CROCK POT SPLIT PEA SOUP
Steps:
- Gather the ingredients.
- Layer the ingredients in a slow cooker in the order given-split peas, ham, carrots, onion, celery, garlic, bay leaf, parsley, pepper, and salt; add the water or stock. Do not stir the ingredients.
- Cover and cook on high for 4 to 5 hours or on low for 8 to 10 hours until peas are very soft and the ham falls off the bone.
- Remove the meat from the bones and chop. Save some of the chopped ham for a garnish, if desired. Remove the bay leaf.

- Tie the parsley stems and thyme together with kitchen string and place in a 6-quart slow cooker. Add the split peas, leek, celery, carrots, 1 teaspoon salt and 1/2 teaspoon pepper; stir to combine. Add the turkey leg and 7 cups water. Cover and cook on low until the split peas and meat are tender, 6 to 8 hours.
- Discard the herb bundle. Discard the skin and bones from the turkey leg and shred the meat. Vigorously stir the soup to break up the peas and make the soup smoother. Thin with water, if desired. Stir in the chopped parsley and about three-quarters of the turkey meat; season with salt and pepper.
- Ladle the soup into bowls. Thin the yogurt with a little water, then spoon onto the soup. Top with the thawed peas and the remaining turkey. Serve with bread, if desired.
SPLIT PEA SOUP (CROCK POT) - DAIRY FREE
Very little prep, just layer in crock pot/slow cooker, leave it for the day and a filling, delicious soup will be ready for dinner. This recipe is a very versatile base split pea soup. For a Vegan option, omit the meat. I have made this recipe using ham, ham hock, and bacon. I have used veggie broth, chicken broth and water... each tasting different but yummy! I have reduced the salt but have not adjusted the recipe as written. This soup is even better the next day, it freezes well. This tends to be a thicker soup (especially once it has cooled) so adjust liquid after cooking to desired thickness.

- Pick out and discard any discolored split peas then rinse thoroughly in a colander under cold water then spread into the bottom of the crockpot.

- Place the split peas in a colander. Rinse them well and pick through for any tiny pebbles or debris.
- In the base of a slow-cooker, combine the peas, onion, carrots, celery, garlic, ham, chicken stock and 1 1/2 cups of water. Tie the sprigs of thyme, parsley and the bay leaf together with a piece of kitchen twine, wrapped around the bundle a couple times, then add to the slow-cooker.
- Cover and cook on high heat for 4-5 hours, or low heat for 8-10 hours, until the peas are tender and have split to thicken the soup. Season with salt and pepper to taste. Serve topped with chopped parsley.
VEGETARIAN SLOW COOKER SPLIT PEA SOUP
Got this recipe online a couple years ago. I've tweaked it a little bit and will probably continue to experiment by throwing other vegetables in. It's a great soup for a cold day when I know I won't have time to cook dinner. I usually make a batch and freeze what we don't eat. It tastes the same when reheated after the freezer, but the texture does change slightly. Lasts a few days in the fridge as well.

This came from the Los Angeles Times via Liz at Recipegoldmine.com. It was a stove top soup, but the closest I've yet found to Anderson's which is a tradition in California. I modified it just a bit for the crock pot and made it a hair thicker to suit our tastes. You can also add bacon, ham, or ham hocks to enhance the flavor a bit.

CROCK POT SPLIT PEA AND LENTIL SOUP
For a truly vegetarian soup, substitute vegetable bouillon for the chicken soup base. This recipe almost overflowed my 4-quart crockpot, you might want to halve the ingredients.
