SALMON AND ASPARAGUS WITH PENNE AND LIGHT CREAM SAUCE

Salmon and Asparagus with Penne and Light Cream Sauce image

This is a really good recipe if you like salmon and asparagus. Even if you are not an asparagus lover, the ingredients give the asparagus an amazing flavor. I have always loved my homemade alfredo sauce, but now I prefer this sauce to my alfredo.

Provided by twroush02

Categories     World Cuisine Recipes     European     Italian

Time 50m

Yield 2

Number Of Ingredients 14

1 teaspoon olive oil
½ cup uncooked penne pasta, or as needed
¼ cup olive oil
¼ teaspoon white pepper
¼ teaspoon dried dill weed
¼ teaspoon salt
½ pound salmon fillet
1 pinch salt
½ cup cut fresh asparagus (1 inch pieces), or as needed
2 cloves garlic, minced, or to taste
2 slices fresh lemon
1 ½ cups heavy cream
¼ cup freshly grated Parmesan cheese, or to taste
1 pinch salt, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Pour in 1 teaspoon of olive oil. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
  • Heat 1/4 cup of olive oil, the white pepper, dill, and 1/4 teaspoon of salt in a skillet over medium-low heat until the oil is shimmering. Gently lay the salmon fillet into the oil, and sprinkle with 1 pinch of salt. Arrange the cut asparagus and bits of minced garlic around the salmon in the skillet. Squeeze the lemon slices over the salmon and asparagus, and place the squeezed slices into the skillet. Cover and cook for 8 minutes. Flip the salmon, and cook until the salmon is no longer translucent in the center, about 8 more minutes.
  • Remove the salmon, asparagus, garlic, and lemon slices from the skillet to a warmed plate, leaving the juices in the skillet. Whisk in the cream and enough Parmesan cheese to thicken the sauce. Let the cheese melt, and season to taste with salt. To serve, divide the cooked penne pasta, salmon, and asparagus between two plates, with the pasta to the side of the salmon. Spoon the cream sauce over the pasta, and serve.

Categories     Dinner     Pasta

Time 25m

Number Of Ingredients 10

8 oz / 250g dried fettuccine
3 tbsp / 50g unsalted butter
1 small shallot ((US) / eschallot (Australia), very finely minced (Note 1))
½ cup / 125 ml heavy cream ((Note 2))
¾ cup / 185 ml freshly grated Parmigiano Reggiano or parmesan ((Notes 3 and 4))
¼ teaspoon salt
Good grind of black pepper
6-7 oz / 180 - 200g hot smoked salmon fillet (, flaked (Note 5))
Fresh parsley ((optional))
Extra Parmigiano Reggiano

Steps:

  • Bring a large pot of salted water to boil. Add the fettuccine and cook until al dente (still firm but just cooked through). (Note 6)
  • Meanwhile, melt the butter in a deep fry pan over medium high heat. (Note 7)
  • Add the shallots and sauté for 2 minutes or until tender.
  • Add the cream and bring to boil. Turn heat down to medium low and simmer for 3 minutes.
  • Remove the fry pan from the heat and stir through the Parmigiano Reggiano, salt and pepper until the sauce is smooth.

Toss very gently to coat the pasta in the sauce and allow the sauce to emulsify (Note 6) for 1 1/2 - 2 minutes, until the sauce coats the pasta - there should be no sauce pooled at the bottom of the skillet. (Note 7)
  • Remove from the stove and serve immediately, garnished with extra Parmigiano Reggiano and fresh parsley, if using.

SALMON AND BROCCOLI ALFREDO WITH PASTA

Salmon and Broccoli Alfredo With Pasta image

I love making food from things that come in cans, jars, or freezer packets, because... well, I'm lazy. This recipe is great because it calls for all of the above, requiring absolutely nothing fresh. (Note: It's an altered version of a recipe from a book called Betty Crocker's 4 Ingredient Dinners.)

