Steps:
- Croutons-can be made up to 2 days ahead; preheat oven to 350°; spread the bread cubes on a large baking sheet; drizzle with the butter and sprinkle with salt and pepper to taste.
- Bake, stirring occasionally, until lightly toasted, about 10 minutes.
- Remove and let cool completely; use immediately or store in plastic bag at room temperature.
- Soup-rinse the split peas and drain them in a colander.
- Discard any shriveled peas.
- In a large skillet, cook the bacon, turning, until crisp on both sides.
- Remove the bacon, but leave the fat in the pan.
- Drain the bacon on paper towels; crumble the bacon and set it aside to garnish the soup.
- Add the onion, carrot, and celery to the skillet with the bacon fat and cook, stirring often, until softened and golden, about 10 minutes.
- Scrape the vegetables into a large slow cooker.
- Add in the split peas, herbs, broth, and salt and pepper to taste.
- Cover and cook on LOW for 8 hours, or until the peas are tender.
- Cool slightly.
- Discard the bay leaf.
- Transfer to a blender, puree until smooth, and reheat if necessary.
- Taste for seasoning and adjust.
- Serve hot, sprinkled with the bacon and croutons.

- In a 5-quart dutch oven over medium heat, heat bone, split peas, carrots, onion, and water to boiling.
- Tie allspice, peppercorns, and bay leaf in a piece of cheesecloth. Add to bone mixture.
- Reduce heat to low; cover; simmer 1 hour. Discard spice bag; add salt if necessary.
- Remove bone to cutting board. Cut off meat and discard done.
- Cut meat into bite-size chunks and return to soup for serving.

- In a Dutch oven or 5-quart heavy pot with a lid, heat oil over medium. Add onion, carrots, celery, and thyme; season with salt and pepper. Cook until vegetables begin to soften, 5 to 8 minutes.
- Add broth, split peas, ham bone, and 5 cups water. Bring to a boil, reduce heat to medium-low, and partially cover; simmer until peas are soft, 30 to 45 minutes.
- Meanwhile, make croutons: In a large skillet, melt butter over medium heat. Add bread and cook, tossing occasionally, until browned and crisp, 6 to 8 minutes. Transfer to a paper-towel-lined plate.
- Remove and discard bone from soup. Working in batches, puree only 1/2 the soup in a blender (don't overfill); return to pot. Add ham cubes, and simmer until heated through. If necessary, thin with water. Add salt, pepper, and lemon juice to taste. Serve topped with croutons.

- In a large stock pot, cover peas with 2 quarts cold water and soak overnight. If you need a faster method, simmer the peas gently for 2 minutes, and then soak for l hour.
- Once peas are soaked, add ham bone, onion, salt, pepper and marjoram. Cover, bring to boil and then simmer for 1 1/2 hours, stirring occasionally.
- Remove bone; cut off meat, dice and return meat to soup. Add celery, carrots and potatoes. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender.

BEST YET RUSTIC SPLIT PEA SOUP
I think this combination turned out especially well. The smoked turkey leg tastes just like ham. With croutons on top or some cornbread, it's a meal! Long simmering time allows the peas to get completely soft and break down so you don't have to puree them.

- Put the smoked turkey leg in a six-quart pot. Oval pots are great, as turkey legs can be pretty long!
- Add the split peas and the 2 quarts of water.
- Bring to a boil, reduce to simmer.
- After a while, there will be foam on top of the water. Skim it all off and discard.
- Add the diced onion, carrot, sliced garlic, celery seed, salt and bay leaf.
- Simmer for one hour, mostly covered.
- Remove the bay leaf.
- Remove the turkey leg and allow it to cool enough to handle while you simmer the soup for another fifteen minutes.
- Remove skin, bones and tendon from turkey leg and dice the meat into bite sized pieces.
- Add meat back to soup.
- Add milk and half and half and heat to serving temperature.
- Serve in big bowls topped with freshly ground pepper.

