HEARTY SPLIT PEA SOUP!

The onions, carrots, celery, potatoes and garlic are sauteed first to enliven the sugars in them. This comfort soup gets a wonderful smokey flavor from your choice of ham bone or shank or smoked turkey wings. It's swirled with sherry. Topped with bacon bits and croutons.

1 tablespoon olive oil
1 onion, diced
1 celery rib, sliiced
2 medium potatoes, diced
2 carrots, diced
2 garlic cloves, minced
1 teaspoon oregano
1/2-1 teaspoon pepper
1 bay leaf
2 smoked pork shanks or 2 smoked turkey wings
1 (16 ounce) package dried split peas
salt & pepper
hot sauce (optional)
1/4 cup sherry wine
1/2-1 cup garlic herbed croutons
1/4 cup crumbled cooked bacon

Steps:

  • In a large pot heat oil add onions, celery, carrots, potatoes and carrot saute for 5 minutes add garlic, oregano, bay leaf, salt, pepper & ham bone stir 1 minute. Add peas and cover with enough water to completely submerge all ingredients by a couple inches.
  • Bring to a boil. Reduce heat and simmer for about 3-4 hours, until thickened be sure to stir throughout the cooking. The longer you cook it the thicker it gets.
  • Go ahead a sneak a taste.
  • Season with hot pepper sauce and black pepper Drizzle with sherry.
  • Optional I prefer-Blend all but meat in a blender to smooth out.
  • Garnish with croutons and bacon bits.

8 cups water
1 large ham bone
2 cups dried split green peas
2 large carrots, peeled and diced small
2 medium onions, chopped small
2 large celery ribs, include leaves, chop small
1 large bay leaf
2 beef bouillon cubes
1 teaspoon salt
1/4 teaspoon black peppercorns, crushed
1 pinch dried thyme

Steps:

  • Rinse peas well in cold water and add to a large cooking pot.
  • Measure 8 cups of water and add to cooking pot.
  • Bring to boil, remove from heat, cover and let sit for 1 hour.
  • Return to stove and bring back to boil.
  • Add ham bone, carrots, onions, celery, bay leaf, beef bouillon, salt, peppercorns and dried thyme.
  • Reduce heat to simmer, cover and cook for about 1 to 1 1/2 hours, stirring occasionally.
  • Remove ham bone and cut off any remaining ham, cut into bite size pieces and return to soup.
  • Discard ham bone.
  • If there are big pieces of ham in the soup, remove, cut into bite size pieces and return to soup.
  • Remove bay leaf and discard.
  • Adjust seasonings to taste.
  • If you desire a smooth soup, then puree' in batches in a food processor or blender.
  • Or eat the soup without puree'ing.
  • If soup is too thick, add more water to your desired consistency.
  • Beef broth or chicken broth may be added, just reduce the water by the amounts used.
  • Smoked ham hocks are excellent to use instead of a ham bone.
  • If there is not enough ham on the ham bone, then add additional ham of your choice.
  • You may also use about 1/4 teaspoon of Liquid Hickory Smoke, to get a smokey flavor.
  • You may also use whole peas, but it will take a bit longer to cook these peas so that they are tender.

7 cups water (may need more) or 7 cups vegetable stock (may need more)
1 bay leaf
2 teaspoons salt
1 teaspoon dry mustard
2 cups onions, minced
4 medium garlic cloves, minced
3 stalks celery, minced
2 medium carrots, sliced
1 potato, diced
fresh ground black pepper
1 -4 tablespoon balsamic vinegar, to taste (or red wine vinegar)
sesame oil (optional)
fresh ripe tomatoes, diced (optional)
fresh parsley, minced (optional)

Steps:

  • Place first 5 ingredients in a large pot.
  • Bring to a boil, reduce heat to low, and simmer, partially covered for about 20 minutes, stirring occasionally to prevent split peas from sticking to bottom of pot.
  • Add onions, garlic, celery, carrots and potato. (You can saute these first or add them in directly if you want a fat free soup).
  • Partially cover and allow to simmer for about 40 minutes, stirring occasionally.(You may need to add extra water).
  • Season to taste with pepper and vinegar.
  • Serve with a drizzle of sesame oil, diced tomato and minced parsley.

3 stalks celery, chopped
3 cloves garlic, chopped
2 parsnips, peeled and chopped
1 large onion, chopped (about 2 cups)

2 ounces bourbon
1 pound split peas, picked through for pebbles then rinsed with cold water

Steps:

  • In a large sauce pot, heat the olive oil over medium heat. Add the celery, garlic, parsnip and onion, and saute for 15 minutes to build flavor, seasoning with salt and pepper as you go. Add the oregano, thyme and bay leaf, and cook on low for 3 more minutes. Turn the burner off and add the bourbon, return to the heat and reduce for 3 minutes. Add the split peas, ham and stock. Remember to season lightly as you cook. Cook until the peas are tender and the soup has reduced to the desired consistency, about 1 hour. Pull the ham piece and herbs from the pot and, using an immersion blender, blend the soup until mostly smooth. Cut the ham into 1/2-inch pieces and add back to the pot. Serve with the toasted baguette.

