AWARD WINNING MEATBALLS IN PEANUT SAUCE



Award Winning Meatballs in Peanut Sauce image

Marvel over these meatballs while watching (hopefully) Black Panther at the Oscars. The movie is taken place in a fictional African country. I came up with these tasty morsels using spices of the regions. Break out the fondue or wrap in lettuce. These will leave an impression just as the movie did! ;) Geniet!

Number Of Ingredients 22

1 lb ground beef
1 cup seasoned breadcrumbs
1 cup half-and-half
1 large egg, beaten
3 tablespoons berbere, spice blend
2 tablespoons fresh minced parsley or 2 tablespoons cilantro
1/3 cup finely minced onion
1/3 cup flour
2 teaspoons paprika
2 tablespoons coconut oil or 2 tablespoons peanut oil
1/2 cup diced onion
1 teaspoon minced garlic
1 tablespoon minced crystallized ginger
1 cup diced tomato
1 tablespoon chili-garlic sauce
1/3 cup tomato paste
3 cups beef broth (use more to thin sauce if desired)
1/2 cup no sugar peanut butter
1/2 teaspoon saffron (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley

Steps:

  • Preheat oven to 350 degrees. Place bread crumbs in a large bowl top with 1/2 and 1/2 soak five minutes.
  • Add the rest of the meatball ingredients and mix well.
  • Make golf size balls.
  • Mix flour and paprika together.
  • Coat balls in flour mixture.
  • Place on a parchment lined cookie sheet and bake in preheated oven for 15 minutes.
  • Sauce:.
  • Meanwhile heat oil in a large pan.
  • Saute onions, garlic, ginger five minutes.
  • Add rest of sauce ingredients except parsley and simmer 5 minutes.
  • Add baked meatballs and simmer 5 minutes this sauce with extra broth or water.
  • Garnish with parsley.
  • Can be eaten with toothpicks or placed in lettuce as wraps.

This is a low glycemic index recipe, as far as I can tell, as that is how I eat. I think it should be suitable for diabetics, please someone let me know if it isn't. I didn't want to fry the meatballs as I wasn't feeling well, so I did something new for me and simmered them instead. They came out with a very nice texture, I hope it works for you as well. My so-particular husband took two helpings, which is a good sign.

400 g pork mince (just under one pound)
1 cup kumara, cooked and mashed (or other starchy vegetable)
1 egg
3 tablespoons soy sauce
3 tablespoons rolled oats
800 g canned tomatoes (about 14 oz)
1 onion, minced
1 garlic clove, crushed
1 cup silver beet or 1 cup chard leaves, raw, chopped
1 cup beef stock
1 tablespoon soy sauce
1 teaspoon gingerroot, minced
1 teaspoon fresh chili pepper, minced
1 tablespoon oil
1 teaspoon salt (or less, to taste)
1 tablespoon smooth peanut butter, with no added sugar

Steps:

  • Mix pork mince, egg, kumera, soy sauce and rolled oats together in a bowl. Set aside.
  • Heat oil in your largest, lidded, pot.
  • Fry onion, garlic, ginger, and chili for about one minute.
  • Add remaining ingredients except for the peanut butter and half of the salt so you can adjust later.
  • Simmer this sauce for about 5 minutes.
  • Use the pork mixture to make meatballs about the size of a small egg, and place them carefully on top of the simmering sauce. Use a spoon to make sure they all have some sauce poured over them.
  • Simmer with the lid on for about 30 minutes while checking and stirring very gently once or twice.
  • Add peanut butter by using some of the sauce to thin it down before pouring it into the pot.
  • Taste and add remaining salt if needed.
  • Serve with salad.

1 slice white sandwich bread
1 1/2 tablespoons milk
1 teaspoon soy sauce
5 scallions, white and green parts separated
1 1/4 pounds ground pork
3 large cloves garlic, finely grated
1 tablespoon finely grated peeled ginger (about a 2-inch piece)
1/3 cup water chestnuts, drained, rinsed and chopped
1 large egg, lightly beaten
1/3 cup chopped fresh cilantro
1 1/2 teaspoons toasted sesame oil
Kosher salt and freshly ground pepper
1/2 cup hoisin sauce
1/4 cup mayonnaise
2 1/2 tablespoons fresh lime juice
3 to 4 teaspoons Asian chili-garlic sauce
Peanut or vegetable oil, for frying
1 cup bean sprouts
4 7-inch-long pieces baguette, split open

Steps:

  • Tear the sandwich bread into small pieces, then toss with the milk and soy sauce in a large bowl. Let stand 10 minutes.
  • Meanwhile, mince the scallion whites. Cut the scallion greens into thin 2-inch-long strands. Put the strands in a bowl of ice water and refrigerate while you make the meatballs.
  • Add the scallion whites, pork, garlic, ginger, water chestnuts, egg, cilantro, 1 teaspoon sesame oil, 1 1/4 teaspoons salt and 1/2 teaspoon pepper to the bowl with the bread; mix until combined. Gently form into 16 golf ball-size meatballs. Put the meatballs on a baking sheet, cover with plastic wrap and refrigerate 1 to 4 hours.
  • Stir the hoisin sauce, mayonnaise, 11/2 tablespoons lime juice, the chili-garlic sauce and the remaining 1/2 teaspoon sesame oil in a medium bowl. Cover and refrigerate until ready to serve.
  • Heat about 1 1/2 inches peanut oil in a large, wide saucepan over medium heat until a deep-fry thermometer registers 350 degrees F. Add the meatballs in batches and cook, turning occasionally, until browned and cooked through, 8 to 10 minutes. Transfer to a paper towel-lined plate to drain.
  • Drain the scallion greens and toss with the bean sprouts, the remaining 1 tablespoon lime juice and a pinch of salt in a bowl. Spread the hoisin mayonnaise on the inside of the baguette pieces, then fill with the meatballs and top with the scallion-sprout mixture.

2 (16 ounce) pork tenderloins, trimmed of fat
3 tablespoons soy sauce
1 ½ teaspoons sugar or sugar substitute
1 tablespoon sesame oil
1 tablespoon smooth natural peanut butter
1 clove garlic, minced
1 teaspoon curry powder
1 tablespoon minced fresh ginger
½ teaspoon salt

Steps:

  • Place pork in a large resealable plastic bag. Mix together soy sauce, sugar, sesame oil, peanut butter, garlic, curry powder, ginger, and salt in a bowl until smooth. Pour marinade over tenderloins, press air out of bag, seal, and refrigerate overnight.
  • Preheat an outdoor grill for high heat.
  • Use a paper towel to pat any excess marinade from the pork; allow to sit at room temperature while the grill is heating. Lightly oil grill grate. Cook pork 3 minutes on each side (on all four sides) for a total of 12 to 15 minutes. The pork will be done when it is no longer pink inside and has reached an internal temperature of 145 degrees F (65 degrees C). Remove from the grill and cover meat loosely with a foil tent. Let rest 5 minutes before serving.

These nuoc cham-inspired meatballs are perfect to fill lettuce cups topped with fresh basil or cilantro. (Add steamed rice for a more substantial meal.) The Ritz crackers here make for a juicier meatball, but feel free to substitute plain dry bread crumbs. To make the Ritz crumbs, place the crackers in a resealable plastic bag and lightly crush them with the back of a wooden spoon or measuring cup. For an easy dipping sauce, spike 1/4 cup mayonnaise with 2 teaspoons toasted sesame oil or soy sauce. And save any leftover meatballs: They're great simmered in chicken broth the next day. The ginger and garlic in them release their aromatics into the broth for a deeply flavorful soup base.