SPLIT PEA SOUP WITH PUMPERNICKEL CROUTONS

- Simmer ham hocks in 16 cups water in a deep 6-quart pot, uncovered, until meat is tender, 1 1/2 to 2 hours.
- Transfer ham hocks to a cutting board and measure broth: If it measures more than 12 cups, continue boiling until reduced; if less, add enough water to total 12 cups. When hocks are cool enough to handle, discard skin and cut meat into 1/4-inch pieces (reserve bones).
- Chop 2 carrots and cook along with onion and celery in 2 tablespoons oil in a 6- to 8-quart heavy pot over moderate heat, stirring, until softened, 6 to 8 minutes. Add split peas, table salt, pepper, ham hock broth, and reserved bones and simmer, uncovered, stirring occasionally, until peas are falling apart and soup is slightly thickened, about 1 1/2 hours.
- Put oven rack in middle position and preheat oven to 400°F.
- While soup simmers, toss bread with remaining 3 tablespoons oil and kosher salt in a large bowl, then spread in 1 layer in a large shallow baking pan and bake until crisp, about 10 minutes. Cool croutons in pan on a rack.
- Halve remaining 2 carrots lengthwise, then cut crosswise into 1/4-inch-thick slices. Remove bones from soup with a slotted spoon and discard. Add carrots and ham pieces to soup and simmer, uncovered, until carrots are tender, 10 to 15 minutes. Add frozen peas and simmer, uncovered, stirring, until just heated through, about 3 minutes. Season with salt.
- Serve soup with croutons.
VELVETY-SMOOTH SPLIT PEA SOUP

- Soak peas overnight as directed on the bag, if in a hurry, you can put the peas in a pot, cover with water and add 2 tsps baking soda.
- Bring to a boil, stirring to ensure it does not boil over.
- Rinse and drain peas.
- Add 1 T olive oil to pan and all the vegetables and salt and pepper, sauté 3-5 minutes.
- Add ham hock, peas, stock, and water.
- Bring to a boil, then turn down to a low simmer.
- Cook 2 hours (or longer for maximum flavor!).
- Turn off heat, remove ham hock.
- When cool, remove bits of ham from the hock and place the ham back into soup, discarding the ham hock.
- Cook your bacon until lightly crisp and add into the soup.
- Using your Vitamix or blender, pour in soup (this may take 2-3 fills) and puree.
- This is where you will want to add milk to thin out slightly (if you don't want to add milk, use more stock).
- Reheat and serve.

- Rinse peas; pick over. Place in bowl; cover with water. Soak overnight. Drain any remaining liquid from peas; add water to make 10 cups of liquid. Combine peas and liquid in Dutch oven.
- Rinse pig's feet under running water; add to peas. Bring to boil. Skim any foam. Reduce heat to low; cook 1 1/2 to 2 hours. Remove pigs' feet. Add vegetables and seasonings; cook 1 hour more. When pigs' feet have cooled, remove skin and bones; chop meat. Puree soup in electric blender or pass through a sieve. Add chopped meat.
- Melt butter in small saucepan. Add flour; cook until bubbly. Add small amount of soup to flour mixture, stirring well. Pour back into soup kettle. Stir well; cook 5 minutes.
- Next make croutons. Remove crusts from bread; cut into 1/2 inch cubes. Melt butter in heavy skillet; fry bread cubes over moderate heat until golden. Drain; serve sprinkled on soup. Makes 6 to 8 servings.

- To make the soup: Rinse the peas and place them in a large saucepan.
- Pour in the water, cover and bring to a boil, skimming off the foam.
- Stir in the savory and bay leaf.
- Reduce the heat and simmer until the peas are tender, 55 minutes.
- Meanwhile, chop the celery, carrots, potato and onion into bite-size pieces.
- In a large skillet, heat the oil over medium-high heat; cook the celery, carrots, potato, onion and garlic for 5 to 7 minutes or until softened.
- Add to the saucepan; simmer, covered, for 20 to 30 minutes or until the vegetables are tender.
- Remove the bay leaf.
- Season with salt and pepper to taste.
- Ladle the soup into warmed bowls; sprinkle with croutons.
- To make the croutons: Trim the crusts off of the bread; cut into bite-size cubes.
- In a large skillet, melt the butter over medium-high heat until the foam subsides; add the bread, stirring to coat evenly.
- Cook, stirring often, until crisp and golden.

- Spread the pancetta over the base of a medium soup pan and place over medium-low heat. Cook, rendering the fat, until browned on the edges, about 5 minutes. Remove to a paper-towel lined plate. Pour off all but a thin coating of fat. Return to medium heat, and add the garlic and leek. Cook until soft on the edges. Add the peas, broth and 2 cups of water. Season with salt. Bring to a simmer and cook until the peas are just tender, about 5 minutes.
- Turn off the heat and stir in the chives and tarragon. Let steep for 5 minutes. Ladle the soup in small batches into a blender and purée until smooth (because it is hot, turn the blender on low and hold the lid on tight). Taste and adjust seasoning, adding a little lemon juice to sharpen the flavor. Meanwhile, break the bread into small croutons and toss in a bowl with olive oil, just to coat. Ladle soup into bowls and top each bowl with a little pancetta and a few croutons.
