NEW YORK STRIP STEAK WITH BRANDIED MUSHROOMS AND FRESH THYME



New York Strip Steak with Brandied Mushrooms and Fresh Thyme image

Number Of Ingredients 8

4 New York strip steaks, each about 1 1/2 inches thick
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 pounds wild mushrooms, trimmed, brushed clean with a towel and stemmed, caps left whole
Leaves from 2 sprigs fresh thyme
2 cloves garlic, chopped
1/4 cup brandy
1/2 cup heavy cream

Steps:

  • Heat 2 tablespoons oil in a large saute pan over medium-high heat until smoking. Sprinkle the steaks all over with salt and pepper. Put the steaks in the pan and cook, turning to brown all sides completely, until medium-rare, 8 to 10 minutes depending on how thick the steaks are. Remove the steaks to a platter with tongs and cover loosely with a tent of aluminum foil to keep the meat warm while you make the sauce.
  • Put the saute pan back over medium-high heat and add 1/4 cup olive oil. When the oil is smoking, add the mushrooms and cook, stirring, about 10 minutes, until golden brown. Then add the thyme and garlic, and season well with salt and pepper. Toss a few more times to cook the garlic, then dump the mushrooms out onto a platter. Take the pan off the heat, add the brandy, and cook until almost evaporated. Add the cream and cook that down 2 to 3 minutes until reduced by about one-half and thickened. Return the mushrooms to the pan with whatever juices have collected on the platter and simmer the whole thing another 2 minutes until thickened again. Season with salt and pepper.
  • Slice the steak thin against the grain. Taste the sauce for salt and pepper and serve.

2 tablespoons olive oil
2 (10 to 12-ounce) New York strip steaks, about 3/4-inch thick
Kosher salt and freshly ground pepper
8 ounces cremini mushrooms, sliced
1 shallot, finely chopped
2 teaspoons chopped fresh thyme leaves
1 cup dry red wine
3 tablespoons butter

Steps:

  • Add the oil to a large cast-iron skillet over medium-high heat. Heat until the oil is very hot.
  • Season the steaks with salt and pepper. Add the steaks to the skillet and sear the steaks on each side for 4 minutes for medium. Remove the steaks to a plate and loosely cover with foil.
  • Lower the heat to medium and add the mushrooms, shallot, and thyme to the pan and saute until the mushrooms begin to brown and soften, about 5 minutes. You may need to add a bit more oil to the pan. Add the red wine and scrap the bottom of the pan to get the browned bits.
  • Let the liquid reduce by half, 7 to 8 minutes. Remove from the heat and swirl in 3 tablespoons butter to finish the sauce. Serve the steak with mushroom red wine sauce drizzled over the top.

STRIP STEAK WITH RED WINE MUSHROOM SAUCE AND MUSTARD SMASHED POTATOES



Strip Steak with Red Wine Mushroom Sauce and Mustard Smashed Potatoes image

Seared steaks are topped with a richly flavored mushroom and wine sauce and served alongside creamy potatoes with a hint of mustard.

Number Of Ingredients 13

2 teaspoons dried oregano
1/2 teaspoon crushed red pepper flakes
1 large dried bay leaf
Kosher salt
Four 8-ounce boneless strip steaks, each about 1 inch thick
1 1/2 pounds russet potatoes, peeled and cut into 1/2-inch pieces
6 tablespoons unsalted butter
1 tablespoon whole-grain mustard
3/4 cup chicken broth
3 tablespoons vegetable oil
12 ounces button or cremini mushrooms, quartered
1 cup red wine
Sprigs of fresh oregano, for serving

Steps:

  • Combine the dried oregano, red pepper flakes, bay leaf and 1 tablespoon salt in a coffee or spice grinder and pulse until finely ground. Rub evenly over both sides of the steaks. Set aside to marinate at room temperature for 15 minutes.
  • Meanwhile, put the potatoes in a heavy-bottomed saucepan with enough cold water to cover by 1/2 inch. Salt the water generously, bring to a simmer and cook, covered, until the potatoes are fork tender, about 10 minutes. Drain, return to the pot with 3 tablespoons of the butter and mash with a fork or potato masher. Stir in the mustard and 1/4 cup of the chicken broth until creamy. Season with salt.
  • Heat a large skillet over medium-high heat. When hot, add 2 tablespoons of the oil. Cook the steaks until crusty and browned on one side, about 4 minutes. Flip and cook, adding the remaining 1 tablespoon oil if needed, until browned on the other side, about 3 minutes more for medium-rare. Remove the steaks and set aside to rest.
  • Add the mushrooms to the skillet and cook until browned, about 3 minutes. Add the red wine and the remaining 1/2 cup chicken broth and cook until reduced by half, about 5 minutes. Swirl in the remaining 3 tablespoons butter until the sauce is glossy and thick.
  • Transfer the steaks to a serving plate and transfer the potatoes to a serving bowl. Spoon the sauce over the steaks and top with fresh oregano. Serve with the potatoes.

