BASIC CORNBREAD RECIPE
1 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs (lightly beaten)
2 Tablespoons vegetable oil
SOUTHERN DRESSING RECIPE
Cornbread (9x9 inch pan (my grandmother always uses day old cornbread))
3 pieces of toast (crumbled (or stale bread))
1 cup onions (diced (about half of a large onion))
1 cup of celery (diced (about 3 stalks))
1 cup of green bell peppers diced (about 1 medium green bell pepper. You could also add in some red bell pepper as well if you'd like)
1 cooked chicken breast or cooked chicken thighs (shredded)
2 eggs
3-4 cups of chicken or turkey broth
1 teaspoon poultry seasoning
1 teaspoon sage
1 teaspoon black pepper

Steps:

  • Preheat the oven to 350 F.
  • To make the cornbread, in a bowl,whisk together the cornmeal & flour.
  • Add in the buttermilk, eggs & oil.
  • Stir just until combined. Do not over work the batter.
  • Pour into a greased, 9 x9 baking dish.
  • Bake for about 20-25 minutes or until done.
  • Let cool.
  • Once cooled break up the cornbread and toast it in the oven to dry it out. *See note*
  • Set aside.
  • To make the dressing, add the dried cornbread and crumbled toast into a large bowl. Set aside.
  • In a saucepan, sauté onions, celery and green bell peppers in a little bit of butter or olive oil until tender.
  • Add the sautéed veggies into the cornbread mixture.
  • Add shredded chicken into the cornbread mixture.
  • Stir together to combine.
  • Add in the broth a little at a time. (Add in just enough to make everything thick & a little soupy.)
  • Stir in poultry seasoning, sage, and black pepper.
  • Give it a taste and add more seasonings if desired.. It should taste exactly the way you want your dressing to taste like.
  • When you are content with the taste, go ahead and stir in the eggs.
  • Pour into a buttered 9 X 13 casserole pan.
  • Bake for 45 minutes or until set.

1 ¼ cup yellow cornmeal (stone ground)
¾ cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoons baking soda
¼ teaspoon salt
2 eggs (slightly beaten)
1 cup buttermilk
6 tablespoons butter (melted)
2 tablespoons unsalted butter
1 cup celery (diced)
1 cup onions (diced)
½ cup green bell peppers (diced)
½ cup red bell peppers (diced)
4 chicken thighs or chicken breast (cooked & chopped (seasoned with seasoned salt & pepper before cooking))
3 slices bread (toasted and crumbled)
1 tablespoon poultry seasoning
1 tablespoon sage
1 teaspoon black pepper
3-4 cups chicken broth
2 eggs (slightly beaten)
salt (if needed)

Steps:

  • Preheat oven to 425 F. Grease an 8 x 8 dish and set it aside.
  • In a large bowl whisk together cornmeal, flour, baking powder, baking soda, and salt.
  • Make a well in the center and add beaten eggs and buttermilk.
  • Gently stir dry and wet ingredients together just until combined.
  • Stir in the melted butter.
  • Spread batter evenly into prepared dish.
  • Bake for 20-25 minutes.
  • Let cool completely. Cover and let cornbread sit a couple of days before proceeding with the dressing. Or crumble the cornbread up and toast it in the oven to dry it out in order to use it the same day for dressing.
  • Preheat oven to 350 F. Grease a 9x13 pan. Set aside.
  • In a large bowl, crumble up the cornbread and set aside.
  • In a large skillet, melt the butter.
  • Add the celery, onions, green bell pepper, and red bell pepper.
  • Saute until tender.
  • Stir the vegetables into the cornbread.
  • Stir in the prepared chicken thighs and breadcrumbs.
  • Stir in enough chicken broth to make the mixture really wet and slightly soupy. (I usually need about 3 1/2 cups)
  • Add poultry seasoning, sage, and black pepper.
  • Taste the mixture and adjust the seasonings if needed. It should taste exactly how you prefer your dressing to taste.
  • Once satisfied with the taste, add eggs.
  • Spread mixture evenly into prepared dish.
  • Bake for 45-55 minutes.
  • Remove from oven and let cool.
  • Serve.

