INJERA (ETHIOPIAN TEFF BREAD)
A naturally fermented, spongy, gluten-free flatbread from Ethiopia is made from teff flour and water, using wild yeast to ferment over a couple of days. It is then cooked like a crepe and turned into a flavorful, tangy bread to serve with your favorite Ethiopian food. The fermentation process can take up to 2 or 3 days, depending on your climate. Injera is typically served with vegetables and/or meat on top where the bread is actually an eating utensil.

- Mix 1/2 cup white teff flour and brown teff flour together in a bowl. Add 1 cup water and whisk well. Pour mixture into a glass container large enough to hold 3 times the original volume. Cover with cheesecloth or other breathable fabric to keep out dust; do not seal with plastic wrap as air circulation is vital. Leave covered container in a draft-free environment; the mixture needs air to be circulated in order to ferment. Stir batter 2 times over 24 hours.
- Check for bubbles and possibly an increase in volume after 24 hours; there may also be a slightly tangy and sour smell. When you notice these things, add 1 tablespoon white teff flour and 1 tablespoon water to the batter and whisk well. Check in a few hours to see if bubbles have again formed, mixture has increased in volume, and the pungent smell is still evident; if so, the batter is ready and you can skip to the cooking process (step 5).
- Leave batter to rest another 12 hours if the mixture has not begun to form or smell sour after the first 24 hours; stir once during this time. Check to see if bubbles have formed, mixture has increased in volume, and a pungent smell is evident; if so, proceed with step 4.
- Mix together 2 tablespoons white teff flour and 2 tablespoons water in a bowl, making sure there are no lumps. Add mixture to the batter, whisking well. Wait a few hours; batter should be bubbly with a noticeable increase in volume and a pungent but fragrant smell, indicating it is ready to be cooked.
- Heat an 8-inch crepe pan or nonstick skillet over medium heat. Add oil. Pour a scant 1/2 cup batter slowly and steadily into the hot pan in a circular motion from outside to inside. Cover the pan completely in a spiral without swirling. Cover, reduce heat to medium-low, and cook, allowing steam to cook the top of the bread, 1 to 3 minutes. Remove from pan with spatula and transfer to a plate; cover to keep warm. Repeat with remaining batter.

- If using milk, whether cow's or rice milk, with vinegar, mix and set aside for 15 minutes until thick. If it does not reach the consistency of butter milk, use less than 1/2 cup.
- Add warm water to a medium sized bowl; add sugar or honey; stir to dissolve; add yeast; stir; and set aside until frothy, about 5 minutes. If it does not bubble start over with fresh yeast.
- In a large bowl, add remaining dry ingredients; whisk thoroughly.
- Add buttermilk, beaten eggs, to yeast mixture; whisk well.
- Add dry ingredients to wet ingredients; using a rubber spatula, stir until it reaches a soft dough the consistency of creamy mashed potatoes; allow to rest for 20 minutes.
- Scatter 2 tablespoons potato starch to a clean, flat surface; scoop 1/3 cup at a time of dough; add to floured surface; knead with dusted hands; shape into a disk as wide as your spatula.
- Using a wide, thin spatula, transfer to preheated cast iron skillet.
- Using the back of your fingers or a pastry roller dusted with starch, immediately flatten and distribute dough in pan working from the center, moving outwards.
- Fry on each side for approximately 2 1/2 minutes; coat tops of fully cooked naan with salted butter.
- Repeat with remaining dough adding additional potato starch as needed for kneading.
- Serve warm and store uncooked dough covered in the refrigerator for up to 3 days.

- Grease a 9x5-in. loaf pan and sprinkle with gluten-free flour; set aside., In a small bowl, dissolve yeast and sugar in warm milk. In a stand mixer with a paddle attachment, combine the eggs, oil, vinegar and yeast mixture. Gradually beat in the flour, xanthan gum, gelatin and salt. Beat on low speed for 1 minute. Beat on medium for 2 minutes. (Dough will be softer than yeast bread dough with gluten.), Transfer to prepared pan. Smooth the top with a wet spatula. Cover and let rise in a warm place until dough reaches the top of pan, about 25 minutes., Preheat oven to 375°. Bake for 20 minutes; cover loosely with foil. Bake until golden brown, 10-15 minutes longer. Remove from pan to a wire rack to cool.

SPONGY GLUTEN-FREE BREAD
This recipe was inspired by recipes all over the web including celiac.com. After scouring the internet for tips on how to make a great tasting bread, I think I've come up with the best gf bread recipe! I can say with confidence that this recipe tastes like "real" bread because I'm not gluten-free. It is also pliable, not crubmly. My parents and son have gluten allergies, along with egg, soy, and dairy (cow and goat) allergies. So this recipe is free of those. I hope you don't substitute anytihng when making this recipe because you may not have the same results at home. I think the two main ingredients that set this one aside from most others is the sorghum flour and the unflavored gelatin. Sorghum flour is a grass which more resembles the flavor of wheat than other gf flours and is frequently used in Africa and Asia. The unflavored gelatin makes this recipe moist and spongy. Just a note: this makes more than one loaf...about a loaf and a third. I haven't perfected it down to just one loaf, but wanted to share with you anyways. I hope that you and your enjoys this as much as my family does. If you try this and figure out how long the baking time is on a non-convection oven, please post this information in the rating so that others will know. Preparation time includes rising time.

- Preheat oven to 200 degrees fahrenheit.
- Fill a medium saucepan with water and bring to boil.
- Prepare bread pans by greasing and flouring with gluten-free flour.
- Mix all dry ingredients together well with whisk.
- Mix all liquid ingredients together.
- Combine wet and dry ingredients together until well incorporated. Dough will have a thick, batter-like consistency.
- Pour batter into one bread pan about 3/4 full and pour the rest into the other bread pan.
- Turn oven off.
- Pour boiling water into large glass dish and place it on the bottom rack of the oven.
- Put bread pans on the top rack of the oven and close the door. Remember that the oven must be switched off at this point.
- Allow the dough to rise for about 45-50 minutes.
- Remove the bread pans form the oven and heat the oven to 350 degrees fahrenheit.
- Bake on the center rack of the oven for 40-50 minutes or until the loaf is golden brown. I use a convection oven and my loaves are done after about 25 minutes. Do not let the crust become too dark or the bread will be crumbly.
- Remove loaves from the oven and let them cool for 10 minutes.
- Remove by gently loosening the bread from the pans with a knife.
- Cool loaves covered with a dish towel for 30 minutes before slicing.