1 tablespoon safflower oil, plus more if needed
4 boneless New York strip (shell) steaks (6 ounces each), 1/2-inch thick
Coarse salt and freshly ground pepper
1/4 pound cremini mushrooms, cut into 1/4-inch-thick slices
1/4 pound shiitake mushrooms, cut into 1/4-inch-thick slices
1 cup homemade or store-bought low-sodium chicken stock
2 teaspoons Dijon mustard
1 tablespoon chopped fresh herbs (such as parsley, thyme, or chives), for garnish

Steps:

  • Heat oil in a 12-inch skillet over medium-high heat. Season both sides of each steak with salt and pepper. Cook 2 steaks at a time for 1 1/2 minutes per side for medium-rare. (Do not flip steaks more than once.) Add more oil if needed. Transfer to a plate. Cover, and let rest at least 5 minutes.
  • Add mushrooms to drippings in skillet, and cook over medium-high heat, stirring occasionally, until tender, about 4 minutes. Add stock and juices from plate to skillet. Bring to a boil, scraping up brown bits. Stir in mustard, and simmer until sauce lightly coats the back of a spoon, about 3 minutes. Pour sauce over steaks, and sprinkle with herbs.

1 (10 1/2 ounce) can Campbell's French onion soup, undiluted
1 (6 ounce) jar sliced mushrooms, drained
1/2 cup shredded mozzarella cheese

Steps:

  • Heat oil in a large skillet, then add steaks.
  • Cook steaks for 4-6 minutes on each side or until it is done to your taste.
  • Drain.

This is basically a technique I have discovered for making those thin breakfast steaks suitable to serve for dinner. And, they don't have the consistency of shoe leather! I highly recommend that anyone who does not have Montreal Steak Seasoning go out and buy it! It is so good that it has forever replaced the use of pepper on steaks and burgers in our house! I serve this recipe with a hearty potato dish and veggies.

4 -5 thin-sliced New York strip steaks (1/4 inch thick)
2 crushed garlic cloves
McCormick's Montreal Brand steak seasoning (or just fresh ground black pepper)
1 teaspoon extra virgin olive oil
5 large mushrooms, sliced

Steps:

  • Heat the olive oil over medium to medium high.
  • Add the mushrooms and sauté until tender.
  • Rub the steaks evenly with the garlic and steak seasoning or pepper.
  • Push the mushrooms over to one side of the pan, and add the steaks.
  • (You could remove the mushrooms and sear the steaks for 1 minute per side, but I don't know that they would be as tender). Cook the steaks for 2-3 minutes per side for well done.
  • Serve while hot!

4 (10 ounce) boneless New York strip steaks, each 1-inch thick
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper
2 lbs white button mushrooms, left whole and untrimmed
1/2 teaspoon fresh thyme leave
3 garlic cloves, chopped
1/4 cup brandy
1/2 cup heavy cream

Steps:

  • Heat 1 T of the oil in large skillet over medium-high heat.
  • Season steaks with 1 t of the salt and 1/4 t of the pepper.
  • Place steaks in the hot pan and cook, turning to brown both sides, about 3-4 minutes per side for medium-rare.
  • Remove steaks and cover loosely with foil to keep warm.
  • In same skillet, add the remaining 1 T oil.
  • Add mushrooms and cook, stirring for 10-15 minutes, until mushrooms are golden and soft.
  • Add thyme, 1/4 t salt and garlic and cook for 2 more minutes.
  • Remove mushrooms with a slotted spoon; place in a bowl.
  • In same skillet, add brandy and cook until brandy is almost evaporated, about 1 minute.
  • Add cream and cook 2-3 minutes, until slightly thickened.
  • Return mushrooms and their juices to the pan and simmer for 2 more minutes.
  • Season with the remaining 1/4 t salt and 1/4 t pepper.
  • Serve with steak.