Steps:

  • Preheat the oven to 350 F.
  • Remember to make the cornbread a day in advance ( to dry it out!).
  • The next day, crumble the cornbread into a large bowl, along with the crackers.
  • Pour in the chicken broth, and let sit for 10 minutes.
  • Meanwhile, toss the butter into a medium sized pan, and melt over medium heat.
  • Once the butter is melted, add in the onions, celery, and bell peppers.
  • Cook the vegetables until they soften, then add in the garlic, seasonings, and chopped herbs.
  • Turn the heat off, and stir the ingredients.
  • Add the cooked vegetables, chicken, and herb mixture into the large bowl with crumbled cornbread and crackers.
  • Add in the cream of mushroom soup, and the egg then fold the ingredients.
  • Add the mixture into a lightly greased or buttered 9 x 13 bake dish, and cover.
  • Let bake for 1 hour.
  • Remove from the oven, uncover, and bake for 30 minutes.
  • Let cool.

2 tablespoons butter
½ cup chopped celery
1 small onion

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.

I have been making this dressing for years. I found it in one of those community recipe cookbooks. You can use your favorite regular cornbread recipe with this (but not sweet cornbread).

4 cups cornbread, crumbled
1/4 cup celery, finely diced
1 small onion, finely diced
1 1/2 tablespoons poultry seasoning
1 teaspoon parsley flakes
1 teaspoon salt
1/4 cup melted margarine
1 egg, well beaten
2 -3 cups chicken broth or 2 -3 cups turkey broth, to moisten
1 teaspoon canola oil

Steps:

  • Saute the onion and celery in the canola oil until soft, melt margarine in same pan.
  • Mix with remaining ingredients except broth in large bowl.
  • Moisten with broth to your taste (I like mine pretty wet, I usually get closer to the 3 cups).
  • Place in a casserole dish or aluminum pan.
  • Bake at 400°F for 25 to 30 minutes, or until a nice crust develops on the top.
  • **May use to stuff a 10 to 14 pound turkey. If stuffing a turkey, add very little broth. It will absorb additional moisture in the turkey. Pack loosely.

2 tablespoons olive oil
2 stalks celery, diced (about 1 cup)
1 small yellow onion, diced (about 1 cup)
1 small green bell pepper, diced (about 1 cup)
1 tablespoon Diamond Crystal kosher salt, plus more to taste
1 teaspoon ground black pepper, plus more to taste
4 cloves garlic, minced
2 tablespoons chopped fresh sage
1 recipe day-old cornbread, crumbled
2 cups unsalted chicken stock, plus more as needed

Steps:

  • Preheat the oven to 400˚F.
  • Put the butter and oil to a sauté pan over medium heat; add the celery, onion, bell pepper, salt, and pepper to the pan and cook, stirring occasionally, for 5 minutes. Add the garlic and sage and continue to cook until the vegetables have softened and start to become translucent, 5 to 7 minutes more.
  • Add the vegetable mixture, cornbread, and chicken stock to a bowl and mix it together. Add more stock, if necessary, so that it's not quite all absorbed by the bread. (I used 2 1/2 cups total.) Taste and adjust seasoning as you see fit.
  • Transfer the dressing mixture to a casserole dish and bake for 30 minutes until nice and golden on top. Serve.

1 slice of day-old bread, crumbled (regular or gluten-free)
1-1/2 cup of chicken or turkey broth
1/2 cup of chopped onion
1/2 cup of chopped celery
1 egg
1/4 cup of milk
1 tablespoon of butter
1 teaspoon of sage
1/2 teaspoon of salt
Dash of pepper

Steps:

  • Preheat the oven to 400 degrees F. Spray a 7" x 11" or 8" x 8" baking dish with nonstick cooking spray.
  • Melt the butter in a medium saucepan. Add the chopped onion and celery. Sauté until the onion is translucent.
  • Add the salt and pepper. Give it a quick stir.
  • Remove from the heat, add the sage, and stir again. Set it aside.

