3 tablespoons vegetable oil
Kosher salt and freshly ground black pepper
1 (15-ounce) package boneless thick pork center cut chops
1 medium onion, chopped
2 (8-ounce) packages sliced baby bella (crimini) mushrooms
¼ cup all-purpose flour
1 (14.5-ounce) can reduced-sodium chicken broth
2 teaspoons Worcestershire sauce
1 (6-ounce) bag baby spinach

Steps:

  • 1. Heat the oil in a large, deep skillet over medium-high heat. Sprinkle salt and pepper all over the pork chops and add to the pan. Cook, turning once, until browned, about 4 minutes. Transfer to a plate.
  • 2. Add the onion, mushrooms, and a pinch each of salt and pepper to the pan. Cook, stirring occasionally, until tender, about 6 minutes. Add the flour and cook, stirring, for 2 minutes. Continue stirring while adding the broth in a slow, steady stream. Bring to a boil, then simmer, scraping the browned bits from the pan until the consistency of gravy, about 5 minutes. Stir in the Worcestershire sauce.
  • 3. Return the pork chops to the pan and simmer until the pork is not longer pink in the center, about 5 minutes. Transfer the pork to serving dishes. Stir the spinach into the sauce until just wilted, about 1 minute. Nestle the pork into the sauce and serve.

2 (1-inch-thick) center-cut rib pork chops
2 sage leaves, finely chopped
2 very thin slices Italian Fontina
2 thin slices prosciutto (1 ounce)
2 tablespoons olive oil, divided
1 large garlic clove, finely chopped
1 (10-ounces) bag fresh spinach, stems discarded
2 tablespoons unsalted butter, cut into pieces
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 450°F with rack in middle.
  • Cut a deep, wide pocket in each pork chop. Sprinkle half of sage into each pocket and stuff pockets with cheese and prosciutto. Pat chops dry and season with 1/4 teaspoon each of salt and pepper (total).
  • Heat 1 tablespoon oil in a 12-inch ovenproof heavy skillet over medium-high heat until it shimmers. Cook chops until undersides are golden, about 2 minutes, then turn chops and transfer skillet to oven. Roast until cooked through, about 5 minutes.
  • While chops cook, heat remaining tablespoon oil in a 5-quart pot over medium heat until it shimmers. Sauté garlic until pale golden, about 30 seconds. Add spinach and cook, covered, stirring occasionally, until wilted, about 3 minutes. Season with salt.
  • Transfer chops to a platter. Add butter and lemon juice to hot skillet, stirring and scraping up brown bits, then pour sauce over pork.
  • Serve pork with spinach.

4 boneless center-cut pork chops (1/2 inch thick; 5 ounces each)
Kosher salt
3 tablespoons extra-virgin olive oil
1/2 cup all-purpose flour
1 large shallot, finely chopped
8 fresh sage leaves
1/2 cup dry white wine
1 1/4 cups low-sodium chicken broth
5 thin slices prosciutto (about 3 ounces), 1 slice chopped
1 cup grated fontina cheese (about 2 ounces)
1/4 cup grated parmesan cheese
1 10-ounce package frozen peas

Steps:

  • Preheat the broiler. Season the pork with salt. Heat 2 tablespoons olive oil in a large ovenproof skillet over medium-high heat. Working in batches, dredge the pork in the flour and add to the skillet; reserve the flour. Cook until browned, 1 minute per side. Transfer to a plate.
  • Reduce the heat to medium; add the shallot to the skillet and cook, stirring, until soft, 3 minutes. Increase the heat to medium high. Add the sage and 2 teaspoons of the reserved flour. Cook until sizzling, 30 seconds. Add the wine; bring to a boil. Cook until reduced by half, 2 minutes. Add 1 cup broth; return to a boil and cook until thickened, 2 minutes. Add the pork; return to a simmer. Top each chop with a prosciutto slice, then the cheeses. Broil until bubbling, 1 to 2 minutes.
  • Heat the remaining 1 tablespoon olive oil in a small saucepan over medium heat. Add the chopped prosciutto; cook until crisp, 1 to 2 minutes. Add the peas, the remaining 1/4 cup broth and 1/4 teaspoon salt. Cover; cook until the peas are tender, 5 minutes. Uncover; increase the heat to medium high. Cook until the liquid is reduced, 1 minute. Serve with the pork.

