing together.
- Serve piled onto each plate and topped with the salmon.

- Heat the olive oil in a small skillet over moderately high heat.

SOY-GLAZED SALMON HAND ROLLS
Unagi sauce is a sweet, thickened soy sauce traditionally used on grilled eel. Here, the simple sauce of soy sauce, sugar and mirin is enhanced with the addition of aromatic garlic and ginger, transforming it into a savory glaze for buttery salmon. Once the salmon is roasted and lacquered in the sauce, it becomes the perfect filling for customizable hand rolls. A perfect roll is assembled with the flaked salmon and some creamy avocado and crisp cucumbers for bites that are rich, fresh and crunchy all at once. Including cooked short-grain rice in the filling is traditional, but these rolls would be a great place to use other leftover grains like farro or quinoa.

- Heat oven to 425 degrees. In a small saucepan, heat 2 tablespoons of the oil over medium. Stir in garlic until fragrant, 30 seconds. Add soy sauce, mirin, sugar, black pepper and ¼ teaspoon salt, and bring to a simmer. Reduce heat to medium-low and cook, stirring occasionally, until sauce is reduced by about a third and has thickened slightly, 10 to 15 minutes. Stir in ginger and remove from heat. You should have about ½ cup sauce; reserve half of the sauce in a small bowl for serving and set aside.
- Line a sheet pan with aluminum foil. Place salmon on the prepared sheet, rub with the remaining 1 tablespoon oil and season with salt. Coat the salmon on both sides with the other half of the sauce.
- Roast salmon for 5 minutes, then baste with the sauce that's dripped onto the sheet tray. Continue to roast until salmon is just cooked to medium, about 5 minutes longer. Transfer salmon to a large plate.
- Flake salmon into bite-size pieces and drizzle with the reserved sauce. To build hand rolls, top seaweed with some rice (if using), cucumbers, avocado and salmon. Wrap and enjoy. Serve with optional wasabi on the side, and dab a little onto the salmon for a spicy hit.
MAPLE AND SOY GLAZED SALMON

- Preheat oven to 500 degrees.
- Place a piece of parchment paper on a baking sheet. Place the salmon fillet in the center of the parchment. Sprinkle both sides of the fish with salt and pepper to taste.
- Mix the soy sauce, maple syrup, cayenne pepper and garlic together in a small microwavable bowl.
- Place the fish in the preheated oven and cook for about 5 minutes.
- Remove the salmon from the oven and brush with the glaze. Return the fish to the oven and cook for about 5 more minutes or until the fish begins to flake and change color.

- Preheat oven to 400.
- Rub fish all over with 1/2 tsp of the sesame oil and season lightly with salt.
- Place in oven and bake 5 minutes.
- In a small microwavable bowl, combine the honey, 2 tsp soy sauce and the cornstarch.
- Microwave on high for 30 seconds.
- Baste the filets with the honey soy mixture and return to the oven to continue baking for another 9 minutes.