Provided by CorriePDX

Categories     < 30 Mins

Time 25m

Yield 6 serving(s)

Number Of Ingredients 5

12 ounces egg noodles
2 (10 ounce) packages frozen chopped broccoli
2 cups readymade alfredo sauce
2 (6 ounce) cans boneless skinless pink salmon
seasoning, to taste

Steps:

  • In a large stockpot, cook noodles as directed on package.
  • While noodles are cooking, flake and drain salmon.
  • Yes, this is necessary!
  • I was new to canned salmon, and so I didn't believe the instructions, but I soon discovered that salmon truly does come in huge, icky lumps.
  • When noodles are 2 to 4 minutes away from being done, add the broccoli to the water.
  • This will probably stop the water from boiling, so those 2 to 4 minutes might end up closer to 8 to 10 minutes instead!
  • This happened to me, but, amazingly, even with 8 extra minutes of cooking time the broccoli did not become mush.
  • Drain pasta and broccoli, reserving about a cup of the cooking water.
  • Return noodles and broccoli to pot.
  • Add Alfredo and seasonings to taste (I recommend lots of black pepper and--even better--Trader Joe's Sun-Dried Tomato Seasoning Splash, which is sold, not surprisingly, at Trader Joe's-- about 8 teaspoons of it).
  • If the sauce is too thick, and it likely will be, dribble in the reserved cooking water slowly until the consistency is right.
  • And you're done.
  • Woo hoo.
  • You just opened some cans, and a jar, and a box, and a package, and now you have yummy pasta.
  • Enjoy.

Kosher salt and freshly ground black pepper
8 ounces capellini or other long, thin pasta, such as angel hair or thin spaghetti
6 tablespoons unsalted butter

Four 5-ounce skinless salmon fillets
All-purpose flour, for dusting

  • Dump Ingredients: You must dump the ingredients in the following order - add the frozen salmon fillets directly from the freezer into the steel insert of the Instant pot. Than, throw in the uncooked penne pasta on top of the frozen salmon and spread them out in a single layer. Pour the chicken stock over the pasta and around. Than throw in the chopped onion, garlic, bell pepper. Add the cubed cream cheese on top and sprinkle the seasonings. DO NOT mix or stir.
  • Pressure Cook: Secure the lid of the Instant Pot, seal the valve and PRESURE COOK on HIGH for 5 mins. When the pressure cooking cycle is over the instant pot will begin to beep. Perform a quick pressure release by manually moving the valve from the sealing to the venting position. Open the lid carefully when the metal pin on top of the lid drops. The pasta will have a good amount of liquid on the top, do not worry that's normal. The liquid will be well absorbed when we mix all the ingredients.
  • Add dairy: TURM OFF the instant pot. Gently stir everything the pot to mix the ingredients well. Break the cooked fish with the help of the spatula as you stir the ingredients. You may keep the fish chunky or break it into several small pieces. Pour the heavy whipping cream and mix well. Add the shredded or grated parmesan cheese and mix well until the cheese well incorporates and melts.
  • Serve: Throw in the chopped fresh dill and gently fold it into the creamy salmon pasta. Do the test taste and add a few pinches salt (according to your personal taste preference) and mix well. Serve the one pot creamy salmon pasta with lemon wedges and more grated/shredded parmesan cheese. Enjoy!

  • Place a rack in the center of your oven and preheat the oven to 375 degrees F. Place the salmon in a shallow baking dish just large enough to hold it comfortably and pat dry.
  • Drizzle the salmon with 1 tablespoon olive oil and 2 tablespoons lemon juice (you’ll need the zest of ½ lemon later on, so be sure to plan accordingly). Sprinkle the salmon evenly with ½ teaspoon salt and ¼ teaspoon black pepper.
  • Bake the salmon for 14 to 18 minutes for a 1-inch fillet, until it flakes easily with a fork and reaches 145 degrees F on an instant-read thermometer. DO NOT overcook. If your salmon is thicker or thinner than 1-inch adjust the cooking time accordingly (I usually start checking it around 12 minutes, remove it a few degrees early, then cover it and let it rest to allow the carry-over cooking to finish the job). Remove to a cutting board or plate.
  • Let the salmon rest 5 minutes, then with a fork, break it into large, bite-sized pieces. Discard the skin.