Kosher salt and freshly ground pepper
4 large sage leaves
8 thin slices prosciutto
3 tablespoons extra-virgin olive oil
4 slices provolone cheese (about 3 1/2 ounces)
1 pound baby spinach
Juice of 1 lemon, plus wedges for serving
1 large shallot, finely chopped, or 1/3 cup finely chopped red onion
2/3 cup low-sodium chicken broth

Steps:

  • Preheat the oven to 425 degrees F. Season the pork with salt and pepper. Top each chop with a sage leaf, then wrap in 2 slices prosciutto. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the chops, sage-side down, and cook, turning once, until the prosciutto is crisp, 8 to 10 minutes. Transfer to a baking sheet, reserving the skillet, and roast until a thermometer inserted sideways into the center of a chop registers 145 degrees F, about 8 minutes. Top each with a slice of provolone; return to the oven until the cheese melts, 1 to 2 minutes. Meanwhile, put the spinach in a microwave-safe bowl; add the remaining 1 tablespoon olive oil, 1 tablespoon water and a pinch of salt. Cover with plastic wrap and microwave until wilted, 3 minutes; drain. Drizzle with half of the lemon juice and season with salt and pepper. Heat the reserved skillet over medium heat; add the shallot and cook, stirring, until soft, 3 minutes. Add the broth and simmer until reduced by half. Stir in the remaining lemon juice and season with salt and pepper. Divide the pork among plates; drizzle with the shallot sauce. Serve with the spinach and lemon wedges.

1 tablespoon olive oil
4 bone-in pork loin chops (8 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium lemon
GARLIC SPINACH:
1 tablespoon olive oil
3 garlic cloves, thinly sliced
2 packages (5 ounces each) fresh spinach, stems removed
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 teaspoon lemon juice

Steps:

  • In a large skillet, heat oil over medium-high heat. Sprinkle pork chops with salt and pepper; add to skillet. Saute until a thermometer reads 145°, about 5 minutes per side. Remove to a serving platter; squeeze juice from lemon over chops. Tent with foil; let stand at least 5 minutes before serving., For garlic spinach, heat oil over medium-high heat in same skillet. Add garlic; cook until it just begins to brown, about 45 seconds. Add spinach; cook and stir just until wilted, 2-3 minutes. Sprinkle with salt and pepper. Remove from heat; add lemon juice. Transfer to serving platter. Remove foil from pork; serve spinach with chops.

1 lb pork chop (4 1-inch thick)
3 tablespoons whole grain mustard (or dijon mustard)
1 tablespoon lemon juice
1 garlic clove, chopped
1 1/2 teaspoons oregano, dried
3 cups fresh spinach
3 sun-dried tomatoes, chopped
1/2 red onion, sliced
3 tablespoons extra virgin olive oil
1/2 cup feta cheese (crumbled)
1 teaspoon garlic salt

Steps:

  • Preheat oven to broil setting.
  • Whisk mustard, lemon juice, clove of garlic and oregano in a small bowl.
  • Brush onto both sides of pork chops.
  • Place pork chops into dish - broil on first side for 6 minutes. Flip chops, brush any remaining glaze onto the meat and broil until golden brown (approximately 5 minutes).
  • While pork chops are cooking, heat extra virgin olive oil over medium high heat in a sauce pan. Add sliced red onion and saute until tender (about 3 minutes).
  • To the same pan, add the spinach and garlic salt. Once it begins to wilt (about 1 minute), add the chopped sundried tomato.
  • Once spinach is completely wilted (about 2-3 minutes), add feta cheese and toss to mix.
  • Plate pork chops and top with spinach mixture. Serve immediately.