12 inch pan of cornbread ((2 cornbread mixes))
1 cup diced celery
1 medium yellow onion, (diced)
3-4 slices stale white bread ((heel pieces are good))
2 teaspoons salt
1/2 teaspoon ground black pepper
2 teaspoons poultry seasoning
6 large eggs, (beaten)
1 stick butter, (melted)
2 cups chicken broth
1 small chicken ((rotisserie chicken works well))

Steps:

  • Mix together cornbread batter according to your cornbread recipe or mix instructions. Add diced celery and onions to the batter and bake as directed. Remove cornbread from oven and allow to completely cool. Shred rotisserie chicken. Set aside.
  • Preheat oven to 375° Fahrenheit.
  • Finely crumble up cornbread and stale bread. Add salt, pepper and poultry seasoning. Mix together well. Toss together with shredded chicken.
  • Add eggs. Mix well with fork or hands. Mix in butter and 1.5 cups broth with hands or fork
  • Spoon cornbread dressing into a greased 9x13 pan or 5 quart casserole dish. Pour remaining chicken broth over the top. Bake covered with foil or a lid for 25 minutes and uncovered for 20 minutes. Chicken and Dressing is done when top is browned and edges are bubbling.

Steps:

  • Preheat oven to 425 degrees F. Place 9" cast iron skillet in oven as it is preheating.
  • Mix dry ingredients in a bowl and set aside.
  • In a separate bowl mix milk, egg and oil until blended.
  • Combine wet ingredients with dry ingredients and stir until moistened and fairly smooth (about 1 minute.)

¼ cup sugar (granulated (*can be omitted if you don't prefer cornbread sweet))
4 tablespoons butter (unsalted )
3 oz cream cheese (whipped cream cheese)
4 oz heavy whipping cream
¼ cup butter (unsalted )
2 tablespoons butter (unsalted )
1 cup yellow onion (diced)
1 cup celery (diced)
1 tablespoon thyme (fresh or dried)
1 tablespoon rosemary (fresh or dried)
1 teaspoon sage (ground)
¼ cup parsley (finely chopped)
½ cup chicken stock (or chicken broth (Use vegetable broth to make this dish vegetarian.))
1 teaspoon salt
½ teaspoon black pepper
1 egg (large)

Steps:

  • Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees for 10 minutes (although you may not use all of this time for melting the butter).
  • Place the 4 tablespoons of butter in an 8-inch skillet and melt in the oven for approximately 5 minutes.
  • While the butter is melting, combine the Jiffy cornbread mix, sugar, cream cheese, and heavy cream in a medium-size mixing bowl.
  • Pour the melted butter from the skillet into the mixing bowl and mix all the ingredients together.
  • Pour the cornbread mixture into the skillet.
  • Bake at 350 degrees F. In the conventional oven for 25-30 minutes. Instant Pot Omni Plus oven for 23-25 minutes.
  • When the baking time has finished, allow the cornbread to cool for approx 10 minutes.
  • Cut the bread lengthwise and then across into 1-inch bread cubes and set aside.
  • Grease an 8″ or similar-sized baking dish and set it aside.
  • Remove the lid from the Instant Pot and turn on the sauté setting for 8 minutes.
  • With the lid off, melt ¼ cup of butter.
  • Add the chopped onion, celery, thyme, rosemary, and sage.
  • Stir to coat the vegetables in the herbs and melted butter and then sauté until they soften and slightly brown.
  • Add the chicken stock, salt, and pepper to the inner pot's simmer, and stir to combine.
  • Remove the herb mixture from heat and set aside.
  • Allow the mixture to cool to the touch so that it can be mixed with the egg. (You don't want the egg to cook from the residual heat and scramble!)
  • While the herbs are cooling off, beat the egg with the parsley in a medium-sized bowl.
  • Gently fold in the cornbread cubes to coat with the egg.
  • Pour in the cooled herb mixture into the egg mixture.
  • Transfer the mixture to the pre-greased baking dish.
  • Cut the 2 tablespoons of butter into small pats and place them all around on top of the dressing.
  • Cover the baking dish with foil and bake at 350 degrees F. 35 minutes in the conventional oven. In the Instant Pot Omni Plus oven for 30 minutes.
  • Uncover and bake until golden, 10-15 more minutes (conventional oven), 10 minutes (Instant Pot Omni Plus oven).
  • Serve cornbread dressing warm, and enjoy!
  • Optional - serve with gravy on top.