This is based on a recipe from drfuhrman.com. It is a delicious split pea soup with some extras that give the flavor an interesting twist. I simplified the instructions to make it easier to prepare.....For each can of low sodium broth, I substitute 2 cups water, 1 tablespoon VegiZest (from drfuhrman.com) and 1/8 teaspoon salt (optional)......You can reduce prep time by using frozen or pre-chopped vegetables and jarred garlic.

1 lb dried split peas
4 (15 ounce) cans low sodium vegetable broth
1 bay leaf
1/2 teaspoon dried thyme
1 teaspoon ground cumin
1 medium onion, chopped
4 stalks celery, chopped
3 medium carrots, chopped
1 cup mushroom, chopped
2 garlic cloves, minced
2 tablespoons dry sherry

Steps:

  • Chop onion, celery, carrots, mushrooms and garlic and set aside.
  • Rinse split peas. In a large soup pot (at least 7 quarts), combine peas, broth, bay leaf, thyme and cumin. Bring to boiling, stirring frequently and watching carefully so it doesn't boil over. Reduce heat, cover and simmer for 1 hour, stirring occasionally.

1 stalk celery, chopped
Pork bone
Piece country ham, desired size of choice
2 white onions, chopped
2 pounds dried split peas
1 gallon chicken stock
Salt and freshly ground white pepper
Croutons

Steps:

  • Heat the oil in a large soup pot over medium heat. Add the celery, pork bone, ham and onions. Cook stirring for 5 to 10 minutes.
  • Add the peas, stock, and salt and pepper, to taste. Cook over low heat until thickened and the peas are broken down, stirring constantly so the mixture doesn't burn.
  • Strain into a large serving bowl, using a strainer with large holes, to force the pulp through the holes. Cook's Note: The ham can be chopped into small pieces and added to the soup before serving, if desired.
  • Ladle the soup into serving bowls and top each serving with croutons.

I used to not be into Split Pea Soup. Something about the name, color and viewin The Exorcist, I suppose. But I had lots of requests to create one. And folks, I'm glad I did because this one is truly splendid.

3 tbsp of salted butter
8 oz of thick-cut bacon or pancetta, diced OR 1 ham bone or ham hock
1 yellow onion, diced
2 stalks of celery, diced
2-3 carrots, peeled and diced
1/2 cup of Sherry (cooking Sherry is fine too. If not using the Sherry, add in 1/2 cup more broth below)
5.5 cups of chicken, garlic and/or ham broth (you can use 2.5 cups of each broth; I used 3 tsp of Garlic Better Than Bouillon + 3 cups of water and 2.5 tsp of Ham Better Than Bouillon + 2.5 cups of water but you can use 5 cups of only one flavor if desired)
1 tbsp of Worcestershire sauce
1 tsp of black pepper
1 tsp of dried thyme
1 tsp of oregano
1 lb of dry split green peas, rinsed
2 bay leaves
2 tbsp or 1/4 cup of Boursin cheese (any flavor) or even cream cheese or sour cream (all optional)

Steps:

  • Add butter to the Instant Pot or Ninja Foodi and hit "Sauté." Once the butter's melted and bubbling, add the onions, celery and carrots. Let sauté for 5 minutes, stirring and setting and then add in the bacon or pancetta (if using in place of a ham bone). Allow to cook for another 10 minutes as it will cook like a tender ham
  • Add in the Sherry and allow to simmer for another minute. Then, add in the broth, Worcestershire sauce, pepper, thyme, oregano bay leaves and split peas (if using a ham bone/hock, add that in now as well)
  • Secure the lid and hit "Keep Warm/Cancel" and then hit "Manual" or "Pressure Cook" and cook for 15 minutes at high pressure. Allow a 15 minute natural release when done followed by a quick release
  • Stir all the contents in the pot from the bottom up as the split peas will have basically become a purée and will thicken the soup immediately once stirred up. If you want a slightly thinner soup, add in another cup of your choice of broth now
  • Stir in the Boursin (if using, which I suggest) until melded
  • Enjoy! *NOTE: See the yellow "Jeffrey Sez" section on how to reheat any leftovers

  • In a large soup pot over medium-high heat, heat the oil. Add the onions. Season with salt, pepper, crushed red pepper. Saute for 2 minutes. Add the garlic, bay leaf, and split peas and cook, stirring, for 1 minute. Add the broth and bring to a boil, then reduce the heat to medium and simmer, stirring occasionally, for 45 minutes, until the peas are tender. Remove from the heat and let cool slightly. Remove the bay leaf and discard. Add the milk and, using a hand-held immersion blender, process until smooth. Add the hot sauce and serve hot.
